These are not you typical 'Jo Jo's'! These roasted potatoes are made with big wedges of Russet potatoes and given some Spanish pizazz with chili powder & coriander.

3 large russet potatoes (2 - 2 1/2 lbs.)
1 1/2 teaspoons salt
1 tablespoon chili powder
1 teaspoon ground coriander
1/4 teaspoon black pepper
2 tablespoons thinly sliced fresh chives
2 tablespoons olive oil
2 tablespoons sour cream

Steps:

  • Preheat oven to 475°F
  • Cut each potato (washed and unpeeled) in half lengthwise and then cut each half into 3 long wedges, making 6 wedges per potato.
  • In a small bowl mix together the salt, chili powder, coriander, pepper and chives. Set aside.
  • In a large bowl whisk together the olive oil and sour cream. Add potatoes to bowl and toss to coat well.
  • Sprinkle in the chili mixture and then toss again, coating potatoes evenly with spices. Place potatoes skin side down on a lightly sprayed baking sheet.
  • Bake in the preheated oven for about 25 minutes or until lightly browned.

1 -2 lb red potatoes, rinsed, skin on
3 -4 tablespoons butter, cubed
fresh chives, minced
salt and pepper

Steps:

  • Bring a 2 quart sauce pot half full of water to a boil.
  • While water is coming to a boil dice potatoes to 1/4 inch cubes.
  • Add cubed potatoes to boiling water and cook on a slow boil until just fork tender (still firm).
  • Drain in a colander and return potatoes to pot.
  • Add butter cubes and gently stir until butter has melted.
  • Stir in minced chives and season to taste with salt and pepper.

In 1978, this Texas style chili recipe recipe won a regional chili cookoff held in Reno Nevada. This is the same recipe that has won four world championships (over 100,000.00 in prize money) and numerous regional chili cookoffs.

5 lbs ground round or 5 lbs ground beef brisket (ask the butcher for "chili grind")
1/4 cup Wesson Oil or 1/4 cup rendered kidney suet
2 medium onions
5 teaspoons cumin seeds
8 tablespoons commercial chili powder (Make sure you get chili powder, not a chili mix or ground chili pepper!)
3 cloves garlic
2 tablespoons msg (optional)
5 -15 chili pods, depending on heat level desired (if pods are not available, use cayenne pepper to taste)
1 teaspoon dried oregano leaves

Steps:

  • Remove stems, membrane and seeds from chili pods, cover with water and simmer for 30 minutes.
  • Remove pods and blend into paste.
  • Reserve the chili water.
  • Chop onions.
  • Crack cumin with rolling pin or grind with mortar and pestle.
  • Brew 1 teaspoon oregano leaves in 1 cup of water.
  • Brown meat in several batches, add black pepper while browning.
  • Brown onions with meat then remove with slotted spoon and reserve.
  • Combine browned meat and onion with the following: cumin, 8 heaping tablespoons of commercial chili powder, 3 cloves garlic (pressed) and MSG.
  • Cook ten minutes, using just enough pepper water to keep from burning.
  • Stir constantly.
  • This cooks the spices into the meat.
  • Add chili paste and half of oregano water.
  • Cook slowly, adding pepper water as necessary to prevent scorching.
  • Add additional oregano to taste, salt to taste.
  • The meat should be tender in around 1-1/2 hours.
  • Cooking Variations:.
  • Add 1 to 2 cans 8 ounce cans of tomato sauce.
  • Hand cut meat to about the size of a navy bean.
  • (A lot of contestants now use half chili grind and half hand cut).
  • Add 2 tablespoons of vinegar 10 minutes before serving.
  • Use white pepper instead of black pepper.
  • Use masa/corn flour (not cornstarch) to thicken (mix flour with cold water and whisk until smooth, then pour into hot chili while stirring constantly until thickened).

REAL JO JO POTATOES

When I want Jo Jo's....I don't want a baked version....I am looking for the diet wrecking kind. Sometimes I do these in wedges...sometimes I slice them in rounds. We often serve these when we are making fried chicken in our turkey fryer and all diet bets are off. We have to do this at least once a year for a deck party and everyone loves it!

1/2 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon lemon pepper
1/4 teaspoon celery salt
1/2 teaspoon onion powder
1/2 teaspoon seasoning salt
4 potatoes, srubbed, unpeeled and cut into 1/2 inch thick wedges
1 egg, beaten
vegetable oil (for frying)

Steps:

  • Heat oil in a deep fryer or pan to 375 degrees F (190 degrees C). If making in a pan, make sure the oil is at least 2 inches deep.
  • In a pie plate, mix flour, garlic powder, lemon pepper, celery salt, onion powder and seasoning salt. (Sometimes I do this in a ziploc bag.).
  • Dip potato wedges in egg, then dredge in flour/seasoning mixture.
  • Place potatoes gently in hot oil, and fry until golden brown (about 5 to 7 minutes).
  • In order to maintain the oil temperature it is best to cook them in smaller batches. This of course depends on your method of cooking and the size of your fryer.
  • Drain on paper towels. Serve hot.

2 onions, chopped
3 garlic cloves, minced
1 lb ground beef
3/4 lb beef sirloin, cubed
1 (14 1/2 ounce) can diced tomatoes with juice
1 (12 ounce) bottle dark beer
1 cup strong brewed coffee
2 (6 ounce) cans tomato paste
1 (14 ounce) can beef broth
2 tablespoons brown sugar
3 1/2 tablespoons chili powder
1 tablespoon cumin seed
1 tablespoon unsweetened cocoa powder
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
1 teaspoon ground coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans
4 fresh hot chili peppers, seeded and chopped

Steps:

  • Heat oil in a large saucepan over medium heat. Cook onions, garlic, ground beef and cubed sirloin in oil for 10 minutes, or until the meat is well browned and the onions are tender.
  • Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt.
  • Stir in 2 cans of the beans and hot chile peppers. Reduce heat to low, and simmer for 1-1/2 hours.
  • Stir in the 2 remaining cans of beans, and simmer for another 30 minutes.

3 medium potatoes, Soaked and Peeled
2 medium onions, Finely Chopped
1 teaspoon ginger paste
2 teaspoons garlic paste
2 teaspoons soya sauce
2 teaspoons vinegar
1 teaspoon red chili powder
1/2 teaspoon chili sauce
2 tablespoons tomato sauce
1 tablespoon honey
3 tablespoons cornflour
1/2 teaspoon red chili pepper flakes
oil (for frying)
water, as required
salt
sesame seeds (for Garnishing)
green onion (for Garnishing)

Steps:

  • Cut the potatoes in finger shape wedges.
  • Take a bowl add corn flour, salt, few drop water and make a smooth batter. Keep aside for few minutes.
  • Heat oil in a pan. Dip the potatoes in to the batter and fry till the turns in to golden. Drain fried potatoes on absorbent paper.
  • In the same fry pan put 2-3 tablespoon oil. Add onion, ginger-garlic paste and saute till the onion become soft. Then add soya sauce, vinegar, red chili powder, chili sauce, tomato sauce and honey. Mix well. Cook for a minute.
  • Add fried potatoes in mixture and cook over the lower flame. Remove from heat.
  • Sprinkle with red chili flakes and garnish with sesame seed and green onion serve hot.

2 pounds red potatoes, cut into 1-inch cubes
2 tablespoons olive oil
2 teaspoons minced chives
3/4 teaspoon salt, divided
2 medium onions, halved and thinly sliced
1 pound sliced fresh mushrooms
1/4 cup butter, cubed
1 garlic clove, minced
1 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
1/3 cup dry red wine or beef broth
2 cups cubed cooked roast beef
1 cup beef gravy

Steps:

  • Place potatoes in a greased 15x10x1-in. baking pan. Drizzle with oil and sprinkle with chives and 1/4 teaspoon salt; toss to coat. Bake, uncovered, at 425° until tender, 25-30 minutes, stirring occasionally., Meanwhile, in a large skillet, saute onions and mushrooms in butter until tender. Add the garlic, rosemary, pepper and remaining 1/2 tsp. salt; cook 1 minute longer. Stir in wine. Add beef and gravy; heat through. Serve with potatoes.
