Try this Mexican tostada recipe instead of traditional tacos - ready in less than 30 minutes. Start with Zatarain's Black Beans and Rice then top tostada shells with cooked chicken and assorted toppings.

2½ cups water
1 package ZATARAIN'S Black Beans and Rice )Substitution: Reduced Sodium Black Beans and Rice)
1 package ZATARAIN'S® Black Beans and Rice )Substitution: Reduced Sodium Black Beans and Rice)
2 tablespoons butter (Substitutions: 2 tablespoons margarine or olive oil)
8 tostada shells
2 cups shredded cooked chicken

Steps:

  • Mix water, Rice Mix and butter in medium saucepan. Bring to boil. Reduce heat to low; cover and simmer 25 minute or until most of the water is absorbed and rice is tender. Stir occasionally to prevent rice and beans from sticking Remove from heat. Let stand 5 minutes For each tostada shell, top with 1/3 cup rice mixture, ¼ cup chicken and assorted toppings, if desired Cooking tips: Black Beans & Rice Wraps: Use flour tortillas (8-inch) in place of the tostada shells. Serving Suggestion: Top with assorted toppings, such as shredded cheese, shredded lettuce, chopped avocado, salsa, sour cream and chopped fresh cilantro.

SPICY TURKEY TOSTADAS



Spicy Turkey Tostadas image

1 package (about 1 pound) Honeysuckle White® or Shady Brook Farms® 99% Fat Free Ground Breast of Turkey
1 (8-ounce) can tomato sauce
2 tablespoons lime juice
1 tablespoon chili powder
8 (5-inch) tostada shells
4 cups shredded cabbage or pre-cut cole slaw
1 teaspoon peanut or olive oil
2 tablespoons roughly chopped cilantro
4 plum tomatoes (about 1 cup), chopped

Steps:

  • 1.Preheat oven to 325°.
  • 2.In a medium skillet, combine turkey, tomato sauce and chili powder. Simmer over medium heat, breaking up meat with a spoon. Cook about 5-7 minutes, or until turkey is cooked to 165° using a meat thermometer.
  • 3.Meanwhile, bake tostada shells in oven until crisp, about 6 minutes.
  • 4.In a bowl, toss cabbage with lime juice, oil and cilantro.
  • 5.Place a layer of turkey mixture on each tostada. Top with cabbage mixture and sprinkle with tomatoes. Note: For food safety, cook turkey to a minimum internal temperature of 165° as measured by a meat thermometer.

CRISPY TURKEY TOSTADAS

1 medium onion, thinly sliced
3 cups shredded cooked turkey or chicken (12 ounces; see Tip)
8 corn tortillas
Canola or olive oil cooking spray
1 avocado, pitted
1/4 cup prepared salsa
2 tablespoons reduced-fat sour cream
2 tablespoons chopped fresh cilantro
1 cup shredded romaine lettuce
1/2 cup shredded Monterey Jack cheese
1 14-ounce can petite diced tomatoes, preferably with jalapenos

Steps:

  • Shredded leftover turkey tops homemade tostadas in this Tex-Mex favorite. Making your own tostada shells from fresh corn tortillas is easier than you might think-crisp them up in the oven while you prepare the toppings. Choose either regular petite diced tomatoes or those with added jalapenos, depending on your inclination for spicy food. Serve with black beans, rice and extra salsa or hot sauce on the side.;
  • Position racks in the upper and lower thirds of the oven; preheat to 375degreesF. Bring tomatoes and their juice to a boil in a medium saucepan over medium heat. Add onion and cook, stirring occasionally, until the onion is soft and most of the liquid has evaporated, 15 to 20 minutes. Add turkey (or chicken) and cook until heated through, 1 to 2 minutes. Meanwhile, coat tortillas on both sides with cooking spray. Divide the tortillas between 2 large baking sheets. Bake, turning once, until crisped and lightly brown, about 10 minutes. Mash avocado in a bowl. Stir in salsa, sour cream and cilantro until combined. To assemble tostadas, spread each crisped tortilla with some of the avocado mixture. Top with the turkey (or chicken) mixture, lettuce and cheese.

4 tomatillos, husked, washed, and cut into 1/4inch dice
2 green onions, white and some green part, thinly sliced on the diagonal
1 small bunch cilantro, leaves only, coarsely chopped
1 teaspoon minced seeded jalapeno chile
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons freshly squeezed lime juice
2 tablespoons olive oil
16 beef marrow (leg) bones (about 4 pounds), approximately 2 inches long
6 large Corn Tortillas (recipe attached)
Vegetable oil for frying
1 ripe avocado, peeled and diced, for serving
1 teaspoon flaked sea salt

Steps:

  • In a glass or ceramic bowl, combine the tomatillos, green onions, cilantro, jalapeno, salt, pepper, and lime juice. Toss to mix, cover with plastic wrap and chill for at least 30 minutes and up to 4 hours so that the flavors can marry. Return the salsa to room temperature before using.
  • Dig the marrow out of the bones with a small sharp knife, scraping against the bone to get all of it, or push it out with your fingers if it will come out in one piece. Dip the knife into very hot water and cut the marrow into 1/4inch dice, dipping again as necessary. Refrigerate the marrow until you are ready to use it.
  • Pour oil to a depth of 1/2-inch in a small skillet. Fry the tortillas on both sides until crisp and golden. Drain on paper towels and keep warm in a low oven.
  • Bring a large skillet of lightly salted water to a slow simmer. Remove from the heat and immediately plunge all of the marrow into the hot water. Leave in the water for 1 minute, then use a slotted spoon to transfer it to a warm plate, draining well.
  • Place a warm tostada on a warm plate and top with some of the salsa. Top each tostada with a spoonful of the warm marrow and scatter a few grains of the sea salt over the marrow. Add a few cubes of avocado, season with pepper to taste and serve immediately.

BRISKET TOSTADAS

Vegetable oil, for frying tortillas
1 package small corn tortillas
1 can black beans, drained
Several dashes of hot sauce
1/2 cup shredded Cheddar
Shredded Braised Beef Brisket leftovers as needed, recipe follows
1/2 cup shredded lettuce
2 tomatoes, chopped
1/4 cup chopped onions
Small handful fresh cilantro
1/2 jalapeno, diced
Juice of 1 lime
1 avocado, diced
2 tablespoons sour cream
2 cans beef consomme
1 1/2 cups soy sauce
1/2 cup fresh lemon juice
2 tablespoons liquid smoke
5 cloves garlic, chopped
10 pounds beef brisket

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat 1/2 inch of vegetable oil in a small skillet. When the oil is hot, slide in a corn tortilla. To prevent the tortilla from puffing and browning unevenly, press down on the center with tongs or a metal spoon. After about 20 seconds, flip it over to the other side and hold down the center again. When golden, remove from the skillet and drain on paper towels. Use three tortillas per tostada.
  • In a small saucepan, mix the black beans with just a bit of hot sauce to give a bit of a kick. Mash the beans slightly as you warm them over medium heat.
  • Get ready to assemble: Grab a crispy tortilla and set it on a baking sheet. Now layer beans, cheese, tortilla, beans, cheese, tortilla, beans and cheese.
  • Bake until the cheese melts. Pull it out and layer the top with a helping of the Braised Beef Brisket, lettuce, tomatoes, onions, cilantro, jalapenos, lime juice, avocado and sour cream.
  • Combine the beef consomme, soy sauce, lemon juice, liquid smoke and garlic in a large roasting pan (a disposable is just fine). Place the brisket in the marinade, fat-side up. Cover tightly with foil. Marinate in the refrigerator for 24 to 48 hours.
  • When ready to cook, preheat the oven to 300 degrees F.
  • Cook the brisket in the foil-covered pan until fork-tender, about 40 minutes per pound (6 to 7 hours). Transfer to a cutting board, slice against the grain and put the slices back into the cooking liquid. Serve immediately, spooning the juice over the slices.
  • You may store the pan in the fridge for up to 2 days, or freeze for use at a later date. If fat collects and hardens at the top, remove and discard.

  • Open the black beans can and drain, reserve on a cup of their liquid. Place the beans and the reserved liquid in your blender and process until you have a very creamy and smooth texture. Set aside.
  • In a medium-size skillet heat the one tablespoon of the vegetable oil, once hot pour stir in the onion and cook until transparent, about 2 minutes. Add the bean mixture, and the epazote leaves, if using. Cook for 5 minutes until warm stirring frequently. Season with salt and set aside. Do not let the beans mixture dry, once the beans are warm, remove the skillet from the heat.
  • To make the tostadas: Pour one cup of vegetable oil in a large frying pan. Heat over medium-high heat. Once the oil is hot, add the tortillas, frying one by one until they are crispy and golden brown, this step will take about 1-1/2 minutes. Place the already fried tortillas in a plate covered with paper towels to drain any excess oil. Set aside.
  • To assemble the tostadas, spread 2 tablespoons of the creamy black beans over each tostada, evenly top with the shredded lettuce, sprinkle with the crumbled queso fresco and drizzle with Mexican cream. Add your favorite salsa and enjoy immediately!
