Beer Batter Fish Made Great image

This is a great beer batter fish recipe, and is very easy to do. We often fish all day with friends, and then cook the fish afterwards out on deck. Yummy and great!

2 quarts vegetable oil for frying
8 (4 ounce) fillets cod
salt and pepper to taste
1 cup all-purpose flour
2 tablespoons garlic powder
2 tablespoons paprika
2 teaspoons salt
2 teaspoons ground black pepper
1 egg, beaten
1 (12 fluid ounce) can or bottle beer

Steps:

  • Heat oil in a deep fryer to 365 degrees F (185 degrees C). Rinse fish, pat dry, and season with salt and pepper.
  • Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients. Gradually mix in beer until a thin batter is formed. You should be able to see the fish through the batter after it has been dipped.
  • Dip fish fillets into the batter, then drop one at a time into hot oil. Fry fish, turning once, until both sides are golden brown. Drain on paper towels, and serve warm.

A long time favorite I have used for over 25 years, plan ahead the batter needs to sit for one hour before using --- the amounts listed will be enough for 2 pounds of fish, you may double but make certain to prepare two separate recipes in two bowls, do not double into one bowl as the batter will not be as good --- you may wish to add in 1/2 teaspoon garlic powder and paprika to the flour mixture for extra flavor and for a little heat add in a pinch of cayenne pepper :)

1/2 cup flour
1/2 teaspoon salt (I use seasoned salt for this)
1 tablespoon melted butter
1 egg, beaten
1/2 cup beer (preferably dark beer)
1 egg white (stiffly beaten)
2 lbs fish

Steps:

  • Sift flour and salt, add butter and egg; add beer gradually, add beaten egg white, stirring only until smooth.
  • Let stand for 1 hour in a warm place.
  • In a deep fryer or heavy pot heat oil to 375 degrees.
  • Dip fish in batter then fry in hot oil until golden brown (fry the fish in batches).
  • Allow to drain on a heavy brown paper bag or on double paper towels.
  • ** It is best to use thinner pieces of fish if you intend to fry the whole piece or just cut into large chunks.

2 eggs
1/3 cup beer, more if needed
3/4 cup milk
2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 tablespoon cornstarch
salt, to taste
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 lb cod fish fillet
4 cups oil, for frying

Steps:

  • In a medium bowl, stir together flour, baking powder, baking soda, and cornstarch.
  • In a large bowl, beat together eggs and milk. Mix in beer. Stir in flour mixture. Season with salt, garlic powder and cayenne pepper.
  • In a deep fryer or a heavy saucepan, heat oil to 375°.
  • Coat fish in batter and submerge in hot oil. Fry until golden brown, about 4 to 5 minutes.

1/2 cup unsifted all-purpose flour
1/2 cup cornstarch
2 tablespoons cajun seasoning
1 tablespoon garlic powder
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon paprika
1/2 teaspoon white pepper
1/2 teaspoon ground red pepper
1/2 teaspoon dried oregano leaves, crushed
3/4 cup beer, room temperature
1 egg, lightly beaten
1 lb catfish fillet, cut into 3- to 4-inch wide strips
vegetable oil (for frying)

Steps:

  • In a medium bowl, combine flour, cornstarch, Cajun seasoning, garlic powder, salt, baking powder, paprika, peppers, and oregano.
  • Whisk in beer and egg until smooth. Add catfish. Cover and refrigerate for 1 to 2 hours.
  • In a deep skillet or large pan, pour vegetable oil to a 3-inch depth. Heat oil to medium-high heat on stovetop.
  • When oil is hot, lift fish strips with tongs to drain excess batter. Fry catfish in oil, several pieces at a time (being careful not to overcrowd), for approximately 3 minutes per batch, or until well browned on all sides.
  • Drain on paper towels.
  • Repeat with remaining catfish, keeping cooked fish warm until ready to serve.
