Karask image

A very old Estonian dessert recipe that was made for special occasions in days past. This makes a cake-like barley bread. Posted for ZWT4.

Number Of Ingredients 14

1 pint sour cream
1 egg
1/2 teaspoon salt
3 tablespoons sugar
1/4 cup butter, melted
1/2 cup whole wheat flour
1 cup barley flour
1/2 teaspoon baking soda
2/3 cup carrot (grated finely)
2 tablespoons butter, for sauteing
1 cup plain yogurt
3 tablespoons sugar
1/3 cup cranberries
2/3 cup whipping cream

Steps:

  • Saute grated carrot in butter over medium high heat 2-3 minutes ; let cool.
  • Mix soda and flours.
  • Beat eggs, add sour cream, sugar, salt.
  • Add the flour mixture; mix well.
  • Add melted butter and carrots and mix very well.
  • Pour mixture into baking dish
  • Bake at 350F for 35-40 minutes.
  • Serve hot with cranberry cream sauce (see below).
  • Cranberry cream-sauce for serving:
  • Mix Sugar and yogurt, till Sugar is disolved.
  • Whip the cream till soft and mix in the yogurt.
  • Mash the cranberries and add to the mixture.
