CHEF JOHN'S CINCINNATI-STYLE CHILI
You'll love this chili if you tend to like foods from the Middle East, the Mediterranean, Greek food, or Indian food, because of the spices and flavor profile. If you don't, you won't. If you finish this dish off with some diced onions and grated Cheddar cheese like I did, you'll be enjoying what they call in Cincinnati a "Four-Way," because of the four components, but feel free to serve as you like.

Steps:
- Combine beef and tomato paste in a large pot. Rinse out the tomato paste can with a couple tablespoons of water and add to the pot with garlic, onion, chili powder, cumin, cinnamon, cayenne, allspice, cloves, black pepper, bay leaf, sugar, and salt. Add apple cider vinegar, Worcestershire, and cold water. Mash and stir with a potato masher or a large whisk to break up the meat into fine pieces.
- Place the pot over medium-high heat; bring to a boil, stirring occasionally with a wooden spoon. Reduce heat to medium-low and cook until flavors come together and chili reaches your desired thickness, 1 to 1 1/2 hours.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until very tender, about 12 minutes. Drain.
- Taste chili and adjust seasoning. Remove and discard bay leaf. Ladle over spaghetti into serving bowls. Top with some onions and Cheddar cheese. Cut and scoop the noodles up with a fork like you're eating a casserole.

MILD-MANNERED CHILI
I like chili, but I'm not a fan of heat for heat's sake. I wanted something that would warm me up but not be overwhelmingly hot, and this was the result. My husband says that this would also make a good sloppy joe (with beans) mix.

- Lightly coat the inside of a slow cooker with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer ground turkey to the slow cooker.
- Stir crushed tomatoes, black beans, kidney beans, diced tomatoes, tomato paste, chili powder, black pepper, salt, and garlic powder into ground turkey.
- Cook on Low for 3 hours.

JOHN'S VERY MILD CHILI
I do not like spicy hot foods very much so most people will find this to be a very mild chili. Sazon Goya - Con Azafran is a spice mix (not hot at all) that you can find in the Mexican section of the supermarket. Several small envelopes are in a small box. I add it to most soup and stew type recipes. It adds a reddish yellow color and a good flavor. Abobo seasoning is also in the Mexican section. It is mostly salt so I use it instead of salt to add a little flavor.

Steps:
- In a medium size stock pot or frying pan if using a crock pot,
- Over medium high heat, cook ground Turkey until almost done, drain fat,.
- Add Onion, Celery, Carrot and Garlic.
- Cook on medium until Carrots start to get soft, stirring often.
- Add spice mixes stir in well and cook for a minute or two.
- Add Wine (Chicken Broth if not using wine) reduce by half.
- If using a crock-pot you can start adding the rest of the ingredients while the meat and vegetables are cooking.
- Add rest of ingredients to stock pot or crock-pot and mix well.
- If using a crock-pot cook for 3 or 4 hours on low.
- Everything that needs it is already cooked so we are just merging flavors.
- If using a stock pot on the stove; simmer for 2 hours stirring every 15 minute.

EASY MILD CHILI

JOHN'S CHILLI CON CARNE
A warm, comforting chilli is the ultimate family meal. This dish is great for all seasons and has a mix of sweet (cascabel) and smoky (ancho) chillis to give it depth

- Heat oven to 160C/140C fan/ gas 3. Heat a large cast-iron pot or saucepan over a high flame, pour in the oil, then drop in the onions, chillies, paprika and thyme. Cook for 5 mins until the onions soften. Add the celery, give it a stir and crumble in the stock cube. Stir again and cook for another 5 mins
- Add the beef, stir well, then colour for a few mins to coat the meat with the spices. Add the flour and coat everything with a more few stirs, then add the remaining ingredients, along with 1 tsp salt.
- Let it come to the boil, then put a lid on, place in the oven, reduce the temperature to 140C/120C fan/ gas 1 and cook for 4 1 /2 hrs.
- Take the pot out of the oven and remove the carrots, chop them into small chunks, then put them back in. I like plenty of sauce, but you may want to remove some if you don't want it too saucy - be sure to keep it, it's great on toast when cold. Remember to remove the chillies before you serve. Finally, scatter with coriander, if you like

CROCK POT MILD CHILI
This is a variation of Chuckwagon Chili from Company's Coming Casserole Cookbook. We varied it to meet our tastes and what we had on hand and to cook in the crock pot! Very mild and easy to make my DS10 loves to help make it! You can change the amounts of the seasonings to your personal tastes. We like things mild so increase as necessary.

MILD BUT RICH CHILI
Sweet Hungarian paprika is the secret ingredient that makes this chili mild but bursting with rich flavour. The three kinds of beans are pretty, but you can use whatever beans you have on hand. And for all you folks that think that "real" chili doesn't have beans, I can only say that I don't want to make a historically authentic Texan dish - I just want a way to cook my healthy, high-fibre, low-fat beans, and I refuse to call them "Chili flavoured beans with ground beef." - Drain the beans, and put them in a large pot with the tomatoes and the ketchup.
- Set the pot over medium-low heat.
- Peel and chop the onion; wash and chop the celery.
- Saute the onion and celery in the oil until softened; add them to the pot.
- Break up the meat and brown it in the same skillet as the vegetables; when nearly done, add the spices.
- Add the meat to the vegetables and simmer for half an hour to an hour.
- Serve with hot buttered toast.
EASY AND MILD CHILI
This is my version of Chili. It is easy to prepare and very mild in taste. You prefer yours hotter, just up the spices. My family loves it served either over rice or spaghetti topped with sharp cheddar and sour cream. I like mine with few pickled jalapenos on top! Enjoy! PS-I really believe the fresh garlic makes a big difference in this chili.

- In a frying pan brown the beef with the onion and garlic over medium heat.
- Over medium heat add to a dutch oven or large pot all ingredients except beans. Break up the tomatoes with a spoon or your hand. I squeeze mine.
- Once the meat is ready, drain and add to the tomatoe mixture. Let simmer for an hour or so, add beans. Taste for seasonings. I usually let mine set on the stove on warm or low for a few hours to let the flavors meld. It is even better the next day.
- If you choose to use lean beef and no draining, just make it all in the dutch oven or large pot.
