SOUTHWEST BARLEY & LENTIL SOUP

Number Of Ingredients 12

1 tablespoon olive oil
1 package (14 ounces) smoked kielbasa or Polish sausage, halved lengthwise and sliced
4 medium carrots, chopped
1 medium onion, chopped
2 garlic cloves, minced
3/4 teaspoon ground cumin
1 can (28 ounces) crushed tomatoes
1 package (16 ounces) dried brown lentils, rinsed
1 can (15 ounces) black beans, rinsed and drained
3/4 cup medium pearl barley
1/2 cup frozen corn
10 cups reduced-sodium chicken broth

Steps:

  • In a 6-qt. stockpot, heat oil over medium heat. Add kielbasa; cook and stir 6-8 minutes or until browned. Remove from pot with a slotted spoon., Add carrots and onion to same pot; cook and stir 6-8 minutes or until tender. Add garlic and cumin; cook 1 minute longer. Stir in kielbasa and remaining ingredients; bring to a boil. Reduce heat; simmer, covered, 35-45 minutes or until lentils and barley are tender, stirring occasionally.

1 pound kielbasa sausage, cut into 1 inch pieces
1 tablespoon butter
1 (14 ounce) can beef broth
1 (10.75 ounce) can tomato soup
1 ½ cups water
3 cups shredded cabbage
1 onion, chopped
½ cup diced green bell pepper
1 ½ teaspoons salt
½ teaspoon ground black pepper
¼ cup sour cream

Steps:

  • In a large saucepan over medium heat, cook sausage in butter until brown. Pour broth, tomato soup and water into pan with sausage. Stir in cabbage, onion and bell pepper and season with salt and pepper. Bring to a boil, then reduce heat and simmer 45 minutes, or until flavors are well blended. Stir in sour cream and heat through before serving.

1/2 pound smoked turkey kielbasa or Polish sausage, sliced
1 pound potatoes, peeled and cubed
2 cups shredded cabbage
1 large onion, chopped
1 can (14-1/2 ounces) reduced-sodium chicken broth
3/4 cup water, divided
2 tablespoons sugar
1 teaspoon caraway seeds
1/4 teaspoon pepper
1 can (16 ounces) kidney beans, rinsed and drained
3 tablespoons cider vinegar
2 tablespoons all-purpose flour

Steps:

  • In a large saucepan or nonstick skillet, brown sausage over medium heat. Add the potatoes, cabbage, onion, broth, 1/2 cup water, sugar, caraway seeds and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until potatoes are tender, stirring occasionally., Add beans and cider vinegar; cover and simmer 5-10 minutes longer. Combine flour and remaining water until smooth; stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened.

1 medium onion, chopped

2 cans (8 ounces each) tomato sauce
1 can (4 ounces) chopped green chilies
2 medium carrots, thinly sliced
1/2 medium green pepper, chopped
1/2 teaspoon Italian seasoning
1/2 teaspoon dried thyme
1/8 teaspoon pepper

Steps:

  • In a 12-in. skillet, cook bacon until crisp; remove to paper towel to drain. 1/2 lb mixed mushrooms, sliced sorta thick
1 medium onion, chopped
3 -4 garlic cloves, chopped fine
2 teaspoons dried oregano, crushed
2 teaspoons dried basil, crushed
6 1/2 cups fat free chicken broth
1 cup pearl barley
2 bay leaves
3 medium carrots, sliced
2 small zucchini, sliced
1/2 cup fat-free chicken broth
1 lb kielbasa, sliced (the kind you perfer)
1 dash garlic powder (this is optional)
1 dash onion powder (this is optional)
1 dash Old Bay Seasoning (this is optional)
1 teaspoon Smucker's No Sugar Added Orange Spread, boullion any flavor (this is optional)

Steps:

  • In a large pot wit cover, heat oil. Add 1/2 mushrooms, onion & garlic. Saute about 3-4 minutes stirring occasionally. Add oregano & basil saute 2 minutes.Stir in chicken broth, barley & bay leaves. Bring to a boil. Reduce heat cover & cook 25-30 minutes, Mix in carrots, zuccini,broth & mushrooms. Bring to a boil. 2 boneless skinless chicken breasts
1/2 cup raw barley
5 cups chicken stock (I use boullion cubes & water)
1 stalk celery, chopped
2 medium carrots, chopped
1 medium onion, chopped
1 clove garlic, minced
1 teaspoon dried basil
1/2 teaspoon dried thyme
2 teaspoons minced fresh parsley

Steps:

  • Toss all of the ingredients, except the parsley into a large stock pot.
  • Bring to a boil, cover loosely and reduce the heat to low.
  • Let the stew simmer for about 1 1/4 hours, stirring occasionally.
  • Use tongs to remove the chicken from the stew and slice it into bite-sized pieces.
  • Then return the chicken to the stew and continue to simmer for 15 min more.
  • Swirl the parsley into each bowl before serving.
