KOREAN GRILLED BEEF LETTUCE WRAPS
This dish is downright addictive. Thinly-sliced strips of beef are marinated in a salty-sweet-spicy marinade then quickly seared on the grill. Then they're rolled up into ssam (Korean-style wraps) by folding a piece of steak or two, some rice, vegetables and herbs inside a crisp, cold lettuce leaf. Be sure to put the meat in the freezer for a bit before slicing the meat; it simplifies a potentially onerous task.

- Wrap the steak in plastic and place it in the freezer while you put together the marinade. In a medium bowl, combine the soy sauce, sugar, beer, garlic, scallions, pepper, sesame oil, honey and Asian pear. Take the steak out of the freezer and slice it across the grain into 1/4-inch-thick strips. Stir the steak into the marinade and let it sit for 30 minutes, while you build a very hot fire or preheat a gas grill to its highest setting.
- When the grill is very hot, sear the steak until nicely caramelized, 2 or 3 minutes on each side. Work in batches to avoid crowding the meat. Serve the beef with condiments and make ssam (Korean-style wraps) by folding a piece of steak or two, some rice, vegetables and herbs inside a lettuce leaf.

- In medium bowl, stir soy sauce, Splenda, oil, ginger, pepper and garlic until blended. Stir in beef and marinate for 15 minutes.
- In a non-stick skillet, heat celery, carrots and water to boiling. Cook 2-3 minutes or until veges are crisp-tender, stirring occasionally.
- Add beef and marinade, cook 2-3 minutes, or until meat just loses its pink color, stirring constantly.
- Stir in green onions and sesame seeds and cook for 1 minute.
- Remove from heat and serve wrapped in lettuce leaves.

SPICY BEEF IN LETTUCE CUPS
Just about any large leaf lettuce can be used to create cups or folded packets for this spicy Szechuan-style dish of ground beef. The filling is also good on flour tortillas or pita pockets with shredded lettuce. It makes a great warm weather light dinner, perfect for sharing with friends! This recipe was printed in the food section of the December 17, 2008 Houston Chronicle and was adapted from "Quick and Easy Chinese".

- In a small bowl,combine soy sauce,sherry,cornstarch, sugar and salt; stir well and set aside.
- In a medium bowl, use a spoon to break up the ground beef; gently mix in soy-sauce mixture. Set aside 10 to 15 minutes.
- Heat wok or large, deep skillet over medium-high heat until very hot.
- Add oil and swirl to coat pan; add ginger and garlic.
- Cook for about 1 minute, stirring, until fragrant but not browned.
- Crumble in beef, and use spatula or large slotted spoon to break it up and spread meat over pan to help it cook evenly.
- Cook until it changes color on one side, 1 to 2 minutes.
- Turn meat and cook another minute undisturbed.
- Toss well, using a spatula to break up any large chunks.
- When meat is cooked, add pepper flakes and scallions, then toss well.
- Add sesame oil and remove from heat, tossing until sesame oil is well blended.
- Transfer meat to serving plate; serve hot,warm or at room temperature.
- Arrange lettuce cups on serving platter; fill each with a spoonful of beef or provide lettuce cups and plate of beef and let guests assemble lettuce packets themselves.

- Take the steak out of the fridge 30 mins ahead of frying it. Mix the chimichurri ingredients with 1 tbsp water, season and set aside. Mix the ingredients for the chilli & lime sauce and set aside. Separate the Baby Gem lettuces so you have 20 leaves ('cups').
- Heat a non-stick frying pan over a medium-high heat. Coat the steak in the oil, season, then fry for 2-3 mins on each side. Set aside for 10 mins, then cut into 20 slices. Place a steak strip on each cup. To serve, top half with the chimichurri and half with the chilli & lime sauce.
