All-purpose flour, for dusting
1 pound pizza dough
1 cup leftover pasta sauce
1/2 cup cherry tomatoes, halved
1/4 cup dry-cured black or Kalamata olives, drained and pitted
1/2 cup leftover roasted chicken
1 cup mixed shredded cheese (such as Cheddar, provolone, Swiss)
6 slices prosciutto
Freshly cracked black pepper
1/4 cup grated Parmesan
Extra-virgin olive oil, for drizzling
1/2 cup arugula
Fresh basil, for garnish

Steps:

  • Preheat the oven to 500 degrees F.
  • Add a half-sheet tray or pizza stone to the oven to preheat for 30 minutes.
  • On a floured work surface, form the pizza dough into a circle using a rolling pin or stretching with your hands. Transfer the pizza dough on a floured pizza peel.
  • Spread the sauce evenly over the pizza, followed by the cherry tomatoes, olives, chicken, shredded cheese, prosciutto, pepper and Parmesan.
  • Place the pizza in the oven and cook until the edges are just golden to dark brown,
  • 10 to 12 minutes.
  • Remove the pizza and garnish with a drizzle of olive oil, the arugula and basil.

Rocco's Deep-Dish Pizza Dough, recipe follows
All-purpose flour, for dusting
2 tablespoons olive oil
10 ounces freshly grated low-moisture part-skim mozzarella
15 slices pepperoni
1/2 small red onion, chopped
1/2 large green bell pepper, chopped
5 white mushrooms, sliced
2 links sweet Italian sausage, casing removed
Rocco's Deep-Dish Pizza Sauce, recipe follows
1/4 cup grated Parmesan or Romano cheese, plus more for serving
Crushed red pepper flakes, for serving
Two 1/4-ounce packets active dry yeast (1 tablespoon plus 1 1/2 teaspoons)
2 tablespoons sugar
1 1/4 cups warm water (100 degrees F)
3 1/2 to 4 cups bread flour
1 1/2 teaspoons table salt
4 tablespoons neutral vegetable oil (canola or peanut), plus more for oiling the bowl
One 14-ounce can whole peeled tomatoes
One 14-ounce can tomato puree or whole peeled tomatoes blended smooth
2 tablespoons tomato paste
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried marjoram
1/2 teaspoon cracked black pepper
1/2 teaspoon salt
1/2 teaspoon sugar
1 tablespoon fresh basil, torn or chiffonade
2 cloves garlic, minced

Steps:

  • Preheat the oven to 450 degrees F.
  • Carefully turn out the pizza dough onto a floured countertop. Flatten into a disk without folding the edges, making sure the dough is round and all bubbles are pressed out. Roll to about 14 inches in diameter. Grease a 12-inch pizza pan with the olive oil, making sure to coat the sides. Carefully lift the dough into the pan.
  • Add the mozzarella to the dough, pressing it into the corners and flattening it out evenly. Follow with the pepperoni, red onions, green peppers and mushrooms. Finally, sprinkle with pieces of sausage no larger than a nickel. Spoon sauce onto the toppings, smoothing over until it is about 1/2-inch from the edge of the dough.
  • Finish the pizza with an even sprinkling of Parmesan, and pop it onto the center rack of oven. Start checking the pizza after 15 minutes. Bake until the dough is nicely browned and the cheese is toasty at the edges, 15 to 30 minutes.
  • Allow the pizza to cool slightly, then transfer to a plate or pan. Wait a few more minutes before cutting into 8 wedges. Serve with more grated cheese and crushed red pepper flakes.
  • Dissolve the yeast and sugar in the warm water and allow to proof for about 10 minutes.
  • Mix together the flour and salt in a large mixing bowl. Add the yeast mixture to the flour and stir until ingredients are roughly combined. Add the oil and mix together. If you're using a stand mixer, mix about 4 minutes until the dough ball starts to become smooth, adding a little flour if it isn't pulling away from the sides. If you're kneading by hand, turn the dough out onto a cutting board and knead until fairly smooth, adding flour if dough is overly sticky.
  • Form the dough into a ball and place it in a large bowl greased with a small amount of oil. Sprinkle the top with some flour and then cover with plastic wrap. Allow the dough to rise slowly in the refrigerator for 8 to 24 hours, or allow it to rise in a warm place for 1 to 2 hours. The cold-rise method yields a better product with a finer texture and flavor, but sometimes you just want to eat a pizza!
  • Drain the can of whole tomatoes in a colander set over a large bowl and crush them into teensy pieces with your hands. Throw the crushed tomatoes into a large bowl. (Reserve the tomato liquid for bloody Mary's, Spanish rice or tomato soup; either way, it's not going into this sauce!)
  • Add the tomato puree, tomato paste, olive oil, oregano, dried basil, marjoram, pepper, salt, sugar, fresh basil and garlic to the drained tomatoes and mix well. Allow the flavors to marry for at least 1 hour or refrigerate.

This bright, spicy pizza is part careful forethought and part last minute availability, hence the "Kitchen Sink" in the title! I used whatever I had on hand and was quite taken with recipe. The hot tomato sauce and spicy Italian sausage make it "puttanesca". I don't care for heavy sauce on my pie, but if you want to make yours more juicy, feel free to use the entire 7 oz. of the can. No need to adjust the spices.

1 premade pizza dough to make 10 - 12" round pizza
SAUCE
4 ounce(s) el pato tomato sauce mexican hot style
1 teaspoon(s) italian seasoning
1/4 teaspoon(s) garlic powder
1/4 teaspoon(s) onion powder
1/4 teaspoon(s) salt
1/4 teaspoon(s) ground black pepper
TOPPINGS
2 tablespoon(s) olive oil
6 ounce(s) sliced zucchini and/or yellow squash
1/4 cup(s) chopped red bell pepper
1/4 cup(s) chopped onion
1 clove(s) chopped garlic
8 ounce(s) shredded mozzarella cheese
1/4 cup(s) chopped olives
1/2 cup(s) spicy italian sausage

Steps:

  • Turn on the oven to 450F.
  • Toss or roll your dough out on a 10 - 12" pizza pan, making sure the ends go to the edge. I had actually made the dough about 3 weeks before, and brought it out of the freezer; however, there are stores where you can purchase the dough ready made and in a bag.
  • The sausage gets its own entry because I use the ground variety and put it on the pizza raw. I break it up into very small dabs so they'll cook. If you don't feel comfortable with that, go ahead and cook the sausage thoroughly in a small frying pan while the veggies are caramelizing.
  • Heat the oil in a medium sauce on high setting so it's nice and hot. Add the zucchini, bell pepper, and onion; reduce heat to medium-high. Stir the veggies frequently until they start to caramelize. Add the garlic and continue to cook for about a minute - don't let the garlic burn! When you're satisfied that the garlic is cooked through, remove the pan from the heat.
  • Make the sauce by combining El Pato Tomato Sauce Mexican Hot Style, Italian Seasoning, garlic powder, onion powder, salt, and pepper in a small bowl. It may feel thick, but that's okay.
  • Now comes the fun part! Spoon or brush the sauce on the dough, sprinkle the mozzarella cheese on top, add the cooked veggies, olives, sausage (raw or cooked) and Parmesan cheese to taste.
  • Pop that baby in the oven for 12 - 15 minutes. Try not to salivate while the delicious aroma wafts throughout your home and tickles your nose.
  • Bring it out when the cheese is bubbly and the crust that shows is a light golden brown. Enjoy!

  • Preheat your oven to 500 degrees F / 260 degrees C and set a baker’s half sheet to the side. If you are hand-stretching your dough: I like to rub a small amount of olive oil into my hands first; this allows me to shape the dough easier without it ripping accidentally from friction.
  • Press the dough down with the palm of your hand into a disk shape, then use your fingertips to gently press down on the dough disk, further flattening it.
  • To further extend the dough, I prefer to press one palm on top of one side of the dough and with the other hand lift the alternative side of the dough and gently work the dough outward, pulling very gently with the tips of my oiled fingers (like a very discrete “come hither” motion) to slowly stretch the dough out. Rotate slightly and repeat until the dough is shaped and stretched to your liking. If you find that the dough starts to snap back or is beginning to tear, allow the dough to relax for a minute or two before proceeding again. Transfer your stretched dough to a sheet of parchment paper.
  • If you are using a rolling pin: I prefer to place my dough between two sheets of parchment paper to avoid the dough sticking to my rolling pin, but if you prefer you can also sprinkle a bit of flour over the dough ball as well as wiping some over your rolling pin by hand to prevent sticking instead. Once the dough has been rolled to your preferred size and shape, peel the top layer of parchment paper off (if using). The bottom layer that the dough is resting on can be utilized for your baking sheet. If you find that the dough starts to snap back or is beginning to tear, allow the dough to relax for a minute or two before proceeding again. Shape your dough. If you prefer a classic pie-shape with a thicker crust compared to the center of your dough, I suggest hand-stretching your dough. If you prefer your pizza to be an even thickness, I suggest rolling your dough out with a rolling pin.
