1 teaspoon canola oil
½ cup minced onion
½ cup minced red bell pepper
1 clove garlic, minced
1 teaspoon ground cumin
¾ teaspoon ground coriander
½ teaspoon curry powder
½ cup light coconut milk
1 teaspoon sugar
¼ teaspoon crushed red pepper flakes
1 pound jumbo shrimp, peeled and deveined
1 tablespoon cornstarch
1 tablespoon water
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oil in large, nonstick saucepan over medium heat. Saute onion, red pepper, and garlic until vegetables begin to soften, about 3 minutes.
  • Season with cumin, coriander, and curry powder. Cook for 1 more minute. Stir in coconut milk, sugar, and crushed red pepper flakes. Bring to a boil. Reduce heat, and simmer, uncovered for 2 minutes.
  • Stir in shrimp, and increase heat to medium-high. Cook and stir until shrimp is cooked through, about 4 minutes.
  • In a small bowl, combine cornstarch with 1 tablespoon water. Stir into shrimp mixture, and cook until sauce has thickened, about 1 minute. Stir in cilantro, and remove from heat.

Peanut or vegetable oil, for frying
1/4 cup cornstarch
3 large egg whites
Kosher salt and freshly ground black pepper
2 cups flaked coconut
1 1/2 pounds jumbo shrimp, peeled with tails on
Red Curry Sauce, recipe follows
1 green onion, white and green part, chopped
1 handful fresh mint leaves, hand-torn
2 tablespoons vegetable oil
2 tablespoons Thai red curry paste
1 cup unsweetened coconut milk
1 lime, juiced

Steps:

  • Heat 3 inches of oil in a large deep skillet or heavy pot to 325 degrees F.
  • In a small bowl, mix the cornstarch, egg whites, salt, and pepper until foamy. Spread the coconut out in a pie dish. Dredge the shrimp with the cornstarch/egg white mixture and shake off any excess. Press the shrimp into the coconut flakes; turn shrimp over and press into coconut again to coat both sides.
  • Deep-fry the shrimp in batches until the coconut is golden brown, about 2 to 3 minutes. Using tongs or a slotted spoon, remove the shrimp to paper towels to drain. Arrange the shrimp on a platter, serve immediately with red curry sauce and garnish with green onion and mint.
  • Place a small pot over medium heat and coat with the oil. Stir the red curry paste into the pan and fry until aromatic. Slowly pour in the coconut milk and continue to stir to incorporate. Add the lime juice (and 1 of the squeezed out halves for added flavor) and cook for 5 to 10 minutes to thicken. Pour the sauce into a nice serving bowl and serve with the coconut shrimp.

Red curry shrimp is an easy dish that only takes 20-minutes to prepare. The shrimp are simmered in a fragrant coconut curry sauce that you'll want to eat by a spoonful!

2 Tbsp. olive oil or avocado oil
1 small red onion, thinly sliced, about 1 cup
1 Tbsp. finely grated ginger, use a microplane
1 Tbsp. minced garlic
1 (14 oz.) can coconut milk
2 Tbsp. red curry paste
2 tsp. honey
4 tsp. fish sauce
1 Tbsp. creamy peanut butter
1/3 cup water
1 small bell pepper (any color), sliced into thin strips
12 oz. peeled and deveined jumbo shrimp, tails on or off, thawed if frozen
1 Tbsp. fresh lime juice
Zest of 1 lime
1/4 cup finely chopped cilantro
Kosher salt and black pepper, to taste

Steps:

  • Heat oil in a large skillet, at least 12-inches, over medium heat. Add the onions and cook until softened, about 3-4 minutes. Add the ginger and garlic and cook until fragrant, about 30 seconds, while stirring continuously.
  • Add the coconut milk, curry paste, honey, fish sauce, peanut butter, and water. Season with salt and pepper, to taste. Bring to a simmer and whisk the sauce until smooth and lump-free.
  • Add bell peppers and cook for about 5-7 minutes, covered, or until the peppers are almost tender. Slightly reduce the heat to maintain a gentle simmer.
  • In the meantime, lightly pat dry the shrimp with a few sheets of paper towel to remove excess moisture. Season the shrimp all over with salt and pepper, to taste.
  • Uncover the sauce and stir in the shrimp and cook for about 3 minutes or until shrimp just turn opaque, stirring often. The sauce will also slightly reduce and thicken.
  • Stir in lime juice, lime zest, and cilantro. Serve over cooked rice.

6 scallions, trimmed and sliced
1 stalk lemon grass
1/2 inch piece fresh ginger root
1 cup coconut milk
1 tbsp red curry paste
1 tbsp fish sauce
3 cups uncooked jumbo shrimp
1 tbsp chopped fresh cilantro
fresh chiles, to garnish

Steps:

  • 1. Heat the vegetable oil in a wok or large skillet and fry the scallions gently for about 2 minutes until softened. 2. Bruise the stalk of lemon grass using a meat mallet or rolling pin. Peel and finely grate the piece of fresh ginger root. 3. Add the bruised lemon grass and grated ginger root to the wok or skillet with the coconut milk, red curry past, and fish sauce. Heat until almost boiling 4. Peel the shrimp leaving the tails intact. Remove the black vein running down the back of each shrimp. Add the shrimp to the wok or skillet with the chopped cilantro and gook gently for 5 minutes.

2/3 cup fresh pineapple, peeled and chopped
1/4 cup onion, sweet, thinly sliced
2 cups coconut cream
3 tablespoons red curry paste
3 tablespoons fish sauce
3 teaspoons brown sugar
24 shrimp, jumbo, raw, shelled and deveined (leave tailshell on)
2 tablespoons cilantro, fresh, chopped
6 cups noodles, cellaphane, cooked
4 sprigs basil, thai (garnish)

Steps:

  • In a large pot add the pineapple, coconut cream, curry paste, fish sauce and sugar.
  • Cook on medium high heat, but do not boil.
  • Add the shrimp and cilantro and simmer until the shrimp turn a bright pink color, about 3 - 5 minutes.
  • Serve over top the cellaphane noodles and garnish with fresh basil.

1/2 cup finely chopped onion
1/4 teaspoon dried red pepper

1/4 cup fresh coriander, chopped

Steps:

  • Shell and de-vein the shrimp; rinse well, pat dry, and set aside.
  • In a skillet over medium heat, melt the butter; saute the onion for about 7 minutes.
  • Add the red chile pepper and cook, stirring, for 1 minute.
  • Add the shrimp, then season to taste with salt and freshly ground pepper.
  • Cook, stirring often, about three minutes.

1/2 cup red curry paste
One 13.6-ounce can unsweetened coconut milk
1/4 cup peanut or almond butter, chunky or creamy depending on preference
2 tablespoons sugar
1 tablespoon fish sauce
Juice of 1 lime
Kosher salt
Vegetable oil, for frying
1 cup panko breadcrumbs
1 cup shredded sweetened coconut
3 large eggs
1 cup all-purpose flour
2 teaspoons garlic powder
1 1/2 teaspoons turmeric powder
Kosher salt and freshly ground black pepper
1 pound peeled and deveined jumbo shrimp, tails on and butterflied

Steps:

  • For the red curry dipping sauce: Heat the oil in a small saucepan over medium-high heat. Add the curry paste and stir frequently until fragrant, about 2 minutes. Add the coconut milk and whisk frequently until smooth and thickened slightly, about 3 minutes.
  • Whisk in the peanut butter until incorporated and the sauce is smooth. Remove the sauce from the heat and whisk in the sugar, fish sauce, lime juice and salt to taste. Let cool to room temperature, then transfer to a serving vessel, wrap with plastic and refrigerate at least 30 minutes before serving.
  • For the coconut shrimp: Heat 3 inches of oil in a deep pot or Dutch oven to 350 degrees F. Line a baking sheet with paper towels.
  • In a medium bowl, mix together the panko and sweetened coconut. In a second medium bowl, beat the eggs. In a third medium bowl, combine the flour, garlic powder, turmeric, 1 teaspoon salt and several grinds of black pepper to taste. Dredge the shrimp in the flour mixture, then the egg, then the panko mixture.
  • Working in batches, fry the shrimp until golden brown, about 3 minutes. Drain on the prepared sheet tray and immediately season with salt. Serve with the curry dipping sauce.

2 teaspoons olive oil
1 medium onion, coarsely chopped
1 teaspoon garlic, coarsely chopped
2 teaspoons curry powder
1 3-inch piece fresh lemongrass, thinly sliced crosswise (optional)
1/3 cup coarsely chopped fresh ginger
8 cardamom pods
2 cups unsalted tomato juice
1/2 teaspoon salt
1/3 cup nonfat yogurt
1/2 medium cucumber, peeled, seeded, and diced (1 1/2 cups)
1/4 teaspoon garam masala (a spice blend available at Indian groceries and specialty-food stores)
1/2 tablespoon fresh lemon juice
1 tablespoon chopped mint or cilantro
12 sprigs cilantro, for garnish

Steps:

  • Peel and devein shrimp, reserving shells and leaving tails intact. Cover; refrigerate.
  • Heat oil in a medium saucepan over medium-low heat. Add onions and garlic; cook, stirring often, until onions are translucent, 5 to 7 minutes. Reduce heat to low; add shrimp shells, curry, lemongrass, ginger, and cardamom. Cook, stirring often, until shells are pink and mixture is very aromatic, about 5 minutes.
  • Add 4 cups water, tomato juice, and salt. Raise heat; bring to a boil. Reduce heat to medium low and simmer, skimming off scum as necessary, about 1 hour.
  • Combine the yogurt, cucumber, garam masala, lemon juice, and chopped mint or cilantro; cover with plastic and refrigerate.
  • Strain stock, pressing on solids, into a clean medium saucepan. Return to a boil. Reduce heat so stock is at a bare simmer. Add shrimp; poach, adjusting heat as needed to maintain a bare simmer, 3 to 4 minutes. Transfer shrimp to a dish; cover with foil. Raise heat to medium high; simmer liquid until it is reduced by about half, about 20 minutes. Pour the sauce over shrimp; garnish with cilantro sprigs and serve with reserved cucumber relish.
