SWEET AND SPICY GREEK MEATBALLS (KEFTEDES ME SALTSA DOMATA)

- For the meatballs: In a large bowl, mix together the lamb, couscous, scallions, garlic, egg, parsley, olive oil, mint, oregano, salt, cumin, cinnamon, and cayenne pepper. Form the mixture into 15 to 16 (2-inch diameter) meatballs.
- For the sauce: Heat the oil in a large nonstick skillet over medium-high heat. Add the meatballs and cook until brown on all sides, about 6 minutes. Add the marinara sauce, cinnamon sticks, and ground cinnamon. Bring the sauce to a boil and reduce the heat to a simmer. Cook, turning occasionally, until the meatballs are cooked through, 10 to 12 minutes. Discard the cinnamon sticks. Transfer the meatballs and sauce to a large bowl and serve.

- Put the ground beef in a large bowl and add the grated onion and bread. Mix thoroughly, being careful not to overmix. Add the eggs, mint, oregano, salt and pepper and mix thoroughly. Be careful not to overmix.
- Refrigerate the meatball mixture for 30 minutes. Form into golf ball-size meatballs, flatten and coat both sides lightly with flour. In batches, fry the meatballs over medium to medium-high heat in a large pan with the oil until golden brown and cooked through, 2-5 minutes per side.
GREEK MEATBALLS IN AVGOLEMONO SAUCE (KEFTEDES ME AVGOLEMONO)
Looks yummy!! This recipe is especially popular in the Agrinion area (NW Greece). It uses a version of Avgolemono soup as a sauce for the meatballs or keftedes. I am leaving the metric measures so the recipe is exactly as I found it. The site does not state how many it serves or what the time is for prep, so I am guessing here. - Meatballs:.
- Apart from the flour and the vegetable oil, mix all the other ingredients together well.
- Make medium-size balls from the mixture.
- Roll the balls in flour and then deep fry them for approximately 15 minutes.
- Sauce:.
- In a heavy-bottomed pan, heat the oil, then add the flour and stir well for 3 minutes.
- Add 1 litre water and mix well.
- Add the meatballs and simmer for 30 minutes, until the sauce is slightly thick.
- Beat the egg yolk thoroughly.
- Add the lemon juice to the egg and keep beating.
- Add 5-6 tablespoons of the sauce to the egg & lemon mixture and stir well.
- Add this mixture to the meatballs in the sauce, shake the pan and remove from the heat.
- Serve with a sprinkling of pepper and fresh mint on top.

I came across this recipe in the most serendipitous manner...on my way to work going 50mph I saw some trash blowing across the road...it got stuck to my car and I could hear it fluttering all the way to work. When I got out of my car I found a piece of newspaper stuck to my front grill. I took it off and what was it? A torn out page from a week old newspaper that has 4 yummy sounding recipes! Wow. I feel obligated to post them now.

- Wet the bread with cold water and squeeze out the excess; mix well with ground meat. Add the onion, parsley, mint, eggs, salt and pepper.
- Shape into small 1-inch meatballs and flour lightly.
- In a pan fry meatballs in oil until browned. Remove from pan with slotted spoon and keep warm.
- Drain most of the excess oil and fat, reserving about 2 tablespoons (recipe says to use all of the oil but I think that would be too much). Add tomatoes, cinnamon, sugar, salt, pepper and wine and cook for 10 minutes.
- Return meatballs to the pan and cook 3-5 minutes longer.
