After trying a similar version of this coleslaw while visiting the island of St. Kitts, I returned home and wanted to make it myself. I've taken it to so many events, and it's always a hit. -Noreen McCormick Danek, Cromwell, Connecticut

Number Of Ingredients 10

2 packages (14 ounces each) coleslaw mix
1 cup unsweetened pineapple tidbits
1/2 cup sweetened shredded coconut
1/2 cup golden raisins
1/2 cup finely chopped sweet red pepper
1-1/2 cups mayonnaise
1/2 cup unsweetened pineapple juice
3/4 teaspoon salt
1/4 teaspoon celery seed
1/4 teaspoon pepper

Steps:

  • Place the first 5 ingredients in a serving bowl. In a small bowl, combine remaining ingredients. Pour over slaw mix; toss to coat. Refrigerate until serving.

Nutrition Facts : Calories 305 calories, Fat 26g fat (5g saturated fat), Cholesterol 2mg cholesterol, Sodium 378mg sodium, Carbohydrate 19g carbohydrate (14g sugars, Fiber 3g fiber), Protein 2g protein.

Found on another web site. I needed a recipe to go with my Jerk Chicken for an ethnic dinner I was hosting. I like trying new recipes and as it turned out everybody ended up enjoying this dish so decided to share with other Zaar members.

1 quart cabbage, shredded
1/4 cup carrot, shredded
1/4 cup green pepper, chopped
1/2 cup mayonnaise
2 tablespoons granulated sugar
1 tablespoon cider vinegar
1 tablespoon jerk seasoning (see #91493 from Chia)

Steps:

  • In a large bowl, combine the cabbage, carrots & green peppers. Set aside.
  • In a small bowl, mix mayonnaise, sugar, vinegar & Jerk seasoning.
  • Pour over cabbage mixture & toss well.

1/4 cup shredded carrot
1/2 cup chopped walnuts
1/2 cup mayonnaise
2 tablespoons sugar
1 tablespoon cider vinegar
1 tablespoon jamaican jerk spice

Steps:

  • Combine the cabbage, carrots, and nuts in a large bowl; set aside.
  • Mix togerther the remaining ingredients and spoon over the cabbage mixture.
  • Toss well.
  • Cover and chill before serving.
