This is a great peach cobbler--so easy a child can make it! It is great right out of the oven served with vanilla ice cream.

- In a one-quart baking dish or 9 inch square pan, cream together sugar and butter. Mix in flour and milk until smooth. Pour peaches and their juice over the top.
- Bake 25 to 30 minutes in the preheated oven, until golden brown.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix sugar, flour, nutmeg, and cinnamon together in a bowl.
- Pour peaches into the bottom of a glass 9x13-inch baking dish. Sprinkle sugar mixture over peaches and mix well. Scatter 1/2 of the butter chunks over the peach mixture. Arrange pastry strips over peach mixture in a crisscross or striped pattern. Scatter remaining butter chunks over pie pastry.
- Bake in the preheated oven until crust is golden brown and crisp, 30 to 40 minutes.

OLD-FASHIONED PEACH COBBLER
Here's how to make peach cobbler with fresh or canned peaches. This easy peach cobbler takes just 15 minutes to prep.

- Preheat oven to 350 degrees F.
- Slice butter into ½ tablespoons and place on the bottom of a 9 x 13 baking dish. Put the pan in the oven while it's preheating to melt the butter. After it melts, remove from oven and set aside.
- Combine peaches, sugar, salt, vanilla extract, and nutmeg in a medium saucepan. Stir well. If using canned peaches, drain the juice before using.
- Cook over a medium heat for 2 to 5 minutes until the sugar is dissolved and the peaches begin to wilt (this releases the natural flavors of the peaches).
- In a large mixing bowl, combine flour, sugar, baking powder, and salt. Slowly add the milk and stir until just combined.
- Pour the batter into baking pan over the melted butter. Smooth with a rubber spatula to form an even layer over the bottom.
- Spoon the peach mixture, including the juices, over the batter in the pan.
- Sprinkle cinnamon sugar generously over the top of the ingredients.
- Bake at 350 degrees F for 30 - 40 minutes until it browns. Serve warm.
PEACH COBBLER II
This recipe is very old and was my grandmother's. This is a very delicious cobbler and can also be used with blueberries. Hope you enjoy this as our family has all these years.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10x10-inch baking dish.
- Stir together peaches with cinnamon and 1 1/2 cups sugar. Set aside.
- In a medium bowl, cream together shortening and 1 cup sugar. Mix in flour, baking powder and salt alternately with milk. Pour into prepared pan. Top with peach mixture. Drop butter in boiling water and pour all over peaches.
- Bake in preheated oven 40 to 45 minutes, until golden brown.

"JUST PEACHY" COBBLER
All I can say is Yummmmmm . . . A simple to make peach cobbler! *Cook's Note: A 28oz can of peaches, drained, or 4 to 5 large fresh peaches skinned and sliced can be substituted for the frozen peaches. I use only REAL butter and REAL vanilla!

- Melt the butter in a 9X13 pan.
- Sift together the flour, baking powder, salt and sugar.
- Whisk eggs and milk together; add to dry ingredients and mix by hand till blended.
- Pour batter evenly over melted butter.
- Mix sugar and cinnamon together and combine with the peaches. Spoon peaches evenly over the batter, but do NOT stir it.
- Bake 60 - 65 minutes, or until light golden brown.
- Best served warm with whipped cream or vanilla ice cream!
