BREAKFAST POTATOES {CRISPY OVEN BAKED}

Breakfast Potatoes {Crispy Oven Baked} image

Red potatoes are diced into small chunks, coated in flavorful seasonings and a fair dose of olive oil, and then they are oven roasted at a high temp for perfectly crispy breakfast potatoes!

Provided by Jaclyn

Categories     Breakfast

Time 45m

Number Of Ingredients 7

2 1/2 lbs. red potatoes ((5 large), cut cubes just over 1/2-inch)
1/3 cup olive oil
1 tsp salt, (then more to taste)
1 tsp freshly ground black pepper
3/4 tsp garlic powder
3/4 tsp paprika
1/2 tsp onion powder

Steps:

  • Preheat oven to 450 degrees. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray.
  • Place potatoes in a mound in center of baking sheet. Drizzle with olive oil.
  • Sprinkle potatoes with salt, pepper, garlic powder, paprika and onion powder. Toss well to evenly coat in oil and spices.
  • Spread potatoes even into a single layer. Bake in center of preheated oven 15 minutes.
  • Remove from oven, toss and continue to bake until just tender, about 15 minutes longer.
  • Move oven rack about 5-inches from broiler.
  • Broil potatoes about 2 - 3 minutes until slightly browned (keep a close eye on them and don't walk away they can brown quickly!).
  • Remove and toss, continue to broil until golden brown and crisp on opposite side a minute or two longer. Serve warm.

PARMESAN-CRUSTED POTATOES

Parmesan-Crusted Potatoes image

Tender roasted potatoes get an extra boost of flavor and crunch, thanks to a crispy layer of golden Parmesan. We added a simple stir-together paprika aioli for dipping, but these flavorful little nuggets are equally delicious on their own. Serve them as a fun appetizer or as a side dish.

Categories     side-dish

Time 1h5m

Yield 6 servings

Number Of Ingredients 12

2 1/2 pounds small Yukon gold potatoes, halved crosswise
4 sprigs fresh thyme
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
Nonstick cooking spray
3/4 cup finely grated Parmesan
1/2 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
1 teaspoon Dijon mustard
1 teaspoon smoked paprika
1 small clove garlic, finely grated
Kosher salt and freshly ground black pepper

Steps:

  • Line a rimmed baking sheet with aluminum foil and place on the center rack of the oven. Preheat the oven to 425 degrees F (see Cook's Note).
  • For the Parmesan potatoes: Toss the potatoes, thyme sprigs, olive oil, 1 teaspoon salt and several grinds of black pepper in a large bowl until combined. Carefully remove the hot baking sheet from the oven and spray with nonstick cooking spray. Lay the potatoes cut-side-down in an even layer. Bake until tender and golden brown, about 35 minutes.
  • For the smoked paprika aioli: Meanwhile, whisk together the mayonnaise, lemon juice, Dijon, paprika, garlic, a pinch of salt and a couple grinds of black pepper in a small bowl until smooth. Cover with plastic wrap and refrigerate until ready to serve.
  • Remove the baking sheet from the oven and push the potatoes to one side of the pan (try to give yourself as much empty surface area as possible). Lightly spray the foil with more cooking spray, then sprinkle the Parmesan in an even layer over the empty space on the baking sheet, making sure to go all the way to the edges to create a roughly 14-by-12-inch rectangle. Place the potatoes on top of the Parmesan layer, cut-side down, so that all the potatoes are sitting on the cheese.
  • Return the baking sheet to the oven and bake until all the Parmesan is golden brown and crisp, 8 to 10 minutes more. Cool slightly, about 5 minutes, then use a spatula to lift the crispy, cheesy potatoes off the pan (some potatoes will come off individually while others will come off in pairs). Serve with the smoked paprika aioli on the side.

JESSICA'S BREAKFAST POTATOES

Jessica's Breakfast Potatoes image

My good friend Jess makes these for us all the time and I absolutely love them. This is a "throw in the pan" kind of recipe and all measurements are approximate so add to your liking.

Provided by vegan mom

Categories     Breakfast

Time 25m

Yield 4 serving(s)

Number Of Ingredients 5

5 large red potatoes, chopped into small bite sized pieces
3 tablespoons olive oil
1 teaspoon chili powder (Check for unsalted chili powder. If your chili powder contains salt, then use less salt)
4 teaspoons seasoning salt (such as Lowrys)
1/8 teaspoon fresh ground black pepper

Steps:

  • Mix everything together in a large skillet and cover. Heat over medium-high heat, stirring every 1-2 minutes to prevent sticking until the potatoes are tender.
  • Uncover and reduce the heat slightly. Cook, stirring occasionally until the rest of the oil cooks off and the potatoes are crispy.
