To save some time the meat sauce may be made up to a day ahead if desired, try to use extra-lean ground beef for this it will make a difference in flavor, small penne pasta may be replaced for the ziti, but I do recommend using the ziti, adjust the chili flakes to suit heat level, or you may omit if desired --- also see my recipe#66596

1 lb uncooked ziti pasta
1/4 cup melted butter
1/3 cup grated parmesan cheese
1 pinch nutmeg
1/2 teaspoon seasoning salt or 1/2 teaspoon white salt
1 teaspoon ground black pepper
3 large eggs, beaten
2 tablespoons olive oil
1 tablespoon butter
1 medium onion, chopped
1 -2 teaspoon crushed red pepper flakes (or to taste)
2 tablespoons fresh minced garlic
1 1/2 lbs extra lean ground beef
1/3 cup tomato paste
1/2 cup dry red wine
1 cup beef broth
1 1/2 teaspoons seasoning salt
1 teaspoon ground black pepper
1/2 cup butter
1/2 cup all-purpose flour
1 pinch cayenne pepper
3 cups 18% table cream or 3 cups half-and-half cream
1/8 teaspoon nutmeg
1 large egg, slightly beaten
1/2 teaspoon seasoning salt (or to taste) or 1/2 teaspoon white salt (or to taste)
ground black pepper (to taste)
1 cup grated parmesan cheese

Steps:

  • Set oven to 350 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • In a large pot cook the pasta in boiling water with 1 tablespoons salt until al dente; drain and return the cooked pasta to the pot.
  • To the pasta add in 1/4 cup melted butter, 1/3 cup Parmesan cheese, pinch nutmeg, 1/2 teaspoon salt and 1 teaspoon ground black pepper; mix until combined then allow to cool slightly.
  • Add in eggs and mix well; set aside.
  • For the meat sauce; heat olive oil and butter in a skillet over medium heat; add in onion and crushed chili flakes, cook for about 4 minutes.
  • Add in garlic and cook for 2 minutes.
  • Add in extra lean ground beef; cook breaking up the meat with a spoon or fork until browned.
  • Add in tomato paste, wine, beef broth, salt and pepper; mix well, then cover and simmer over low heat for about 45-50 minutes, stirring occasionally.
  • Meanwhile while the meat sauce is cooking prepare the bechamel sauce; melt butter in a heavy saucepan over medium heat; stir in flour and cayenne pepper; cook stirring for about 2 minutes.
  • Add in cream and nutmeg; bring to a boil whisking/stirring constantly then cook for about 1 minute.
  • Cool for about 10 minutes before whisking in the egg.
  • Season with salt and black pepper.
  • Remove about 1/2 cup bechamel sauce and mix into to the already cooked ground beef mixture.
  • Preheat oven to 350 degrees F.
  • TO ASSEMBLE; spoon HALF of the ziti mixture into the bottom of the baking dish.
  • Top the ziti mixture with ALL of the meat sauce, then top with remaining ziti mixture.
  • Pour ALL the bechamel sauce over the ziti mixture then spread out with a spoon to cover.
  • Top with about 1 cup grated Parmesan cheese (can use more or less).
  • Bake for about 50-60 minutes or until golden brown.
  • Allow to rest for about 20 minutes before slicing.

This is a variation of the Greek meat, pasta and custard casserole. It relies on cumin rather than cinnamon to flavor the meat. The proportions of pasta, meat and custard are comparable to traditional pastitsio, as is the custard topping, but the meat sauce used in this version is completely mine.

Number Of Ingredients 21

1 lb lean but good quality ground beef
1/2 cup chopped onion
4 cloves garlic, minced
1 tablespoon cumin
2 tablespoons flour
4 sprigs fresh marjoram (or a little dry marjoram but fresh is better)
1 bay leaf
1/2 teaspoon finely ground black pepper
1 tablespoon sugar
2 tablespoons red wine vinegar
2 teaspoons beef base or 2 beef bouillon cubes
1 (14 1/2 ounce) can chopped tomatoes (don't substitute whole canned tomatoes, they don't have as much tomato in them, says Cook's)
8 ounces pastitsio or 8 ounces long other slender tubular pasta
1/4 cup flour
2 tablespoons unsalted butter (don't use salted butter if you can help it; unsalted has better flavor and it will show in this reci)
2 large eggs
2 cups milk
1/2 teaspoon nutmeg
1/2 teaspoon salt, to taste
1/2 teaspoon white pepper
3 tablespoons freshly and finely grated hard cheese, like romano or 3 tablespoons parmesan cheese (don't even think of using that canned stuff)

Steps:

  • Meat Base: Saute onion with ground beef, breaking meat up as you go, until meat is almost done.
  • Drain off any excess fat.
  • Add garlic, cumin and flour, stir together well, and saute a minute or two more.
  • Add remaining meat base ingredients and simmer gently, uncovered, for about 20 minutes, stirring occasionally.
  • Turn off heat and cover.
  • Pasta: Cook pasta until al dente in an ample quantity of salted water to which a bit of vegetable oil has been added (helps keep strands from sticking together).
  • Drain well.
  • Custard Topping: Melt butter in saucepan and mix in the flour.
  • Let it bubble a minute or two or until you can smell a slightly nutty flavor, but do not let it brown.
  • Gradually add most of the milk, whisking.
  • Let it cook about 10 minutes, stirring, until well thickened, then remove from heat.
  • Mix the nutmeg, salt and pepper into the grated cheese.
  • Add the eggs to the remaining milk in your measuring cup and whisk.
  • Whisk the egg and milk mixture into the sauce, then whisk the cheese mixture into the sauce also.
  • Assembly: Layer 1/2 of the pasta in the bottom of your baking pan.
  • Then add all of the meat sauce, removing the bay leaf and any stems from the marjoram.
  • Top with remaining pasta, then pour the custard sauce over all.
  • If everything is still hot when you assemble it, bake at 400 degrees Farenheit for about 35 minutes.
  • If merely warm, or if using a glass or ceramic pan instead of a metal one, bake for about 45 minutes at 350 degrees Farenheit.
  • Top should be slightly golden, edges slightly brown.

2 tablespoons butter, melted
1 cup grated Parmesan cheese
1-1/2 pounds ground sirloin
1 medium onion, chopped
2 garlic cloves, minced
1 can (15 ounces) tomato sauce
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup shredded Parmesan cheese, divided
BECHAMEL SAUCE:
1/2 cup butter, cubed
2/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups 2% milk
2 large eggs, beaten

Steps:

  • Cook pasta according to package directions; drain. Toss with butter; add grated Parmesan cheese. Transfer to a greased 13x9-in. baking dish., Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 8-10 minutes or until beef is no longer pink, breaking beef into crumbles; drain. Add garlic; cook 2 minutes longer. Stir in tomato sauce, salt and cinnamon; heat through. Spoon over pasta. Sprinkle with 1/2 cup shredded Parmesan cheese., In a large saucepan, melt butter. Stir in flour, salt and pepper until smooth; gradually add milk. Bring to a boil; cook and stir 1-2 minutes or until thickened., In a small bowl, whisk a small amount of hot mixture into eggs; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Pour over beef mixture. Sprinkle with remaining cheese., Bake, covered, 20 minutes. Bake, uncovered, 30-40 minutes longer or until golden brown.,

1 (16 ounce) packet penne pasta
1/2 lb halloumi cheese, shredded (Sub Mozarella if Haloumi is unavailable)
1 lb ground lamb (or beef)
2 tablespoons olive oil
1 medium onion, diced
2 large garlic cloves, minced
1 tablespoon fresh rosemary, minced (or 1 teaspoon dried)
1 tablespoon fresh oregano, minced (or 1 teaspoon dried)
1/4 teaspoon nutmeg
1/4 cup red wine
1 (15 ounce) can diced tomatoes
4 ounces halloumi cheese, crumbled
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
2 egg yolks, lightly beaten
4 ounces kefalotiri (parmegiano or Haloumi cheese, grated)
1/2 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Cook penne according to package directions. Drain, rinse with cold water to eliminate sticking, and set aside.
  • Lamb mixture:.
  • Heat olive oil in a large sauté pan over medium high heat. Brown lamb in two batches, seasoning with salt and pepper. Set lamb aside and pour off excess grease.
  • Reduce heat to medium and add onion. Cook until translucent, about 5minutes. Add garlic, rosemary, oregano, and nutmeg. Cook another minute. Add wine and deglaze pan.
  • Reduce wine to about 1 tablespoon. Stir in tomatoes, including liquid, and lamb. Season with additional salt and pepper. Simmer for about 15 minutes. Stir in Haloumi cheese and cook another 5 minutes.
  • Heat oven to 400°F.
  • Sauce:.
  • Heat milk in the microwave on high for 1 1/2 minutes. Melt butter in a sauce pan over low heat. Whisk in flour and cook, stirring constantly, for four minutes.
  • Slowly pour in hot milk, whisking steadily, and cook until thickened. Slowly whisk in egg yolks. Whisk in kefalotiri (Haloumi or parmegiano) cheese, cooking until melted and thick. Stir in salt and pepper.
  • Assemble:.
  • Toss pasta with shredded Haloumi or mozzarella cheese. Layer 3/4 of pasta in the bottom of 9 x 13 casserole dish. Layer meat mixture on top of pasta.
  • Distribute remaining pasta over meat. Pour sauce evenly over pasta. Place casserole in middle of oven and cook for 35 - 45 minutes or until top is a golden brown.
  • Serve with fresh crusty bread and a salad.

This pastitsio is guaranteed to remind me of holidays to Greece, it tastes so devine. Leftovers freeze well and should be defrosted before re-heating. I serve it with bread and a green salad. I use skimmed milk for the sauce, but any kind can be used.

175 g macaroni
500 g lean ground beef
1 medium onion, finely chopped
400 g chopped tomatoes
2 tablespoons tomato puree
1 1/2 teaspoons dried oregano
1/2 teaspoon ground allspice
1 garlic clove, minced
3/4 teaspoon salt
50 g butter
50 g plain flour
300 ml milk
175 g cheddar cheese, grated
150 ml natural yoghurt
1 medium egg, beaten

Steps:

  • Pre-heat the oven to 180c/350f/Gas mark 4.
  • Cook the macaroni as pack instructions until tender. Drain.
  • Meanwhile, fry the minced beef and onions until brown. Stir in the tomatoes, tomato puree, herbs and seasonings. Bring to the boil, cover and simmer for 15 minutes.
  • To prepare the topping, melt the butter in a pan, add the flour and cook for 1 minute, stirring. Blend in the milk and bring to the boil, still stirring. As soon as it thickens remove from the heat. Be careful not to burn it. Stir in 100g of the cheese, the yoghurt and the beaten egg.
  • Combine the macaroni and minced beef mixture and put into an ovenproof dish. Pour over the topping and sprinkle with the remaining cheese. Bake for 35-40 minutes until golden. Stand for 5-10 minutes before serving to allow the topping to firm up.

1 cup olive oil (can reduce to 3/4 cup)
1 extra large lemon, juice of (can use 2 lemons ( make certain that the lemon is at room temperature before squeezing)

3 teaspoons fresh minced garlic (about 2 medium cloves)
1 teaspoon dried basil
2 tablespoons red wine vinegar

1/2 teaspoon fresh ground black pepper (or to taste)
1 large romaine lettuce, chopped (or use 2 small)
2 -3 plum tomatoes, cut in wedges (use Roma tomatoes)
1 English cucumber (peeled, seeded and chopped)
1 red onion, cut in slices
1 green bell pepper (seeded and cut into rings or sliced) (optional)
1/2 lb feta cheese, crumbled (or to taste)
1 cup kalamata olive

Steps:

  • For the dressing; in a processor or use a wire whisk process/whisk the olive oil with lemon juice, 2 teaspoons dried oregano, garlic, dried, basil, red wine vinegar, salt and sugar until smooth (add in more oregano and lemon juice if needed).
  • Season with black pepper.
  • Chill in fridge for a couple of hours before using to blend flavors.
  • Place the salad ingredients in a large bowl.
  • Pour dressing over; toss to combine.
  • If desired allow the salad to sit at room temperature for 20 minutes before serving, or you can refrigerate for 1 hour (tossing a few time during sitting time).
