I live in Texas, where folks take pride in their chili, but I'm from NJ and Chili is not a regional dish there, so my earliest influences of chili were from eating it at the fast food restaurant, Wendy's. Now, authentic Chili, according to Texas definition is Peppers and Meat simmered in some type of moisture with spices. There...

Ingredients

2 lb ground beef
1 large yellow onion, chopped
2 Tbsp minced fresh garlic (from a jar)
2 large bell peppers, any color
2 finely diced habaneros
3 finely diced jalapenos
3 or 4 whole chili peppers, seeds removed
2 Tbsp chili powder
1/4 tsp cayenne pepper
1/2 tsp cumin
2 tsp paprika
1/2 tsp garlic powder
1 Tbsp oregano
1/2 tsp salt
1/2 tsp black pepper
2 to 3 c chunky tomato sauce (i'm using sunday gravy)
3 can(s) bush's best chili beans
1 can(s) kidney beans

Steps:

1. fry meat until browned, add onions, garlic and peppers. cook for about 3 minutes then add spices and tomato sauce.
2. transfer to crock pot, add canned beans and simmer for 3 hours.
3. Remove whole chili peppers.Serve over rice with shredded cheddar cheese.
