Grandma's Banana Nut Bread image

My grandma's recipe for banana nut bread - a classic banana bread recipe packed full of mashed bananas and chopped walnuts. A family favorite!

2 cups all-purpose flour
1½ teaspoons baking soda
Pinch salt
1 cup granulated sugar
½ cup vegetable oil
2 eggs
1 teaspoon vanilla extract
4 medium ripe bananas (mashed (about 1⅓ cups or 303 grams))
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 350 degrees F. Grease two 8x4-inch loaf pans; set aside.
  • In a medium bowl, whisk together the flour, baking soda and salt; set aside. In a large bowl, whisk together the sugar, oil, eggs, and vanilla extract. Add the bananas and stir gently to combine. Add the flour mixture and stir until completely blended. Using a rubber spatula, fold in the walnuts.
  • Divide the mixture into the two loaf pans. Bake for 35 to 45 minutes, or until a thin knife inserted into the center comes out clean. If the loaves begin to get too dark before they are done in the middle, cover with foil. Allow to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely. The bread can be stored, wrapped tightly in plastic wrap, at room temperature for up to 5 days. To freeze, wrap in plastic wrap then in aluminum foil and freezer for up to 3 months.

2 cups baking mix
1/4 cup margarine
3/4 cup sugar
2 eggs
3 medium bananas, very ripe, mashed
1/2 teaspoon vanilla
1/2 cup pecans or 1/2 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees. Add to large mixing bowl all of the ingredients. Blend into a smooth batter. Pour batter into a greased 9x5 inch loaf baking pan.
  • Bake 50 to 60 minutes, until a tootpick inserted into the center comes out clean.

  • In a medium bowl whisk together the flour, baking soda, ground cinnamon and salt. Using a stand or hand mixer on medium high beat the butter and sugar together until smooth and creamy. Turn the mixer to medium low and beat the eggs in one at a time until incorporated. Beat in the mashed bananas and vanilla extract.
  • Turn the mixer to low and add the flour mixture beating just until incorporated. Do not overmix the batter. Remove from the mixer and stir in the nuts just until combined.
  • Bake 55-60 minutes or until a toothpick inserted in the top comes out clean. Cool in pan for 5-10 minutes and then invert bread on to cooling rack. Cool completely before wrapping.

  • Preheat oven to 350ºF. Spray a 8 1/2 x 4 1/2-inch or 9×5 loaf pan with nonstick cooking spray or line with parchment paper. Using an electric mixer, combine butter and sugars. Add in mashed banana, eggs, and vanilla extract. Mix until combined. Sift in flour, baking soda, baking powder, cinnamon, and sea salt. Mix until incorporated, but don’t over mix.
  • Toss 3/4 cup of the chocolate chips with 1 tablespoon flour. Fold the chocolate chips into the batter.
  • Pour mixture into loaf pan. Top with extra 1/4 cup chocolate chips for presentation. After 35 minutes, I suggest lightly covering bread with foil, to avoid the top from getting too brown. Bake for a total of 55 to 60 minutes. Let cool in pan for at least 10 minutes. Use a butter knife to loosen around the edges and carefully remove the bread from the pan. Cool completely on a cooling rack before slicing. Enjoy!
