SALMON KEFTA KEBABS

1 pound salmon belly or tail meat
2 tablespoons finely chopped cilantro leaves
2 teaspoons finely chopped fresh ginger
2 teaspoons finely chopped lemongrass
1 teaspoon finely chopped garlic
1/2 teaspoon salt
8 bamboo skewers, soaked in water for 30 minutes
Olive oil, for brushing
Plain yogurt or prepared yogurt dip, for serving

Steps:

  • Preheat grill to medium-low heat.
  • Chop the salmon meat by using a knife or a food processor, being careful not to pulverize the meat. Mix the salmon meat with cilantro, ginger, lemongrass, garlic and salt. Form little patties directly onto the skewers using your hands. Make sure the patties are firmly attached to the skewers before putting them onto the grill.
  • Brush the grill with olive oil. Grill the skewers until salmon is just cooked through, about 2 to 3 minutes per side. Remove the kebabs from the grill and serve immediately with plain yogurt or favorite yogurt dip.

1/2 English cucumber, seeded and finely diced
1 tablespoon fresh lemon juice
2 tablespoons fresh mint, chopped
2 cloves garlic, mashed into paste
Kosher salt and pepper
2 red bell peppers, halved and seeded
6 Fresno chile peppers
1 1/2 teaspoons kosher salt, plus more for salting water
1 teaspoon cumin seeds
1/2 teaspoon coriander seeds
1/4 teaspoon caraway seeds
1/2 teaspoon dried mint
1/4 cup vegetable oil
3 garlic cloves
3 lemons, juiced
1/4 tablespoon extra-virgin olive oil
1 cup sesame tahini
3/4 cup cold water
1/3 cup fresh lemon juice
1/2 teaspoon kosher salt
2 cloves garlic, crushed
1 1/2 pounds 80/20 finely ground beef, lamb or a mixture of the two
2 teaspoons ground allspice
1 teaspoon ground nutmeg
1 tablespoon kosher salt
1 teaspoon ground cinnamon
1 teaspoon fine black pepper
1/2 teaspoon ground ginger
2 cloves garlic, minced
1 finely chopped small yellow onion
1/2 bunch finely chopped fresh parsley
Pita bread
Butter, for pita
Serving suggestion: pickled turnips, fattoush salad

Steps:

  • For the tzatziki sauce: Strain Greek yogurt through a paper-towel lined colander and let sit for 3 hours to thicken, refrigerated.
  • Fold the yogurt with cucumbers, fresh lemon juice, mint, crushed garlic cloves, salt and pepper. Refrigerate until ready to use.
  • For the harissa sauce: Char red bell peppers over an open flame, then remove seeds and clean the skin.
  • Boil Fresno chiles in salted water in a pot on medium heat until the vegetables start to soften. Drain, then deseed and remove the membranes of the chiles.
  • Toast cumin seeds, coriander and caraway seeds in a skillet until fragrant. Crush the toasted spices in a spice grinder with mint and salt until finely ground.
  • Blend the spice mixture with the roasted red bell peppers, Fresno chiles, vegetable oil, garlic and lemon juice until smooth. Drizzle in olive oil while blending.
  • For the tahini sauce: Blend tahini, water, lemon juice, salt and garlic.
  • For the kebabs: Mix ground beef, allspice, nutmeg, salt, cinnamon, pepper, ginger, garlic, onion and parsley in a bowl by hand, then refrigerate overnight.
  • Form the mixture into 4 to 6 balls, then put each on a metal skewer. Lengthen the meat into elongated kebab shapes and grill over medium heat, 2 to 3 minutes per side.
  • Warm the pita with a little butter and swipe with the tzatziki sauce. Top with the kebab, then squirt with tahini sauce and harissa sauce.

These kebabs have 6 different kinds of spices; the first time I smelled them I knew immediately that I had to find the recipe. The most affordable way to purchase the spices is in bulk at either a health food store or an Asian or Middle-Eastern market. They are very good! Serve with yogurt, flat bread, lettuce, tomato and cucumber.

4 cloves garlic, minced
1 teaspoon kosher salt
1 pound ground lamb
3 tablespoons grated onion
3 tablespoons chopped fresh parsley
1 tablespoon ground coriander
1 teaspoon ground cumin
½ tablespoon ground cinnamon
½ teaspoon ground allspice
¼ teaspoon cayenne pepper
¼ teaspoon ground ginger
¼ teaspoon ground black pepper

Steps:

  • Mash the garlic into a paste with the salt using a mortar and pestle or the flat side of a chef's knife on your cutting board. Mix the garlic into the lamb along with the onion, parsley, coriander, cumin, cinnamon, allspice, cayenne pepper, ginger, and pepper in a mixing bowl until well blended. Form the mixture into 28 balls. Form each ball around the tip of a skewer, flattening into a 2 inch oval; repeat with the remaining skewers. Place the kebabs onto a baking sheet, cover, and refrigerate at least 30 minutes, or up to 12 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Cook the skewers on the preheated grill, turning occasionally, until the lamb has cooked to your desired degree of doneness, about 6 minutes for medium.

My Persian neighbor introduced me to kofta about 20 years ago. His were made of beef and I never actually got his recipe but I'm pretty good at replicating flavors and these came pretty close...and of course using turkey instead of beef makes these a lot lighter.

1 pound ground turkey
1 small onion, minced
2 cloves garlic, minced
¼ cup chopped fresh cilantro
1 egg
¼ teaspoon chopped green chile pepper
¼ teaspoon ground coriander
¼ teaspoon ground paprika
¼ teaspoon chili powder
salt to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Combine ground turkey, onion, garlic, cilantro, egg, chile pepper, coriander, paprika, chili powder, and salt together in a large bowl; mix thoroughly.
  • Divide turkey mixture into twelve 1/4-cup portions, roll into log-shaped ovals, and place on a baking sheet.
  • Grill ovals over indirect heat on middle rack, turning occasionally, until no longer pink in the center, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I'm excited to share what is one of my all-time favorite things to grill. This is perfect for those times when you want to take a break from grilling burgers, but you also kinda want a grilled burger, since this is basically a Mediterranean-style meatball on a stick. I know "shish" gets more love, but "kofta" might be the best kebab. Serve over a tomato, onion, and cucumber salad with flatbread or pita and a lemony tahini dressing.

1 slice whole grain bread, toasted
½ medium yellow onion, diced
⅓ cup chopped Italian parsley
4 cloves garlic, minced
8 ounces ground beef
4 ounces ground lamb
1 ¼ teaspoons kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon ground allspice
½ teaspoon paprika
¼ teaspoon ground cardamom
⅛ teaspoon ground nutmeg
¼ teaspoon cayenne pepper
2 tablespoons water
4 bamboo skewers, soaked for at least 1 hour

Steps:

  • Cut toasted bread slice into thin strips on a cutting board; cut strips across into a small dice.
  • Place onion, parsley, and garlic on top of diced bread on the cutting board; chop until mixture resembles tabbouleh.
  • Season beef and lamb with kosher salt, black pepper, allspice, paprika, cardamom, nutmeg, and cayenne. Add onion mixture and water. Mix and mash with your hands until well combined.
  • Wrap in plastic wrap and refrigerate until chilled, at least 1 hour, up to overnight.
  • Remove meat from the refrigerator and roll ¼ of the mixture into a ball using wet hands. Pierce in the middle with a bamboo skewer. Shape meat into a uniform log, about 6 inches long and 2 inches wide.
  • Meanwhile, preheat a charcoal grill until coals are very hot.
  • Place kebabs on the hot grill until browned and cooked through, about 12 minutes, turning every 3 minutes or so. An instant-read thermometer inserted into the center of a kebab should read at least 145 degrees F (63 degrees C). Serve.

Grilled with a nice charred flavor and exotic spice, these go great with a salad and a side of couscous. You can also cook these under the broiler as well as the grill.

2 lbs ground beef
1 onion, finely chopped
1/3 cup chopped fresh parsley
1/2 teaspoon mint
1/4 teaspoon marjoram
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground cumin
24 bamboo skewers or 24 metal skewers

Steps:

  • Mix together all ingredients until blended.
  • Chill for 45 minutes to 1 hour.
  • If using bamboo skewers, soak them for 35 minutes to an hour.
  • Oil your hands, and divide meat into 24 portions.
  • Take one portion and shape into an elongated patty like a torpedo and run a skewer through it.
  • Set on waxed paper until time to cook.
  • Repeat with remaining meat portions.
  • Grill for 6 minutes until cooked through.

1/4 teaspoon black pepper
1/3 cup olive oil
2 medium zucchini (1 1/4 lb total), cut crosswise into 1/2-inch-thick slices
For kefta (lamb meatballs)
2 slices firm white sandwich bread, torn into small pieces
1 small onion, finely chopped (about 1 cup)
1/4 cup loosely packed fresh parsley leaves
1/4 cup loosely packed fresh cilantro leaves
1 lb ground lamb (from shoulder)
1 teaspoon salt
1/2 teaspoon ground allspice

  • Make sauce:
  • Stir together yogurt, mint, garlic, and salt in a small bowl and chill.
  • Prepare zucchini:
  • Whisk together lemon juice, sugar, salt, pepper, and oil in a large bowl and stir in zucchini slices. Marinate at room temperature while making meatballs.
  • Make meatballs:
  • Cover bread with water in a bowl and soak 10 minutes. Squeeze handfuls of bread to remove as much excess water as possible, then transfer to a bowl.
  • Pulse onion and herbs in a food processor until finely chopped, then add to bread along with lamb, salt, spices, and pine nuts. Mix with your hands until well blended. Form lamb mixture into 36 balls (1 scant tablespoon each).
  • Assemble and grill kebabs:
  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas; see cooks' note below). Thread 6 meatballs 1/4 inch apart onto each of 6 skewers. Thread zucchini lengthwise onto remaining 6 skewers (5 slices per skewer), so cut sides are on the grill, leaving 1/4 inch between slices. Grill zucchini and lamb on oiled grill rack, turning over once, until golden and just cooked through, 4 to 6 minutes. Serve warm, with yogurt sauce.
