KITTENCAL'S PERFECT COOKED WHITE RICE (SOFT, MEDIUM OR FIRM)
This method will create a perfect cooked rice --- remember not to stir at anytime while cooking or the rice will stick to the bottom of the pot, and do not cover with a lid until all water is absorbed, for this method use only long grain white rice, please see directions for water amount.

- *NOTE* for a firm rice (which makes the best Chinese fried rice) use 1-3/4 cups cold water, for medium use 2 cups water less 2 tablespoons, for soft use 2 cups water.
- Place the uncooked rice in a fine strainer and rinse thoroughly under cold water; drain very well (this is an important step the rice must be rinsed firstly).
- Place the rice into a 2-quart saucepan then spread out to cover the bottom.
- Pour the water over the rice, then sprinkle the salt over the top (do not stir) bring to a full boil UNCOVERED on medium-high heat.
- When rice is at a full boil immediately reduce heat to medium-low (more towards the lower setting) and simmer uncovered for 20 minutes or until the water has evaporated and the rice looks dry (push aside a few grains of rice with a fork, if there is no moisture/water in the bottom of the pot then it's ready, do not stir!).
- Turn off the heat and cover with a lid and let the rice stand on the element for 20 minutes.
- Fluff the rice with a fork before serving.

- Bring 1 1/2 cups water to a boil in a medium saucepan. Stir in rice and salt and return to a boil over medium-high heat.
- Reduce heat to a simmer, cover, and cook until rice is tender and has absorbed all the liquid, 16 to 18 minutes (check only toward the end of cooking time). The rice should be studded with craters, or steam holes, when it is ready.
- Remove from heat and let steam, covered, for 10 minutes. Then fluff with a fork and serve.
KITTENCAL'S CREAMY PARMESAN OVEN-BAKED RICE
This is creamy and delicious, you may also add in some frozen thawed peas or canned drained sliced mushrooms or fresh sauteed, if you are not a garlic lover then omit the fresh garlic or you may use 1/2 teaspoon or more of garlic powder --- if you love risotto then you will love this rice!

Steps:
- Set oven to 400 degrees F (or 350 degrees F for air-convection oven).
- Set oven rack to second-lowest position.
- Heat oil in a medium oven-proof saucepan over medium-high heat; add in onion and saute until softened (about 4 minutes).
- Add in garlic; cook stirring for about 2-3 minutes.
- Add in the next 5 ingredients; stir over medium heat until smooth and bubbly.
- Mix in the rice, then season with black pepper and salt.
- Cover with a tight-fitting lid.
- Bake for 30 minutes.
- Remove from oven and stir the mixture ( the saucepan will be hot so handle carefully holding with a tea towel).
- Return to oven and continue baking uncovered for another 10-15 minutes or until the rice is soft.
- You may mix in more Parmesan cheese if desired.
- The rice is best if served immediately.
KITTENCAL'S WHITE CAKE
7-Up or Sprite is the secret ingredient that takes this cake to another level, do not allow the soda to go flat pour right from the bottle or can --- this cake bakes out beautiful with no dark over cooked edges --- I recommend to use diet soda regular is too sweet but regular will work fine also ---this also may be baked in two 8-inch round cake pans and it makes the perfect wedding cake!

- Mix all ingredients in a bowl on low speed until blended (about 30 seconds).

- In a wok or a large skillet brown the ground beef with garlic and ginger over medium heat (about 10 minutes) breaking up into small pieces; drain the fat, then transfer to a bowl.
- Heat 2 tablespoons oil in the same skillet over medium-high eat until hot.
- Add in bell pepper and pea pods; cook for 3 minutes or until bell pepper is crisp-tender, stirring occasionally.
- Stir in the cold cooked rice, soy sauce and sesame oil.

KITTENCAL'S OVEN-BAKED BROWN RICE
If you love brown rice then try this recipe, the rice bakes out perfect all the time! if you are using a highly-salted broth then you may want to reduce the salt slightly, for extra heat add in some cayenne pepper --- I also like to add in a few small bay leaves for added flavor ---- the recipe may be reduced to half, for vegetarian use vegetable broth or water and olive oil in place of butter --- this may also be made without the onion and garlic, see note on bottom.

- Set oven to 375 degrees F.
- Set oven to second-lowest rack (or middle rack).
- Grease a Dutch oven (use one that has a tight-fitting lid).
- Heat 3 tablespoons butter in the Dutch oven over medium heat; add in brown rice, onion, garlic and coarse black pepper and cook stirring constantly for about 3 minutes.

- Place the rice in colander and rinse thoroughly with cold water; drain well and set aside.
- Heat the oil in a medium saucepan over medium heat.
- Add in onion and cook for 1 minute.
- Add in the garlic and cook until the garlic is just lightly browned (do not cook until dark browned).
- Add in the rice and salt; cook stirring constantly until the rice begins to brown.
- Slowly and carefully pour in the hot water then then broth stirring gently; bring to a simmer.
