CRISPY HONEY NUT GRANOLA BARS
Crispy and not too sweet, these granola bars are loaded with oats, nuts, coconut, and dried fruit.

- Preheat the oven to 350°F. Line a baking sheet with heavy duty aluminum foil.
- Spread the oats, walnuts and almonds onto the prepared baking sheet. Place in the oven and toast for 7 minutes. Add the coconut and toss well with a rubber spatula, then place back in the oven to cook for 4 to 5 minutes more. Keep an eye on it towards the end; you want the coconut to turn golden but not burn.
- In the meantime, combine the honey, brown sugar, butter, vanilla extract and salt in a small saucepan and place over medium-high heat. Whisk and bring to a rapid boil, then turn off the heat and set aside.
- Once the oat mixture is done, remove it from the oven and reduce the heat to 300°F. Combine the oat mixture, honey mixture, rice cereal, and dried fruit in a large bowl and toss well. (Reserve the aluminum foil.)
- Use the reserved foil to line a 9x13-inch baking dish, then spray the foil with nonstick cooking spray. Turn the granola bar mixture out into the prepared baking dish and spread evenly, patting down with a spatula. Be sure the heat is reduced to 300°F, then bake until lightly golden, 20 to 23 minutes. Remove from the oven and cool completely, 1 to 1½ hours. Use the foil overhang to transfer the bars to a cutting board, then use a large, sharp knife to cut into rectangles. Store the bars in a single layer in an airtight container, or wrap the bars individually in aluminum foil, for up to a week at room temperature.
- Note: You can swap in your favorite nuts and seeds as long as you keep the proportions of dry to wet ingredients the same. You can also toss in some dried fruit. On occasion, I'll sprinkle some chocolate chips over top for the kids (you can't mix them in or they'll melt).
- Note: Be sure your oven is fully preheated before toasting nuts; the initial blast of heat to preheat the oven can burn them.
- Freezer-Friendly Instructions: The granola bars can be frozen for up to 3 months. Let them cool completely and store in an airtight container separating layers with parchment paper or aluminum foil. Before serving, remove them from the container and let them come to room temperature.

HONEY NUT COOKIE BARS

- Cream together the butter and brown sugar.
- Mix in the flour until fully incorporated.
- Press into the bottom of a 9×13 inch, parchment paper lined baking pan.
- Bake at 350 degrees F for 20 minutes.
- In a medium sized saucepan combine the butter brown sugar honey and whipping cream.
- Bring to a gentle boil and simmer for only a minute or two before stirring in the almonds and pecans.
- As soon as the bottom has baked for 20 minutes, pull it out of the oven and spread the topping evenly over the base and return to the oven for an additional 20 minutes. Careful not to over bake these or the caramel top will go brittle and not chewy. If you have a candy thermometer you can test the top layer to ensure that it is somewhere between 245 to 250 degrees F when fully baked.
- Cool completely the pan on a wire rack.
- Drizzle the tops with the melted chocolate if you choose. These are exceptionally good without the chocolate too.

The popcorn is 100 per cent whole grain, high in fibre and now made without any artificial colours, flavours or preservatives.

- Preheat oven to 375°F. Spray 15x10-inch shallow baking pan with cooking spray. Combine oats, flour, baking soda, cinnamon and salt in medium bowl; set aside.
- Prepare popcorn according to package directions. Remove all un-popped kernels; set aside.
- Combine brown sugar and margarine in large bowl using electric mixer on high speed. Add water and vanilla; beat until light and fluffy. Gradually add flour mixture; blend well. Reduce speed to low and add cranberries.
- Cover hands with plastic gloves or sandwich-size plastic bags. Incorporate popped corn into cookie dough. Spread mixture in pan. Bake 10 to 12 minutes or until golden brown.
- Cool before cutting into 24 bars. Store in tightly sealed container.

- Preheat oven to 350°F.
- Place cookie dough, the 1/2 cup toffee pieces, and the pecans in a large resealable plastic bag and knead to combine. Press dough evenly over the bottom of an ungreased 13x9-in baking pan.
- Bake for 12 to 15 minutes or until golden brown. Sprinkle with chocolate pieces immediately after baking; let stand for 5 to 10 minutes or until chocolate is softened, then spread evenly over the bars. Sprinkle with the 1/3 cup toffee pieces.

- Heat oven to 350. Grease a 13x9 pan.
- In a large bowl, combine butter and cake mix; mix at low speed until well blended. The mixture will be crumbly. Add pretzels and mix well. Press in bottom of pan. Bake at 350 for 12 minutes. Let cool 5 minutes.
- In a large bowl, combine sugar, corn syrup, and 2 eggs; mix at low speed until well blended. Stir in remaining filling ingredients. Spoon evenly over partially baked crust.

- Combine first 3 ingredients in a bowl, beating well at medium speed of an electric mixer.
- Reserve 2 cups flour mixture, and set aside.
- Add baking soda and next 3 ingredients to remaining flour mixture; beat well.
- Add vanilla and next 2 ingredients; beat well.
- Stir in apple.
- Press reserved 2 cups flour mixture into the bottom of a 9 x 13 x 2-inch baking pan coated with cooking spray.
