Steps:
- Combine onions and flour in a large resealable plastic bag; lightly crush with hands or rolling pin. Dip chicken in eggs. Add a few pieces at a time to the onion mixture; shake to coat. Place on a greased 15-in. x 10-in. x 1-in. baking pan., Bake, uncovered, at 400° for 15 minutes or until chicken juices run clear. Meanwhile, combine the sour cream, pepper sauce and dip mix. Serve chicken with dip and mustard.

KICKIN' CHIPOTLE FRIED CHICKEN TENDERS WITH COOL CUCUMBER SLAW
Steps:
- Pour chipotle peppers and adobo sauce into a blender. Add 2 cups buttermilk; cover and process until peppers are completely pureed.
- Place chicken in a large zip top plastic bag and pour buttermilk mixture and remaining buttermilk over chicken. Refrigerate for at least 3 hours or up to overnight.
- Combine the masa, panko, salt and pepper in a large zip top plastic bag. Drain chicken pieces; add to masa mixture, 1 at a time, and shake to coat. Shake off excess; place on waxed paper for 15 minutes before frying.
- Heat 4 inches of oil to 375 degrees F in a large cast iron skillet.
- Fry chicken for about 4 minutes on each side or until browned on all sides. Remove chicken from skillet and place on a paper towel lined platter. Once well drained, keep chicken warm on a wire rack over a baking sheet in a oven preheated to 300 degrees F.
- Serve chicken on a large platter with Cool Cucumber Slaw. Garnish with Cilantro and cucumber wedges.
- Stir together the cucumber and salt. Place in a colander over a mixing bowl. Refrigerate for 1 hour. Discard liquid and place cucumber in mixing bowl. Add yogurt, lime juice, mint, cilantro, carrot, scallion and sugar to the cucumber. Mix until well combined. Cover and refrigerate at least 3 hours, preferably overnight.

- Trim chicken breasts of any fat and cut each into 3 strips cutting lengthwise. Place into ziploc baggie and add hot sauce. Seal it tightly closed removing air, squish it around to coat all and place into fridge to marinate for several hours, overnight, or just simply use now.
- Preheat oven to 375 degrees. Place potatoes into shallow bowl. Line baking sheet with parchment paper. With tongs or by hand, remove strips letting any excess hot sauce drip away, one at a time, roll into potatoes to coat, and place onto prepared baking sheet. When all are nicely coated, patting on to coat well, pop into oven and bake until done, about 20-25 minutes depending on how thick your chicken strips are. Remove from oven, top with crumbled bacon and blue cheese and bake 1-3 minutes longer until blue cheese is just starting to melt.
- Can be served with extra hot sauce, celery sticks, and Ranch or Blue Cheese Salad Dressing for dipping if desired.

- Preheat oven to 450 degrees, coat 2 baking sheets with nonstick cooking spray.
- Place the hot sauce and french fried onions in their own shallow dishes, dip the chicken strips into the hot sauce, then into the french fried onions, coating evenly with each.
- Place the coated strips on the baking sheets and spray the tops with cooking spray, bake for 10-12 minutes, or until no pink remains in the chicken, serve immediately.
