Bow Ties With Sausage, Tomato, and Cream image

A very easy pasta dish for busy evenings. I like it served with crusty bread (to dip in the sauce) and a tossed salad. I have even doubled the recipe and served it to guest on a casual evening.

1 (12 ounce) package bow tie pasta
1 tablespoon olive oil
1 lb polska kielbasa, sliced
1/2 teaspoon red pepper flakes
1/2 cup diced onion
3 garlic cloves, minced
1 (28 ounce) can italian-style plum tomatoes, coarsely chopped
1 1/2 cups heavy cream
1/2 teaspoon salt
3 tablespoons minced fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Heat oil in a large, deep skillet over medium heat.
  • Cook sausage and pepper flakes until sausage is heated and browning around the edges.
  • Stir in onion and garlic, and cook until onion is tender.
  • Stir in tomatoes, cream, and salt.
  • Simmer until mixture thickens, 8 to 10 minutes.
  • Stir cooked pasta into sauce, and heat through.
  • Sprinkle with parsley.

1 lb kielbasa, cut into 1/4-inch slices
1 (4 1/2 ounce) jar sliced mushrooms, drained
2 teaspoons minced garlic
2 tablespoons butter
1 tablespoon cornstarch
1 1/2 cups milk
1 1/2 cups snow peas
1 cup cheddar cheese, shredded

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute the sausage, mushrooms, and garlic in butter.
  • Combine cornstarch and milk until smooth. Gradually add to the skillet. Bring to a boil, cook and stir 2 minutes or until thickened. Drain pasta, add to the sausage mixture. Stir in the peas and the cheese, cook until the cheese is melted.

milk 1 1/2 cups
snow peas 1 1/2 cups frozen
cheddar cheese 1 cup shredded

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute the sausage, mushrooms and garlic in butter. 3 cups uncooked whole wheat bow tie pasta (about 8 ounces)
1 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces
1 package (19-1/2 ounces) Italian turkey sausage links, casings removed
1 medium onion, chopped
3 garlic cloves, minced
1/4 cup shredded Parmesan cheese
Additional shredded Parmesan cheese, optional

Steps:

  • In a 6-qt. stockpot, cook pasta according to package directions, adding asparagus during the last 2-3 minutes of cooking. Drain, reserving 1/2 cup pasta water; return pasta and asparagus to pot., Meanwhile, in a large skillet, cook sausage, onion and garlic over medium heat until no longer pink, 6-8 minutes, breaking sausage into large crumbles. Add to stockpot. Stir in 1/4 cup cheese and reserved pasta water as desired. Serve with additional cheese if desired.

½ teaspoon red pepper flakes

1 ½ cups heavy cream
½ teaspoon salt
3 tablespoons minced fresh parsley

Steps:

8 ounces uncooked bow tie pasta
1 pound smoked kielbasa or smoked Polish sausage, cut into 1/4-inch slices
