I have ben working on a pamphlet of low cost recipes for our church pantry to give away. When I found this depression era recipe I was curious and so I tried it out. Its very interesting. 1 qt canned tomatoes
3/4 c smooth peanut butter
1/2 tsp paprika
salt and pepper to taste
2 Tbsp butter or margarine
pinch of dried red pepper flakes, optional
1-2 c milk, optional

Steps:

  • 1. Combine tomatoes, peanut butter, paprika, salt, and pepper in a saucepan. Bring almost to a boil. Reduce heat and simmer for 10-15 minutes. Add butter and pepper flakes if used. Allow to sit for about 10 minutes to blend flavors. Serve with a spoon of sour cream, if desired.
  • 2. If you prefer a creamier tomato soup you may add 1-2 cups milk to extend soup and make it creamier.

1 tablespoon extra-virgin olive oil, plus more for drizzling
1 small onion, finely chopped
1 green bell pepper, finely chopped
1 stalk celery, finely chopped, plus leaves for topping
1 clove garlic, finely chopped
1/2 teaspoon Madras-style curry powder
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
Kosher salt
1 15-ounce can crushed tomatoes
4 cups low-sodium chicken broth
1 teaspoon packed light brown sugar
1/3 cup smooth peanut butter
Freshly ground black pepper
Creme fraiche, fresh cilantro and chopped peanuts, for topping

Steps:

  • Heat the olive oil in a pot over medium-high heat. Add the onion, bell pepper and celery; cook, stirring, about 5 minutes. Add the garlic, curry powder, paprika, cayenne and 1 teaspoon salt; cook, stirring, 2 more minutes.
  • Add the tomatoes, chicken broth, brown sugar and 1 cup water to the pot, then whisk in the peanut butter until incorporated. Bring to a boil, then reduce the heat and simmer gently, stirring occasionally, until the soup thickens slightly, about 30 minutes. Puree with an immersion blender or in a regular blender in batches.Season with salt and black pepper.
  • Ladle the soup into bowls; top with creme fraiche, celery leaves, cilantro and peanuts. Drizzle with olive oil. Photograph by Con Poulos

Giving credit where credit is due: "From Grandma's Kitchen by Marilyn Brass & Sheila Brass. This soup is good served hot or cold. The peanut butter adds richness to the soup, yet it is not readily identifiable upon tasting. This soup takes on a whole new personality when served cold.

28 ounce(s) tomato puree, canned
1/2 cup(s) peanut butter, creamy
1 teaspoon(s) salt
1/2 teaspoon(s) black pepper, coarsely ground
1/2 teaspoon(s) paprika
1 cup(s) vegetable broth
2 tablespoon(s) butter, room temperature
1 pinch(es) red pepper flakes

Steps:

  • Combine tomato puree and peanut butter in a large heavy-bottomed pot and blend with a wooden spoon or whisk until smooth.
  • Add salt, pepper, paprika and broth. Stir to blend. Bring to a boil. Reduce heat and simmer 10 minutes.
  • Add butter and red pepper flakes and stir to blend.
  • Remove from heat and allow to sit 5 minutes to marry flavors. Serve hot with croutons.
  • Serve cold with a touch of sour cream and a sprinkling of red pepper flakes.

After enjoying a spicy peanut soup at a little cafe, I knew I had to try to duplicate it at home. I think my version comes pretty close. It's the best way I know to chase away winter's chill. -Lisa Meredith, Eagan, Minnesota

Number Of Ingredients 13

2 medium carrots, chopped
1 small onion, chopped
2 tablespoons olive oil
2 garlic cloves, minced
1 large sweet potato, peeled and cubed
1/2 cup chunky peanut butter
2 tablespoons red curry paste
2 cans (14-1/2 ounces each) vegetable broth
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
1 bay leaf
1 fresh thyme sprig
1/2 teaspoon pepper
1/2 cup unsalted peanuts

Steps:

  • In a large saucepan, cook carrots and onion in oil over medium heat for 2 minutes. Add garlic; cook 1 minute longer., Stir in sweet potato; cook 2 minutes longer. Stir in peanut butter and curry paste until blended. Add the broth, tomatoes, bay leaf, thyme and pepper., Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until sweet potatoes and carrots are tender. (Soup will appear curdled.) Discard bay leaf and thyme sprig. Stir soup until blended., Sprinkle with peanuts.

- 3/4 cup creamy peanut butter
- 1 tsp. salt
- 1/2 tsp. coarsely ground black pepper
- 1/2 tsp.paprika
- 1 cup low sodium beef stock
- 2 tbsp. butter, softened to room temperature
- pinch red pepper flakes

Steps:

  • Mix tomato puree and peanut butter in large pot and blend with a wooden spoon or whisk til smooth. Add salt, black pepper and paprika. Add stock and bring to boil. Reduce heat and simmer 10 minutes. Add butter. add red pepper flakes and stir to blend. Allow to sit 5 minutes to marry flavors. Serve hot or cold. This is my favorite recipe adapted from the Pioneer Woman. A decadent lunch! I tweaked it a little from her original: I reduced the sodium and fat by reducing the chicken base and butter, and changing the heavy cream to half-n-half. And I thought way more fresh basil was needed to make it taste spectacular.

5 tablespoons melted butter
1 medium onion, diced
1 (46 ounce) can tomato juice
2 (14 ounce) cans diced tomatoes
1 tablespoon chicken base or 1 tablespoon chicken bouillon
3 tablespoons sugar
1 cup cooking sherry
1 1/2 cups half-and-half or 1 1/2 cups heavy cream
1/2 cup chopped fresh basil
2 teaspoons dried parsley flakes
pepper
crouton (optional)

Steps:

  • In a soup pot, saute diced onion in butter until translucent.
  • Decide how chunky you like your tomato soup. I like to process one of the cans of tomatoes briefly in the food processor to chop up the tomatoes more finely. You can process one or both or neither.
  • To the pot, add canned tomatoes, tomato juice, sugar, chicken base or bouillon, and pepper and stir.
  • Bring to a near boil, then turn off heat.
  • Add sherry and half-n-half or cream and stir.
  • Add parsley and basil. (or, you can save the basil to sprinkle on top of each bowl of soup). Add salt & pepper if needed to your taste.
  • Top with croutons if desired.
