Beef sliders get a sweet upgrade on soft Hawaiian rolls, which are both kid- and adult-friendly. Add thin slices of grilled pineapple to complement the bread, if you like.

Number Of Ingredients 10

1 1/2 pounds ground beef
Kosher salt and freshly ground black pepper
Vegetable oil, for brushing the grill grates
3 slices Cheddar, cut into quarters
12 Hawaiian sweet rolls, such as King's Hawaiian, split
2 tablespoons ketchup
2 tablespoons mayonnaise
1 tablespoon yellow mustard
12 small pieces romaine or iceberg lettuce (about the same size as the rolls)
12 dill or bread-and-butter pickle chips

Steps:

  • Prepare a grill or grill pan for medium-high heat.
  • Divide the ground beef into 12 portions (about 2 ounces each). Pat each into a 1/2-inch-thick patty and make an indentation in the center with your thumb so the patties keep their shape while cooking. Sprinkle with salt and a few grinds of pepper.
  • Brush the grill grates or grill pan with oil. Grill the patties, turning once, until nicely browned but still a bit pink inside, 2 to 3 minutes per side. Top each patty with a piece of cheese and grill until melted, about 1 minute.
  • Arrange the sweet rolls cut-side up on a cutting board or large serving platter. Spread some ketchup, mayonnaise and mustard on each roll bottom. Top with a piece of lettuce and a burger patty. Put a pickle on each patty and sandwich with the remaining roll tops.

One 14 to 16-ounce kobe or wagyu strip steak
Coarse sea salt or soy sauce to taste

Steps:

  • Place the steak in the freezer for half an hour to firm the fat.
  • Heat a griddle or large cast-iron skillet over high heat for 5 minutes.
  • Remove the steak to a cutting board and using a long, thin carving knife, cut the steak horizontally (think the streets of Manhattan rather than the avenues) into 1/4- to 1/3-inch strips. If wider pieces are desired, cut on bias. Try to use a minimum of back and forth "sawing" while slicing.
  • When the skillet is hot, quickly sear each slice 20 to 30 seconds per side and remove to a platter. Serve immediately with a sprinkling of sea salt or soy sauce.

2 tablespoons extra-virgin olive oil
2 jumbo sweet onions, thinly sliced
2 tablespoons bourbon
3 tablespoons unsalted butter
2 tablespoons sugar
Kosher salt and freshly ground pepper
2 cups mayonnaise
1 tablespoon tequila
2 tablespoons fresh lime juice
3 tablespoons pickled jalapenos
1/4 cup chopped fresh cilantro
Kosher salt and freshly ground pepper
3 pounds ground kobe beef
Vegetable oil, for the grill
1 teaspoon garlic salt
Sea salt and freshly ground pepper
12 mini burger buns
Unsalted butter, softened, for brushing
12 lime wedges

Steps:

  • Make the onions: Heat the olive oil in a large skillet over medium-high heat until almost smoking. Add the onions and stir to coat. Reduce the heat to low and cook until the onions are golden, about 30 minutes. Remove from the heat and add the bourbon, scraping up any browned bits with a wooden spoon. Return to low heat, add the butter and cook until melted. Add the sugar, and salt and pepper to taste, and cook until there is very little liquid left.
  • Meanwhile, make the aioli: Pulse all of the ingredients in a food processor until combined. Cover and refrigerate until ready to use.
  • Make the sliders: Preheat a grill to medium high. Form the beef into twelve 4-ounce patties, about 1/2 inch thick. Oil the grill rack, then add the patties and season with the garlic salt, and sea salt and pepper to taste. Grill until browned and cooked halfway through, 3 to 4 minutes. Flip, top with some of the caramelized onions and cook 3 more minutes for medium (or to desired doneness).
  • Meanwhile, brush the insides of the buns with butter and toast on the grill, about 1 minute. Brush the insides of the bun tops with about 1 tablespoon aioli. Put the burgers on the bun bottoms and cover with the tops. Thread each lime wedge onto a skewer; pierce the skewers through the sliders.

1 pound high quality ground Kobe beef
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
2 shallots, finely chopped
12 small rolls sliced in 1/2 (recommended: Hawaiian sweet rolls)
Sliced cheese of your choice (see Cook's Note)
Micro greens, for garnish
Condiments of your choice

Steps:

  • Start up your grill and make sure it's hot.
  • In a medium-sized mixing bowl add the beef, seasonings, and shallots. Mix the meat with your hands, thoroughly incorporating the seasoning and shallots. Form the meat into small-sized patties. Put the mini-patties on the grill and cook through, giving it about 2 to 3 minutes per side. In the last 2 minutes of grilling, top each patty with a slice of cheese and allow it to start melting. When the cheese has melted, remove the patties from grill. Put the patties on the bottom half of the bun, garnish with micro greens, and lean the top half of the bun on the side of the slider, exposing the greens, for presentation purposes. Serve hot with condiments on the side.
  • If giving to your dog, go with a mild cheese

KOBE BEEF WITH DIPPING SAUCE AND HIBACHI SLAW

2 tablespoons wasabi powder
1 1/2 tablespoons water
1 teaspoon minced garlic
1-ounce chili sauce (recommended: Mae Ploy Sweet Chili Sauce)
3 1/4 ounces soy sauce
1-ounce white vinegar
1 teaspoon lime juice
1 3/4 ounces canola oil
1/2-ounce chopped green onion
2 ounces carrot, peeled and cut into matchsticks
2 ounces daikon root, cut into matchsticks
2 ounces red pepper, cut into matchsticks
1-ounce fresh chives, cut into matchsticks
1-ounce pea sprout, cut into matchstick size
1 tablespoon Dipping Sauce
1/2 pound Kobe beef, see Cook's Note*
Dipping Sauce, recipe follows
Hibachi Slaw, recipe follows

Steps:

  • For the Dipping Sauce:
  • Combine wasabi and water to make a paste. Using a blender or a mixing bowl with a whisk Add remaining ingredients except oil and onion, blend until well combined or whisk well. Emulsify in oil by pouring it slowly into the blender while running or mixing bowl while mixing. Stir in onion and set aside.
  • For the Hibachi Slaw:
  • Using a mandoline or with a knife, cut the carrots and daikon to a matchstick size. Using your knife, cut red pepper into the same shape as the daikon and carrot. Cut the chives in the same manner. Toss all together with pea sprouts. Season with salt and pepper and 1 tablespoon dipping sauce.
  • For the Beef:
  • In the restaurant, we serve raw slices of kobe beef with a hibachi. The customers then cook the beef at the table on a hot stone. For home use, I suggest cutting the beef tenderloin into quarters lengthwise. Season them well with salt and pepper, to taste. Then quickly sear them on all sides in a very hot saute pan with cooking oil. Let the meat rest for 2 to 3 minutes. Then slice across the loin into very thin slices. Enjoy with the Dipping Sauce and Slaw.

A real-deal beef slider isn't just a tiny hamburger, which is what you get at the vast majority of restaurants. To be authentic, it has to be steamed over a bed of onions, bread, and all. You can change up the toppings, but I love them best with the traditional pickles and onions.

4 tablespoons mayonnaise
2 tablespoons Sriracha sauce
1 tablespoon pickle juice
1 teaspoon prepared yellow mustard
1 teaspoon garlic powder
1 teaspoon white sugar
½ teaspoon salt
1 tablespoon olive oil, or as needed
1 white onion, thinly sliced
1 pound ground beef
1 tablespoon hamburger seasoning
1 teaspoon Worcestershire sauce
3 slices American cheese
1 dill pickle, sliced
6 slider rolls, halved

Steps:

  • Mix mayonnaise, Sriracha, pickle juice, mustard, garlic powder, sugar, and salt together in a bowl for comeback sauce. Refrigerate for 1 hour. Set aside 6 teaspoons for sliders; refrigerate remaining sauce for another use.
  • Coat the bottom of a deep pan with a thin layer of oil. Heat over medium heat. Add onion in about a 1/2-inch layer across the whole pan. Cover and let cook until fragrant, 3 to 4 minutes. Reduce heat to medium-low, stir, and re-cover.
  • While onion is cooking, combine beef, seasoning, and Worcestershire sauce in a bowl. Shape into 6 small patties.
  • Toss onion around the pan so as not to burn one side. Place patties over the bed of onion and cover the pan. Cook for 2 minutes.
  • Flip burgers. Place 1/2 a slice of American cheese on top of each burger and several pickle slices on the cheese. Place both halves of buns stacked face-down on top of each burger. The top bun should be the one touching the cheese and pickles. Cover to steam the buns and cook burgers until no longer pink in the centers, 3 to 5 minutes more.
  • Remove the buns and burgers from the pan. Spread comeback sauce on the bottom half of each bun, then load some onions onto it. Place burger and top bun on top. Serve hot.

1 cup soy sauce
2 tablespoons granulated sugar
1/2 lemon, juice of
1/2 lime, juice of
1/2 orange, juice of
3 ounces pineapple juice
1 ounce fresh ginger, peeled and chopped (about 1/4 cup)
3 green onions, chopped (white part only)
1/2 cup mayonnaise
1 lb ground beef, high quality (such as Kobe)
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder
1 teaspoon curry powder
1/2 teaspoon ground cumin
3 green onions, chopped, green part only
12 hawaiian rolls, sliced in half
12 slices triple-cream brie cheese (sliced very thin)

Steps:

  • To prepare the glaze: In a saucepan over medium-high heat, combine soy sauce, sugar, lemon, lime, orange and pineapple juices, ginger and the white parts of the 3 green onions. Cook until mixture is reduced by half. When a spoon is dipped into he mixture, it should coat the spoon. Strain the liquid and discard the solids. Makes 1/2 cup. Set aside.
  • To prepare the soy-ginger mayo: In a bowl, combine the mayonnaise and 1 tablespoon of the prepared glaze, above. Chill.
  • To prepare the sliders: In a mixing bowl, combine the beef, 1 tablespoon of the prepared soy ginger glaze (above), onion powder, garlic powder, curry powder, cumin and the green parts of the 3 green onions. Form the beef into 12 patties. Set aside.
  • Preheat oven to 300 degrees. Preheat the grill or a griddle.
  • Place the bottom half of the rolls, cut side up, on a serving platter and dress with a teaspoon os the soy ginger mayo. Place the top half of the rolls, cut side up, on a baking sheet and top with the cheese slices. heat in the oven until the cheese is softened, about 5 minutes. meanwhile, grill or sear the patties until they reach the desired doneness. Place the patties on the bottom half of the buns, brush with soy ginger glaze and top with the other half of the bun and serve.
