This is a light and delicate mousse. This was served at my daughters wedding and there was none left! A nice addition for a brunch or shower luncheon.

Number Of Ingredients 8

1 (1/4 ounce) envelope unflavored gelatin
3/4 cup cold water
1 cup mayonnaise
2 cups cooked ham, finely diced
1/2 cup celery, finely chopped
1/4 cup green pepper, finely chopped
1 teaspoon onion, grated
1/2 cup whipping cream, whipped

Steps:

  • Combine gelatin and water in a saucepan.
  • Cook over low heat until gelatine dissolves.
  • Remove from heat.
  • Add mayonnaise beating well.
  • Chill until consistency of unbeaten egg white; don't let it chill to long.
  • Stir in next four ingredients (ham, celery, green pepper and onion).
  • Fold in whipped cream.
  • Pour into lightly oiled 4 cup mold or shape into 2 logs.
  • Chill until firm.
  • Serve with gourmet crackers or baguette.

Old Kentucky recipe for baking Country Ham taken from news paper. I have not tried baking one this way but looking forward to it as soon as possible. It's hard to do a country ham for just one or two people, so maybe try out when several people are coming over.

10 -12 lbs country ham
4 cups plain flour
1 cup dark brown sugar
2 tablespoons ground cinnamon
2 tablespoons ground cloves
2 tablespoons ground mustard
1 tablespoon black pepper
2 cups water

Steps:

  • Do not soak ham! First remove the hock, then skin and trim the ham to fit a large roasting pan. Scrub the exterior, leaving as much fat beneath the skin as possible. This helps remove the salt from an overly salty ham and imparts special flavor to the cured meat.
  • Heat oven to 350 degrees
  • To bake ham in a crust, assemble dry ingredients and enough of the 2 cups of water to make a soft, spreadable dough - like a soft biscuit. Place the ham in roaster on a rack, skin side up. Spread the dough over the skin side of the ham. Bake for about 3 hours uncovered.
  • When the time is up, remove the crust and discard. After ham cools, remove it to a cutting board for deboning. Many like their ham served cold, but I enjoy a warm ham with any meal.

1 lb baked ham, from the deli or 1 lb left over baked ham
3 tablespoons mayonnaise
1 tablespoon softened butter
1 teaspoon Dijon mustard
2 tablespoons dry port wine (I always omit the port wine) (optional)
1/2 teaspoon cayenne pepper, more to taste
fresh ground pepper

Steps:

  • Cut the ham in chunks, removing any rind or fat.
  • Put into the food processor, and pulse until it's the texture of hamburger.
  • Stir in everything else, and if possible, chill for at least a couple of hours before serving.
  • Bring back to room temperature again before serving so that the butter isn't hardened.

6 tablespoons butter, melted
3 cups oyster crackers
1 cup grated parmesan cheese
4 (8 ounce) packages cream cheese, room temp
7 large eggs
2 cups grated swiss cheese
1 cup cubed ham, 1/2 in cubes
1/3 cup chopped fresh chives
1 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Preheat oven to 300 degrees.
  • Brush 9 inch diameter springform pan with 1 tbls melted butter.
  • Finely grind crackers in processor.
  • Mix cracker crumbs, parmesan and 5 tbls melted butter in a med bowl to blend. Reserve 1/2 cup of crumb mixture for topping; press remaining onto bottom and sides of prepared pan.
  • Refrigerate while preparing filling.
  • Using an electric mixer, beat cream cheese and eggs in a large bowl until smooth.
  • Mix in remaining ingredients, pour filling onto crust.
  • Sprinkle with remaining crumbs.
  • Place cheesecake on a rimmed baking sheet. Bake until filling no longer moves in center when gently shaken, about 2 hours.
  • Cool 30 minutes.
  • Serve warm or at room temperature.
