KEEMA (SPICED GROUND MEAT)



Keema (Spiced Ground Meat) image

Though elite, upper-caste Hindus tend to be vegetarian, most Indians eat meat, and many millions of Muslim Indians eat beef. This saucy keema, which can be made with chicken, lamb, beef or a combination of meat, is simple, comforting home cooking - the meat stretched out and made luxurious in a reduction of spiced tomato. It can be dinner with a couple of soft, shiny bread rolls, or a chapati and a dollop of yogurt. A friend of mine even mixes it with spaghetti and a moderate squirt of ketchup. (Don't judge!) The secret to this version is to take your time: Caramelize the onions properly for a strong foundation, and once you've added the beef, simmer it patiently until the sauce is dark and silky, and the fat has split away, risen to the top, and pooled in every nook.

1/4 cup neutral oil, such as grapeseed or canola
1 red onion, sliced
4 garlic cloves
1 (2-inch) piece fresh ginger, peeled
1 green finger chile (or serrano chile), stem removed
6 Roma tomatoes, quartered
1 pound ground beef (preferably at least 15 percent fat)
1/2 teaspoon chile powder, such as cayenne
Kosher salt
1/2 cup fresh cilantro leaves and tender stems
1/2 cup fresh mint leaves
1/2 teaspoon garam masala

Steps:

  • In a large, heavy skillet, heat the oil over medium. Add the onion and cook, stirring occasionally, until evenly browned and caramelized, 25 to 30 minutes.
  • Add the garlic, ginger and green chile to a food processor, and pulse until finely chopped. Add the tomatoes, caramelized onions and any oil from the skillet, and process again until finely chopped. Return the mixture to the skillet and bring to a simmer over medium-low heat.
  • Stir in the ground beef. Sprinkle with the chile powder and 1 teaspoon salt, and cook, stirring occasionally to break up any clumps of meat, until most of the liquid has evaporated and the fat has floated up to the surface, about 30 minutes.
  • Taste and adjust the salt, then stir in half the fresh herbs. Sprinkle with garam masala and remaining herbs and serve.

whole wheat flour, - 3 tablespoons
ginger-garlic paste, - 1 tablespoon
oil, - 1 tsp
garam masala powder, -1/2 teaspoon
red chili powder, - 1 teaspoon
turmeric, powder- 1/2 teaspoon
black pepper, -1/2 teaspoon
salt
fresh mint leaf, - 10 leaves
onion, finely chopped -1 small
green chili, paste- 1 tsp
dried mango powder, - 1/2 teaspoon
curds, dip-
curds, - 1/2 cup
mint, coriander chutney - 2 tsp

Steps:

  • Step 1.
  • Heat oil in a non-stick pan, add ginger-garlic paste, mutton minced , garam masala powder, red chilli powder, turmeric powder and black pepper powder and mix well. Add salt and mix well. Cook till the mutton is done.
  • Step 2.
  • Add mint leaves and mix well. Transfer into a bowl, mash lightly with the back of spoon, add onions, green chillies,and dried mango powder and mix well.
  • Step 3.
  • Knead a dough and roll.
  • Step 4.
  • Place a little of the stuffing in the centre. Gather the roti in the form of pleats; press and twist in the centre.
  • Step 5.
  • Slightly roll it and cook on a hot tawa until both the sides are evenly cooked.
  • Step 6.
  • Mix together curd and chutney and serve.

This is my version of keema curry a classic Pakistani or Indian dish.It's a combination of savory,spicy and sweet. Ultimatley a treat for the taste buds.

2 lbs ground beef or 2 lbs ground lamb
1 cup oil
1 medium onion (diced then blended)
1 small onion (chopped)
2 whole canned tomatoes
1 tablespoon tomato paste
2 tablespoons ginger-garlic paste
3 teaspoons lemon juice
3 tablespoons sugar
3 teaspoons turmeric
3 teaspoons ground cumin
3 teaspoons ground coriander
2 teaspoons paprika
2 teaspoons curry powder
2 teaspoons garam masala
1/4 teaspoon cumin seed
1/4 teaspoon fennel seed
1/4 teaspoon dried mint
2 teaspoons salt
2 teaspoons pepper
1 -3 chili pepper (optional)

Steps:

  • Fry up your sliced onion until golden brown then add your blended onions and cook until it dry & darker golden brown. Add ginger garlic paste.
  • Add your fennel seeds, turmeric, paprika, salt & pepper, red curry powder& cumin seeds. Cook 3 minute You can drizzle in a little more oil if needed.
  • Add tomatoes and lemon juice stir well keep simmering.
  • Add your red and green peppers/capsicums. Keep simmering till mixture is paste form.
  • Add your dried herbs ground cumin; ground coriander and sugar cook 2min, and then add meat.
  • Cook for 5-7 min (until meat is no longer red).
  • Add 1-2 cups of water simmer 20 minutes (until almost dry).
  • Keep simmering add your Garam Masala and cilantro with a 3 tbl of oil.

KEEMA CURRY & RAITA

1 onion , chopped
400g lean minced beef
340g frozen peas
handful fresh coriander , chopped
brown rice , to serve (optional)
1 green chilli , deseeded and chopped
2 garlic cloves , chopped
thumb-sized piece ginger , chopped
½ tsp turmeric
½ tsp ground coriander
1 tbsp korma curry powder
200g fat-free natural yogurt
100g cucumber , peeled, deseeded and diced
handful fresh mint chopped

Steps:

  • Whizz together the ingredients for the paste in a blender or food processor - add a splash of water if you need.
  • Cook the onion in a splash of water for about 5 mins until softened. Stir in the mince and cook for another 5 mins to brown. Add the paste, cook for 1 min, then pour in 100ml water. Bring to the boil and simmer for 10 mins. Add the peas then simmer for a further 5 mins.
  • Meanwhile, mix together the raita ingredients and season to taste. When the mince is cooked, season and stir through the fresh coriander. Serve with the raita and brown rice, if you like.

  • First thinly slice the two onions. Heat oil in a wok or large pot, and fry the onions (the 2 onions, we will use the other half onion later in the recipe) in oil until golden brown. Remove from the wok, and place on plate. Set aside. We will use these fried onions later in the recipe.
  • Now in the same wok, add the whole spices and cook for a few seconds. Then add the keema and cook on medium high flame until the water evaporates.
  • Now add the tomatoes, 1/2 thinly sliced raw onion (the one we set aside), spices and yogurt. Add water and cook for 5 to 10 mins on medium low flame until the oil separates.
  • Remove the lid, add the fried onions (which we fried in the first step), the green chillies, ginger and mix thoroughly. Cook on high flame for another 2 to 3 minutes while stirring, until the oil separates. Garnish with chopped coriander and serve.
