Crock Pot Black Bean Chili image

Our healthy and delicious crock pot black bean chili is a hot vegetarian soup made with onions, garlic, bell peppers, and taco sauce.

2 tablespoons olive oil
2 large onions (diced)
3 cloves garlic (minced)
1 red bell pepper (chopped)
1 green bell pepper (chopped)
3 (14-ounce) cans diced tomatoes (undrained)
2 cups vegetable broth
2 teaspoons cumin
1 tablespoon chili powder
1/2 teaspoon crushed red pepper flakes
1 (10-ounce) package frozen corn
2 (15-ounce) cans black beans (drained and rinsed)
To Serve: sour cream, shredded cheese, chopped green onion, cilantro, limes

Steps:

  • Gather the ingredients.
  • In a heavy skillet, saute the onions in the olive oil until tender, stirring frequently, about 4 to 5 minutes. Add the garlic and cook 2 minutes longer. Add the cumin and cayenne pepper. Cook for two minutes longer to bloom the spices.
  • Combine the onion mixture with the bell peppers, tomatoes, broth, corn, black beans, and Picante or taco sauce into a 4 to 5-quart slow cooker.​
  • Cover and cook on low about 10 hours or until the vegetables are tender. You can thicken this chili if you'd like using a mixture of about 2 tablespoons cornstarch with 1/3 cup water. Add to the slow cooker, cover, and cook for 20 to 30 minutes or until thickened. If you have a newer, hotter cooking crock pot , cook the whole recipe on low for 6 to 7 hours.
  • Serve with optional garnishes of your choice, along with tortilla chips for dipping, if desired.

1 ½ pounds pork tenderloin, cut into 2 inch strips
1 small onion, coarsely chopped
1 small red bell pepper, coarsely chopped
3 (15 ounce) cans black beans
1 (16 ounce) jar salsa
½ cup chicken broth
1 teaspoon dried oregano
1 teaspoon ground cumin
2 teaspoons chili powder

Steps:

  • Combine pork tenderloin, onion, red pepper, black beans, salsa, chicken broth, oregano, cumin, and chili powder in a slow cooker. Set to Low and cook for 8 to 10 hours.
  • Break up pieces of cooked pork to thicken the chili before serving.

5 tablespoons Chili Mix (1/2 packet) by Mad Dash Mixes
1/2 cup water
1 pound ground beef prepared in advance
1 can diced tomatoes
1 can Black Beans, drained & rinsed can use Kidney Beans or Pinto Beans if you prefer
1 can pan spray to help keep the chili from sticking to the sides of the slow cooker. Use only what is needed to lightly coat the inside of the slow cooker

Steps:

  • Spray the inside of the slow cooker with pan spray. Add one can of diced tomatoes to the slow cooker.
  • Add 1 pound of browned ground beef to the diced tomatoes. Stir the ingredients together. If using already browned ground beef that has been frozen, thaw it out ahead of time.
  • Add 1/2 cup water and stir
  • Drain & Rinse 1 can of Black Beans and add to the slow cooker
  • Add 5 Tablespoons of the Chili Mix to the ingredients in the slow cooker
  • Mix all ingredients together in the slow cooker, plug in and turn to low.
  • cook on low for 4 to 5 hours.
  • Prepare bowls of assorted toppings for the Chili . Toppings can include shredded cheese, sour cream and corn chips. If your family likes black olives, they could be used also
  • serve in bowls and let everyone add toppings to their own bowl

This nourishing, smoky vegan chili is perfect for cold weeknights. Mix everything in the slow cooker before the chaos of the day begins, then just toss in some frozen corn a few minutes before you're ready to eat. As with any chili, toppings go far. Feel free to throw on what you have and what sounds good, like tortilla chips, cilantro or vegan cheese. The recipe calls for either coconut oil or vegetable oil. If you'd like a mild coconut flavor - which plays well with the orange juice in the chili - choose unrefined or virgin coconut oil. For a neutral flavor, choose refined coconut oil or any vegetable oil. Use one chipotle chile for a very mild chili, and four if you like yours very spicy. 3/4 cup orange juice
1/4 cup coconut oil or vegetable oil
1 to 4 chipotles from a can of chipotles in adobo, finely chopped, plus 3 tablespoons adobo sauce
2 packed tablespoons light brown sugar
Juice of 1 lime (about 1 1/2 tablespoons)
6 garlic cloves, smashed and roughly chopped
2 teaspoons ground cumin
2 teaspoons garlic powder
2 teaspoons onion powder
Kosher salt and black pepper
1 (10-ounce) bag frozen corn
Sliced avocado and red onion, for topping

Steps:

  • In a 6- to 8-quart slow cooker, combine the sweet potatoes, black beans, tomatoes, orange juice, oil, chipotles and adobo sauce, brown sugar, lime juice, garlic cloves, and dried spices. Stir in 2 teaspoons salt, a generous amount of pepper and 1 cup water. Cook on low until the sweet potatoes are tender, about 8 hours. The chili holds well on the warm setting.
  • Just before serving, stir in the corn and let it warm through, about 5 minutes. Taste and add more salt and pepper if necessary. Top with avocado and red onion.
