PEANUT BUTTER KRISPY RICE SQUARES

6 tablespoons unsalted butter
16 ounces mini marshmallows
1/2 teaspoon kosher salt
6 tablespoons peanut butter
2 teaspoons vanilla extract
6 1/2 cups crispy rice cereal
2 1/2 cups coarsely crushed graham crackers (about 9 rectangles)
1 cup milk chocolate chips
1/4 cup rainbow sprinkles, plus more for decorating

Steps:

  • Line an 8-inch square baking dish with parchment paper, allowing 1-inch wings to hang over the edges; set aside.
  • In a large pot over medium heat, melt the butter. Add the marshmallows and salt and cook, stirring, until the marshmallows are melted and smooth. Remove from the heat and stir in the peanut butter and vanilla (the peanut butter can still be swirly). Add the cereal, crushed graham crackers, chocolate chips and sprinkles and fold with a large rubber spatula to combine.
  • Pour the mixture into the prepared baking dish, using the spatula to spread it out evenly. Place a piece of parchment on top and then use your hands to press the mixture down very firmly. Top with additional sprinkles as desired. Let the mixture firm up in the refrigerator for 1 hour, then cut into squares.

Classic Pie Crust
4 cups Bing cherries, pitted
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
2 tablespoons cornstarch
1 to 1 1/2 cups sugar (depending on the sweetness of the fruit)
1/4 teaspoon ground cinnamon
Pinch of salt
1/4 teaspoon almond extract
1 tablespoon grated orange zest
1 1/2 tablespoons cold unsalted butter, cut into small pieces

Steps:

  • 1. Preheat the oven to 450°F. Prepare the Classic Pie Crust as directed for a 9-inch double-crust pie.
  • 2. Place the cherries in a large bowl. Mix orange and lemon juices with the cornstarch, then combine with sugar, cinnamon, and salt. Toss with the cherries. Let rest for 15 minutes.
  • 3. Add the almond extract and the orange zest; toss well.
  • 4. Line a 9-inch pie plate with one crust and prick all over with a fork. Spoon the cherry filling evenly into the crust. Dot all over with butter. Cover with a top crust. With water, moisten the crusts where they meet, then turn the top crust under the bottom and flute the edge. Cut a few slits in the top to allow steam to escape. Decorate the surface if you wish by rolling out the scraps and cutting several cherry, leaf, and stem shapes.
  • 5. Bake pie in center of the oven for 10 minutes at 450°F. Reduce heat to 350°F and bake 45 to 55 minutes more, or until the crust is nicely golden. Let cool on a rack before serving warm or at room temperature.

  • Measure dry ingredients into large bowl. Peel, core, and slice apples into the bowl. Toss apples and dry ingredients.
  • Divide pie crust dough in two portions, and then roll out on a liberally floured surface. Your crust should be about an inch bigger than the pie pan, all around. Fold the dough in half for easy lifting, then move into a pie pan. Poke the dough a couple of times with a fork to prevent the bottom crust from getting air bubbles. (I do this because my mom says I should, but I've not once seen a bottom crust do anything weird.)
  • Spoon the apple filling into the crust. The filling should be heaped three or four inches above the edge of the pie pan. The apples will cook down, so you want to be generous. If you end up with a few excess apple slices, consider them a snack. (I used to wait for this part of the pie baking process when I was a kid!)
  • Roll out second crust, fold in half for easy moving, and gently place it on top of the apple filling. Gather the edges of both crusts, and turn them under as you work your way around the pie, crimping the edges together. Use a knife to cut a couple of slashes in the top crust to allow steam to escape.

  • Divide dough in half. Roll into two circles. Wrap in saran wrap and put in the refrigerator until ready to use. You *must* wrap the dough to avoid it from drying out.

  • Using a fine mesh strainer, strain the mixture into a pot. This part is important to help get the bits of egg/flour and avoid clumpy cream. See above for notes on straining. You may need to strain twice.
