TURKEY DINNER MUFFINS
"I love experimenting in the kitchen," relates Margaret Berardi of Bridgeport, Connecticut. "That's how I created these muffins that use up leftovers from a turkey dinner. Team them with a bowl of soup and some fresh fruit for a satisfying lunch," she suggests.

Steps:
- In a bowl, combine the flour, sugar, baking powder, salt and poultry seasoning. In another bowl, combine the egg, gravy and oil; mix well. Stir into dry ingredients just until combined. Fold in the turkey., Fill greased muffin cups two-thirds full. Top each with 1/2 teaspoon cranberry sauce. Bake at 400° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

- 2. Saute Onions Celery Carrots Garlic and Turkey till tender.
- 3. Mix Eggs and Chicken stock together.

- 5. Grease muffin tins and fill with mixture until just overflowing lightly packed.
- 6. Bake for 25 minutes or until crisp on top!

This is a delicious muffin recipe. My children LOVE the jam on top as an extra treat. My husband enjoys these muffins as well although he prefers to omit the jam for a nice slice of butter. They are also lovely to have for breakfast.

- Mix dry ingredients in bowl.
- Mix milk, egg and oil.
- Add all at once to dry ingredients. Stir quickly just until dry ingredients are moistened.
- Fill greased muffin tins 1/3 full. Place a drop of jam on top of each muffin.
- Bake at 400 for 12-15 minutes.

Steps:
- Heat oven to 400°F.
- In a large bowl, mix flour, baking powder, salt and sugar.
- In a small bowl, mix together egg, milk, garlic and onion.
- Make a well in the center of dry ingredients and pour in the egg mixture and melted butter.
- Mix together using as few strokes as possible.
- DO NOT OVER BEAT--the batter should have small lumps in it.
- Pour into 12 paper-lined muffins tins, filling about 2/3 full.
- Bake 20 minutes or until muffins begin to turn golden on top.
- Test for doneness with a toothpick which should come out clean.
- Remove from tins and cool slightly before serving.
