LAING - TARO LEAVES IN COCONUT MILK
Laing is the quintessential Bicolano dish, fiery hot and absolutely delicious though it can an acquired taste to the Western palate. This is one of my favourite Filipino comfort food. My Dad makes the most awesome version I should say. I am modifying it to suit the availability of ingredients. Be sure to use thick coconut milk, the light version will not work at all. Cooking time is about an hour and a half.

Steps:
- Sautee garlic, onion, lemon grass and ginger in a thick, heavy bottomed wok.
- Add meat and brown, then add shrimp and cook until pink, add smoked fish (if using). Season well.
- Pour in the first 4 cups of thick coconut milk , and bring to a boil while stirring continuously to avoid curdling.
- When the mixture has thickened, add the taro leaves.
- Stir occasionally over medium heat.
- When the liquid is almost dry, add the remaining 2 cups of coconut milk, and the chillies. Keep stirring to avoid curdling.
- Add vinegar.
- Cook over low heat until coconut milk turned almost into oil. Serve hot or at room temperature with rice.

- Heat oil in a pan over medium heat and cook the pork belly slices until cooked through. Add ginger, onion and garlic and sauté for 2 minutes.
- Add shrimp paste and chili and stir to incorporate with other ingredients. Add coconut milk and ring to simmer for 5 - 7 minutes.
- Tip in dried taro leaves and push down with ladle to submerged. Cover with lid and turn down heat to medium-low. Cook until leaves are soft and pork is tender.
- Taste and adjust with salt id needed and add more chili for more heat. Pour coconut cream then stir. Let it cook until oil from coconut cream renders. Remove from heat and transfer in a serving dish. Bon appetit!

- In a large pot, put pork cubes, 2 tablespoons water and a pinch of salt. Cook until fat is rendered and meat is starting to brown.
- Using medium heat, add the ginger, onion and garlic. Stir to mix then pour in the coconut milk and the shrimp paste. Bring to a boil on medium heat then switch to low heat (once boiling). Simmer for 3 minutes to let the flavors blend.
- Add taro leaves (do not stir) and cover for 2 minutes to wilt the leaves a bit. Then, gently push down taro until all the leaves are submerged and coated with the liquid. Increase heat to medium-low, partially cover the pot and cook for 5 minutes. Taste and add patis or salt, if needed. Check the bottom occasionally to prevent it from burning/sticking to the pot. Lower heat, if necessary.
- Then drop the chilies (cut a couple for a little spice) and mix a bit by pushing the tip of a wooden spoon from the sides of the pot to the middle part. Lower the heat and cook (partially covered) for another 5-10 minutes or until leaves are tender and glistening with oil.
