Sweet and Spicy Greek Meatballs (Keftedes me Saltsa Domata) image

Provided by Giada De Laurentiis

Time 29m

Yield 4 to 6 servings

Number Of Ingredients 17

1 pound ground lamb, or 20-percent fat ground beef
1 cup cooked and cooled couscous (see Cook's Note)
3 scallions, chopped
2 cloves garlic, chopped
1 egg, at room temperature, beaten
1/4 cup chopped fresh Italian parsley
2 tablespoons extra-virgin olive oil
3 tablespoons dried mint
1 1/2 tablespoons dried oregano
2 teaspoons kosher salt
1 1/2 teaspoons ground cumin
1 tablespoon ground cinnamon
1/2 teaspoon cayenne pepper
3 tablespoons extra-virgin olive oil
1 (25-ounce) jar marinara sauce
2 cinnamon sticks
1 tablespoon ground cinnamon

Steps:

  • For the meatballs: In a large bowl, mix together the lamb, couscous, scallions, garlic, egg, parsley, olive oil, mint, oregano, salt, cumin, cinnamon, and cayenne pepper. Form the mixture into 15 to 16 (2-inch diameter) meatballs.
  • For the sauce: Heat the oil in a large nonstick skillet over medium-high heat. Add the meatballs and cook until brown on all sides, about 6 minutes. Add the marinara sauce, cinnamon sticks, and ground cinnamon. Bring the sauce to a boil and reduce the heat to a simmer. Cook, turning occasionally, until the meatballs are cooked through, 10 to 12 minutes. Discard the cinnamon sticks. Transfer the meatballs and sauce to a large bowl and serve.

GREEK MEATBALLS IN AVGOLEMONO SAUCE (KEFTEDES ME AVGOLEMONO)

Greek Meatballs in Avgolemono Sauce (Keftedes Me Avgolemono) image

Looks yummy!! This recipe is especially popular in the Agrinion area (NW Greece). It uses a version of Avgolemono soup as a sauce for the meatballs or keftedes. I am leaving the metric measures so the recipe is exactly as I found it. The site does not state how many it serves or what the time is for prep, so I am guessing here. I am also assuming that minced beef is the same as ground beef in the U.S. From realgreekrecipes.blogspot.com. Posted for ZWT6.

KEFTAIDES ME SALTSA (MEATBALLS IN SAUCE)

Keftaides Me Saltsa (Meatballs in Sauce) image

I came across this recipe in the most serendipitous manner...on my way to work going 50mph I saw some trash blowing across the road...it got stuck to my car and I could hear it fluttering all the way to work. When I got out of my car I found a piece of newspaper stuck to my front grill. I took it off and what was it? A torn out page from a week old newspaper that has 4 yummy sounding recipes! Wow. I feel obligated to post them now.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 14

1 loaf white bread, trimmed of crusts and crumbled
2 lbs lean ground beef (can mix) or 2 lbs lean ground lamb (can mix)
3 tablespoons onions, chopped
1 tablespoon fresh parsley, chopped
1 tablespoon of fresh mint, chopped
2 eggs, lightly beaten
salt and pepper, to taste
flour, to coat
oil, for frying
1 1/2 lbs tomatoes, peeled and strained
1 cinnamon stick
1 teaspoon sugar
salt and pepper, to taste
1/2 cup white wine

Steps:

  • Wet the bread with cold water and squeeze out the excess; mix well with ground meat. Add the onion, parsley, mint, eggs, salt and pepper.
  • Shape into small 1-inch meatballs and flour lightly.
  • In a pan fry meatballs in oil until browned. Remove from pan with slotted spoon and keep warm.
  • Drain most of the excess oil and fat, reserving about 2 tablespoons (recipe says to use all of the oil but I think that would be too much). Add tomatoes, cinnamon, sugar, salt, pepper and wine and cook for 10 minutes.
  • Return meatballs to the pan and cook 3-5 minutes longer.
