1 boneless pork shoulder roast (5 to 6 pounds)
1 tablespoon liquid smoke
4 teaspoons sea salt (preferably Hawaiian Alaea Sea Salt)
Hot cooked rice, optional

Steps:

  • Pierce pork with a fork; rub with liquid smoke and salt. Place pork in a 6-qt. slow cooker. Cook, covered, on low until pork is tender, 8-10 hours. , Remove roast; shred with 2 forks. Strain cooking juices; skim fat. Return pork to slow cooker. Stir in enough cooking juices to moisten; heat through. If desired, serve with rice. Freeze option: Freeze cooled meat mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

2 cups water
1 teaspoon liquid smoke flavoring
¼ cup Hawaiian sea salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place pork fat-side up in a roasting pan or deep casserole dish. Combine water and liquid smoke; pour over meat. Sprinkle with salt. Cover and roast in a preheated oven for three hours. Remove from pan and shred.

1 large banana leaf
6 lbs boneless pork shoulder, cut across grain into 6 pieces
2 1/2 tablespoons coarse salt
2 1/2 tablespoons liquid smoke

Steps:

  • Preheat oven to 500°F.
  • Lay 2 sheets of foil (each about 1 foot long) on a work surface with long sides overlapping by about 4 inches.
  • Cut 2 (12-inch) lengths from banana leaf and center 1 on foil.
  • Put pork on banana leaf and sprinkle with salt and liquid smoke.
  • Cover top of pork with other 12-inch length of banana leaf and 2 overlapping sheets of foil (each about 1 1/2 feet long).
  • Crimp edges of foil tightly to form a packet and put in a large roasting pan.
  • Add 1 inch of water and cover pan tightly with more foil.
  • Bake pork in middle of oven 4 hours.
  • Pour off liquid from pan and, when pork is just cool enough to handle, shred with 2 forks in a bowl.
  • Serve warm.

Shovels, as needed
15 cubic feet Lava river rocks (lava rocks are porous) to be pre-heated
1/2 cord wood
6 to 8 sheet metal panels measuring approximately 4 feet square (these will retain the heat without being consumed by the fire)
Metal fire tongs to move rocks, panels, wood
Fire mitts to protect your hands from the heat
Safety goggles and protective gear for your body
A large bunch of ti leaves bound together to be used as a "brush" to remove ash from the rocks
A stretcher constructed with 2 (8-foot by 2- by 6-inch) pieces lumber for the wood handles, connected by 2 (2- by 6-inch by 3- to 4- feet) pieces wood, and an affixed support platform of plywood (3/4-inch by 4-feet by 3- to 4-feet)
15 feet of 4 foot high heavy gauge chicken wire temporarily affixed to the platform part of the stretcher to hold the pig closed after adding the rocks to the carcass
14 gauge wire as needed to secure the chicken wire
Wire cutters
1 entire head-on pig carcass, innards removed
Banana "stumps" to place between the pig meat and the hot coals to prevent the flesh from burning
Another large bunch of ti leaves, hard stalks snapped out, to be used like aluminum foil to steam the pig

Steps:

  • Dig a pit in the sand 2 feet deep and 6 feet in diameter. Add the river rocks and cover with enough of the wood to get the fire underway to heat the rocks. (You will add the additional wood as needed.) Start the fire (to heat the rocks to 800 degrees F). Add the metal panels on top of the fire to contain heat without smothering the fire.
  • Using assistance place the gutted pig in the supine position on the stretcher-like platform and wrap the affixed chicken wire around to mostly secure the pig, but leaving enough room to be able to put the heated lava rocks inside the body cavity.
  • Place some banana "stumps" in the body cavity of the pig to serve as a buffer between the hot coals and the pig meat to prevent the flesh from burning.
  • Protecting your face, hands, and body with proper gear and using safe equipment, remove enough of the metal panels from the fire to retrieve the heated rocks with fire safe tongs. Someone will use heavy fire mitts to hold the rocks in a pair of tongs, while the other person uses the ti leaves "brush" to dust off the ash. The rocks with the ash removed are then placed one-by-one in the cavity of the pig so it will cook from the inside out with dry heat. Place some additional banana "stumps" in the body cavity of the pig to serve as a buffer between the hot coals and the pig meat to prevent the flesh from burning. The carcass of the pig is then closed with chicken wire and additional metal wire as needed to secure the chicken wire. Remove the attachments that have been holding the chicken wire to the stretcher. Transfer the pig to sit atop the metal panels of the imu, and use the additional ti leaves like aluminum foil, placing them dull side up, shiny side down in a cross configuration to steam the exterior of the pig with the moisture from the ti leaves.
  • When the pig is cooked through, approximately eight hours, use assistance to remove it from the fire, let rest for 30 minutes, then carve it down. The cheeks of the pig should be reserved for the most honored guest.

1 ounce green beans
1 ounce celery
4 ounces cooked Kahlua pig, or roast pork
Salt and pepper
1 egg
1 tablespoon water
1 ounce bean sprouts
4 pieces lumpia wrapper
Pineapple Salsa, recipe follows
2 tablespoons diced ripe but firm papaya
1 Maui onion, diced
1 piece Hawaiian chile pepper, minced, or 1/4 teaspoon red chili flakes
4 mint leaves, chopped
1 teaspoon minced cilantro leaves
1 Maui pineapple, peeled, cored and small diced
1 tablespoon sweet Thai chile sauce
1 tablespoon sweet thick soy sauce
3 green onions, minced
2 tablespoons pineapple wine
1 tablespoon plum sauce
Pinch black pepper

Steps:

  • Julienne the carrots, green beans, and celery. Shred the Kahlua pig and season it with salt and pepper. Whisk together the egg and water to make the egg wash.
  • Wrap all ingredients, including bean sprouts, in lumpia wrappers, using egg wash to seal. Preheat a deep fryer or a heavy pot halfway filled with oil to 360 degrees F. Deep-fry the rolls until golden brown on all sides. Remove to a paper towel lined plate to drain.
  • Cut each roll in half on a slant. Serve with Pineapple Salsa.
  • Mix all ingredients together in a bowl. Serve with Kahlua Spring Rolls.

1 6- or 7-pound picnic ham or pork butt, trimmed of skin but not fat
1 tablespoon smoked paprika
2 tablespoons kosher salt
1 bunch collard greens, washed and trimmed of stems but with ribs intact

Steps:

  • Heat oven to 500 degrees. With a sharp knife, score pork on all sides. Mix paprika and salt together, and rub seasoning evenly over pork.
  • Wrap shoulder as completely as possible with large collard leaves and secure with butchers' twine. Place roast in center of a large sheet of tinfoil, and gather foil up and around roast. Put an additional sheet or two of foil over roast as necessary, so it is completely wrapped.
  • Place pork shoulder on a rack in a roasting pan measuring 9 by 13 inches, and pour an inch of water into pan. Transfer pork to oven, and cook for half an hour. Reduce temperature to 450 degrees, and cook for 4 hours, adding more water every half-hour if necessary.
  • Remove pork from oven, and let rest 10 minutes. Transfer to a pan or a large platter with sides steep enough to collect juices. Unwrap tinfoil, and remove wrapping of cooked greens. With your fingers, pull pork off and shred it. Serve with a bowl of cooking liquid and poi, for dipping.

Our pastor's wife, while we were stationed in Hawaii, gave me this recipe. It taste just like the imu pit roast pork, like they serve at luaus. It's really easy to prepare too. I get tons of compliments and requests for the recipe every time I make it. It is really suppose to say 1 handful of rock salt, but the system won't take that as a measurement. I usually halve the recipe, so I'm not real sure how many servings this makes. I know it makes LOTS. Also - not sure what the size of the bottle is for liquid smoke, but it's small and I believe it is the only size you can buy at a regular grocery store. This can be frozen and tastes just as good, even a month later!

2 pork butt or 2 pork shoulder, roasts
1/4 cup rock salt
1 (3 ounce) bottle liquid smoke
garlic, minced

onion, sliced into rings

  • Cut deep slices in pork, make criss cross pattern.
  • take handful hawaiian rock salt and rub it into the meat, making sure to get into the slices.
  • drizzle one bottle of liquid smoke over pork, making sure it gets into cracks.
  • sprinkle garlic and pepper over top of pork.
  • lay onion rings on top.
  • slice bananas into halves or thirds and lay on top of pork and in cracks.
  • put a little water on bottom of pan.
  • cover tightly with foil and slow bake over night at 250 to 300 degrees.
  • when done, remove onions and bananas and shred meat.

  • Using a sharp paring knife, carefully cut a few deep slits into each piece of pork shoulder, then insert sliced garlic into each pocket.
  • Add the olive oil to a large, heavy-bottomed pot with a lid over medium-high heat (I use a 5-qt Dutch oven). Once the oil is hot & shimmering, carefully add in the prepared pork. Work in batches, as necessary, to avoid overcrowding the pot (which prevents browning). Cook for 4-5 minutes per side, until nicely browned. Transfer the browned pork to a plate, remove the pot from the heat & set aside to cool.
  • Place the seared pork in the center of one of the pieces of banana leaf. Note: The banana leaf may split a little bit as you work, which is okay. Just work quickly & do your best to completely encase the pork in the banana leaf.
