NEW ZEALAND TARARUA BISCUITS
A Kiwi recipe for our Zaar World Tour. Please understand that 'biscuit' in New Zealand = 'cookie' in the U.S. These biscuits are wholesome, simple to make and they pack and keep well. To keep them fresh for camping trips it pays to pack them in day lots and label accordingly. Be warned: Tararua biscuits can be jaw breakers as they are designed to have little moisture left by the end of cooking!

Number Of Ingredients 7
Steps:
- Melt butter, sugar and condensed milk together in large pot.
- Add flour, rolled oats, baking powder and coconut.
- Divide mixture in half.
- Spread each half onto a greased tray - spread with a knife until it forms a 30cm x30cm (12" x 12") square, keeping edges neat and straight.
- Repeat with other half of mixture.
- Cook at 150C/300F for 10-15 minutes till light to golden brown.
- Cut each tray into 25 biscuits - 5 x 5.
- To harden biscuits a little more return to oven which has been turned off - leave for another 5 - 10 minutes.
- When completely cold, pack biscuits in plastic bags. Seal and label.

This one comes from "The New Zealand Outdoor Cookbook" by Marcelle Pilkinton - a little gem of a book for outdoor types.

KIWI QUICK BREAD
My girfriend gave me a loaf of this delicious bread along with the treasured recipe. Here it is for you. Makes a wonderful tea bread and does it smell good while baking!

- Preheat oven to 350 degrees. Grease and flour a 9 X 5 X 3 loaf pan.
- Sift together flour, baking powder baking soda and salt and set aside.
- In large bowl cream butter and sugar together until light and fluffy. Add eggs one at a time to creamed mixture beating well after each one. Stir in kiwis. Fold in dry ingredients gently, stirring only until batter is completely moistened. Spoon batter into pan and bake for 55-65 minutes or until toothpick inserted comes out clean. Cool for 10 minutes on wire rack. Remove from pan and continue cooling on rack.

- Combine butter and sugar until creamy.
- Add milk, and stir.
- Add baking powder and flour and combine until just mixed.
- Add chocolate chips and mix all together.
- Roll dough into balls (golfball size or smaller) and place on an ungreased cookie sheet.
- Press down with fork tines.
- Bake in a moderate over at 350 and remove when the bottoms become golden brown.

- Pare the kiwi and chop enough to make 1 1/2 cups. Place chopped fruit in a 2 quart pan, add sugar and lemon peel. Bring to a boil, stirring until fruit loses some of its color. Allow to cool.
- Beat eggs and oil well. Blend together flour, baking powder and salt.
- Add the baking soda to cooked kiwi mixture. Stir until bubbles form. Add this to the egg mixture and then add flour mixture to it. Stir until dry ingredients are moistened.
- Spoon mixture into a well greased loaf pan. Bake at 350 degrees about 55 minutes. Cool in pan 10 minutes and turn out onto wire rack.
- Make icing with powdered sugar and lemon juice. Spoon over loaf.
