It was snowing in Jerusalem when I decided that it was a perfect time to get into the kitchen (not sure when I'm actually out of the kitchen!!) and do my experimenting. What better way to warm up the house? So I made bread and soup and more soup, and then I was fiddling with different ingredients to create this glaze. I was so excited that I ran (in the snow!) to my connoisseur friend, Rochel, and told her to give me her opinion. When she said just one word: "Heaven," I knew this recipe was in. 1 corned beef, defrosted
3 tablespoons raspberry jam
1 tablespoon + 1 teaspoon brown sugar
2 tablespoons Tonnelli Cider Vinegar
2-3 tablespoons Tuscanini Tomato Sauce
1 teaspoon Gefen Worcestershire Sauce (fish free)
1 tablespoon soy sauce
3-6 drops hot sauce
salt, to taste
pepper, to taste
1/2 - 1 teaspoon alcohol or whiskey (optional, but recommended)
1 tablespoon oil (optional)

Steps:

  • Fill an eight-quart pot with water and bring to a boil. Carefully drop in the corned beef and bring to boil once again. Lower heat and cook 35-40 minutes per pound of meat (1 hour and 15 minutes for every 2 pounds). Taste a small piece of meat when cooking time is up to see if it's soft enough. If not, cook a little longer. If it's ready, drain but retain some of the water for reheating. Set aside to cool.
  • Meanwhile, prepare glaze: Place all glaze ingredients, aside from oil, in a small saucepan. Whisk together over high heat, bringing to a boil. Reduce heat to low and simmer 10 minutes or until thickened. Stir occasionally. Remove from heat and add oil. Stir until mixed in. This will give the glaze a nice shine.
  • Cool slightly and smear on corned beef, coating the top evenly. Place in a roasting pan in a preheated 350 degrees Fahrenheit (180 degrees Celsius) oven and cook covered for half an hour. You might want to pour some of the reserved water on the bottom of the pan so it doesn't dry out.
  • Cool completely before refrigerating. Slice when cold.

JEWISH STYLE CORNED BEEF

1-12 pound whole brisket
4 quarts water
2 cups Kosher salt
1 teaspoon saltpeter
5 bay leaves
7 cloves garlic, smashed
1/4 teaspoon ground cloves
2 teaspoons whole peppercorns
1 teaspoon allspice berries
1 teaspoon mustard seeds
1 cup white vinegar
1/2 cup white sugar
1 teaspoon allspice berries
1 teaspoon mustard seeds
1/4 teaspoon cloves
2 teaspoons peppercorns
3 cloves garlic
1/4 cup salt

Steps:

  • Place all ingredients except garlic and brisket in a large pan and bring to a boil and cool. Place garlic and brisket in non-reactive pot and cover with brining liquid, cover with a plate and weight for 3 weeks, turning after 1 1/2 weeks.;
  • Remove meat from the brine and rinse. Add enough water to the steamer pot to reach just below the bottom of the steamer. Place meat in steamer. Steam for 3 hours, until tender.

The aroma of the spices in this recipe are so outstanding, that it almost unfair that you have to wait several hours before you can indulge. It is done to perfection when the corned beef is brown on the outside but rosy on the inside. It is so inviting...let's eat!

4-5 lbs. Kosher Corned Beef (ask your butcher for the best meat to use.)
1 medium whole garlic clove
2 medium onions, peeled and cut into quarters
2 whole cloves
6-8 whole black peppercorns
1 large bay leaf
1/4 tsp. mustard seeds
1/4 tsp. dried rosemary
1 large head of cabbage,cut into quarters. (optional)

Steps:

  • Put beef into large stock pot, Add all the seasonings. Do not put the cabbage in the pot. Pour cold water into pot, to cover the meat. Bring to a boil. Skim off foam. Cover pot. Lower heat to a simmer.
  • If using the cabbage, after 3 1/2 half hours, add the cabbage. Simmer for 30 minutes more. This should be fork tender, if not let it simmer until it is fork tender. Use your judgement. Remove, and slice to your desired thickness. Corned Beef can be served cold or hot. Your choice. This is usually made into sandwiches. Rye bread, potato salad, coleslaw and pickles are excellent side dishes. Maybe French fries. Hmm.

Steps:

  • In a kettle combine beef with cold water to cover by 2 inches and bring water to just a boil, skimming froth. Simmer beef, covered, 3 hours, or until tender. Remove kettle from heat and let beef stand in cooking liquid 20 minutes. Transfer beef to work surface and trim fat. Use beef as part of a boiled dinner and/or for making corned beef on rye and/or corned beef on ryecorned beef hash. Corned beef keeps, covered and chilled, 4 days.

2 quarts water
3/4 cup kosher salt
1 tablespoon pink curing salt, such as sel rose or Insta Cure #1*
1/2 cup light brown sugar
3 tablespoons prepared pickling spice
2 quarts ice water
1 (5-pound) beef brisket, with the deckle intact
Rub
3 large fresh bay leaves, torn into small pieces
9 cloves garlic, crushed
3 tablespoons yellow mustard seed
2 tablespoons coarsely ground black pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground coriander
2 cups warm Parsley Sauce

Steps:

  • Brine the meat: In a saucepan over high heat, heat the water, kosher salt, curing salt, brown sugar, and pickling spice, stirring until the salt is dissolved. Add the ice water. Place the beef in a 2-gallon ziptop bag. Place the bag in a stockpot and pour the brine into it, over the meat. Seal the bag, squeezing as much air out of it as possible so the meat remains completely submerged. Refrigerate the beef in the bag for 10 days.
  • Rinse the beef: Remove the beef from the brine; discard the brine. Thoroughly rinse the beef under cold running water, removing all of the spices, and blot it dry on paper towels.
  • Season the beef with the rub: Combine all of the rub ingredients in a small bowl. Spread the rub over the beef with your hands, covering all surfaces, and place the beef in a 2-gallon zip-top bag; seal the bag, squeezing out as much of the air as possible. Place the bag on a baking dish and refrigerate for a week, turning the bag over once a day. This is known as dry brining-you will notice each day that more liquid leaches from the beef.
  • Cook the beef: On the day you wish to serve the beef, place it in a large pot with all of the accumulated juices in the bag. Add water as needed to cover the meat and bring to a boil over high heat. Lower the heat to medium, cover the pot, and let the beef simmer for 3 hours, until fork tender but not falling apart.
  • Present the dish: Spoon the warm parsley sauce into a small bowl. Drain the beef and transfer it to a cutting board. Let it rest for 15 minutes and then slice it 1/2 inch thick, cutting lengthwise, against the grain. Arrange the meat on a serving platter or individual plates; serve with the sauce on the side, along with your chosen side dishes.
