1 cup uncooked long-grain rice
1 pound boneless skinless chicken breasts, cut into 1/2- to 3/4-inch pieces
1 teaspoon Jamaican jerk seasoning blend
1 tablespoon vegetable oil
1 medium onion, diced
1 (20 ounce) can pineapple chunks, drained
1 (15 ounce) can black beans, drained and rinsed
1 (4.5 ounce) can chopped green chilies
½ cup jerk marinade

Steps:

  • Prepare rice as label directs.
  • Meanwhile, sprinkle chicken with jerk seasoning. In 12-inch skillet over medium-high heat, in hot oil, cook chicken pieces until browned on all sides, about 5 minutes. With slotted spoon, remove chicken to plate.
  • In drippings remaining in skillet over medium heat, cook onion, about 5 minutes. Add chicken pieces, pineapple chunks, black beans, green chilies and jerk marinade. Over high heat, heat to boiling; reduce heat to low. Cover and simmer 8 to 10 minutes until chicken is tender, stirring occasionally.
  • Serve jerk chicken mixture over rice.

Dale Talde doesn't specialize in barbecue, but he does love Miami, so participating in this event was a no-brainer. "There are dudes who take this stuff way seriously," Dale says. "I wasn't trying to win." Instead, he set out to create a dish that spoke to the climate in Miami: smoked jerk chicken wings, seared on the grill at the last minute, and a side of pickled pineapple. "I wanted to foil the jerk spice with something refreshing," he says. "You don't need the pineapple, but it's awesome!"

1 1/2 cups chopped fresh cilantro
1/2 cup fresh thyme
1 small Vidalia onion, finely diced
5 cloves garlic, roughly chopped
2 habanero chile peppers, roughly chopped
1/3 cup fresh lime juice (from about 4 limes)
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground cumin
Kosher salt
4 pounds chicken wings, split at the joint, tips removed
1 cup rice wine vinegar
1/2 cup sugar
1 1/2 cups fresh lime juice (from about 12 limes)
1 1/2 cups fresh orange juice (from about 6 oranges)
1/2 cup fresh yuzu juice (or use another citrus juice)
1/2 pineapple, peeled, cored and julienned
1/2 Vidalia onion, thinly sliced
3 roasted red peppers, julienned
2 cups packed fresh cilantro
2 cups hickory wood chips

Steps:

  • Make the marinade for the wings: Puree the cilantro, thyme, onion, garlic, chiles, lime juice, cinnamon, nutmeg, allspice, cumin and 2 teaspoons salt in a blender until smooth. Put the chicken wings in a large bowl and pour in the marinade. Cover and refrigerate overnight.
  • Make the pickled pineapple: Combine the vinegar and sugar in a large saucepan over high heat and bring to a boil. Cook until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the lime, orange and yuzu juices. Add the pineapple, onion, roasted red peppers and 2 tablespoons salt. Let sit at room temperature until the pineapple is completely cool and tender, at least 3 hours. Add the cilantro.
  • Make the wings: Soak the wood chips in water at least 30 minutes; drain. Heat a charcoal grill and prepare for indirect grilling: Bank the coals to one side, leaving the other side empty. Set up a drip pan on the empty side. Let the fire burn down to a very low heat (165 degrees F to 175 degrees F). Scatter some of the wood chips over the hot coals. Remove the wings from the marinade (no need to wipe them off) and arrange on the cooler side of the grill, over the drip pan. Cover the grill and adjust the vents to maintain a low heat. Cook 2 hours, adding more wood chips halfway through and more charcoal as needed.
  • Remove the wings from the grill. Spread out the coals and bring the grill temperature up to medium high (325 degrees F to 350 degrees F). Grill the wings over direct heat, covered and turning often, until the meat easily pulls away from the bone, 20 to 25 minutes. Serve with the pickled pineapple.

2 tablespoons orange juice
2 tablespoons vegetable oil

1 teaspoon kosher salt
1/2 teaspoon dried thyme
1/4 teaspoon ground cinnamon

1 Scotch bonnet or habanero chile, stemmed and seeded
1 scallion, chopped
2 pounds boneless, skinless chicken breast, chopped into 1 1/4-inch cubes
1 large red onion, diced into 1 1/4-inch pieces
Kosher salt and freshly ground black pepper
3 cups fresh pineapple cut into 1 1/4-inch chunks
1 to 2 large green peppers, diced into 1 1/4-inch pieces
Nonstick cooking spray, for the grill grates

Steps:

  • For the jerk marinade: Combine the brown sugar, lime juice, orange juice, oil, soy sauce, vinegar, allspice, ginger, salt, thyme, cinnamon, nutmeg, garlic, bay leaf, chile and scallion in a food processor and puree. (You can mix in a bowl if you don't have a food processor.)
  • For the kebabs: Place the chicken in a gallon-size resealable bag. Pour the marinade over the chicken (reserve any extra marinade for later use). Seal the bag and refrigerate 1 hour.
  • Sprinkle the red onion with salt and pepper. Assemble metal skewers with the chicken, red onion, pineapple and peppers, alternating each ingredient. Brush the kebabs with the remaining marinade.
  • Preheat a grill to medium-high heat. Spray the grill grates with cooking spray.
  • Grill the kebabs until the chicken registers 165 degrees F in the center on an instant-read thermometer, about 4 minutes per side. Serve warm.

1 cup barbecue sauce
1 teaspoon minced garlic
1 Tablespoon soy sauce
6 boneless skinless chicken breasts
1 red bell pepper (cut into bite-sized pieces)
1 green bell pepper (cut into bite-sized pieces)
4 green onions (diced)
Salt and pepper, to taste

Steps:

  • Preheat grill to high heat.
  • Drain juice from pineapple slices into a small mixing bowl.
  • Whisk in barbecue sauce, minced garlic, and soy sauce; set aside.
  • Place 6 pieces of foil (approx. 12"x18") on a clean working surface and spray with nonstick cooking spray.
  • Place a chicken breast in the center of each piece of foil.
  • Divide pineapple slices, peppers and green onions evenly on top of each chicken breast.
  • Season with salt and pepper, to taste.
  • Reserve 1/2 cup barbecue pineapple sauce; set aside.
  • Drizzle remaining barbecue sauce evenly over foil packs.
  • Fold the ends of the foil together and seal open ends closed tightly.
  • Place foil packs on the grill and close lid.
  • Cook for 15-20 minutes, turning over halfway through, until chicken is cooked through and peppers are tender.
  • Carefully open foil packs and serve with reserved barbecue sauce, if desired.

6 chicken thighs, skin on and bone in
90g jerk paste
3 limes , 1 zested and juiced, 2 cut into wedges, to serve
1 pineapple , peeled, cored and chopped into chunks
2 sweet potatoes , peeled and chopped into chunks
1 red pepper , sliced
300g wholegrain rice
400g can black beans
1 tbsp coconut oil
few thyme sprigs, leaves picked
3 Little Gem lettuces , sliced

Steps:

  • Heat oven to 180C/160C fan/gas 4. Cut the thighs in half lengthways down one side of the bone. Put them in a large roasting tin. Mix the jerk paste with the lime zest and juice and pour over the chicken. Tuck the pineapple pieces, sweet potatoes and peppers in and around the chicken. Season, cover with foil and roast for 30 mins.
  • Increase the oven temperature to 220C/200C fan/gas 7, remove the foil, baste the chicken and stir the veg in the cooking juices. Return to the oven for 20-25 mins.
  • Meanwhile, cook the rice according to pack instructions, then stir in the beans, coconut oil, thyme leaves and seasoning. Cook for 2-3 mins to warm the beans through and melt the coconut oil. Serve 3 pieces of chicken per person with the vegetables, and the lettuce and rice on the side.

This recipe takes the deep flavor of jerk chicken and turns it into easy meatballs. The jerk seasoning paste does double duty here, adding both spices and moisture, so don't reach for dry jerk seasoning. Whether served alone as an appetizer, over rice, or even tucked in a sandwich, these meatballs are perfectly salty, sweet and spicy.

Neutral oil
1 pound ground chicken or turkey
1 small yellow or red onion, finely diced
1 egg, beaten
1/4 cup bread crumbs
2 tablespoons Jamaican jerk seasoning paste, such as Grace or Walkerswood
1 tablespoon chopped fresh parsley or cilantro leaves
1 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 cup pineapple juice
1/2 packed cup light or dark brown sugar
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 small garlic clove, minced
1/2 teaspoon onion powder
Pinch of red-pepper flakes
Pinch of kosher salt, plus more to taste
1 tablespoon cornstarch
White rice, for serving

Steps:

  • Heat oven to 375 degrees. Line a sheet pan with aluminum foil and very lightly coat it with oil.
  • Prepare the meatballs: In a medium bowl, combine the chicken, onion, egg, bread crumbs, jerk seasoning paste, parsley, garlic powder, salt and pepper. Mix thoroughly to combine, being careful not to overwork the meat. Using lightly wet hands, form the mixture into 12 meatballs, each a bit larger than a golf ball, and space them out on the prepared pan. Bake until golden brown, about 15 minutes. (Alternatively, you can fry them in a nonstick pan coated in oil over medium heat for about 4 to 5 minutes per side.)
  • While the meatballs cook, prepare the glaze: Whisk the pineapple juice, brown sugar, ketchup, Worcestershire sauce, garlic, onion powder, red-pepper flakes and salt together in a medium pot over medium-high heat. Bring to a boil, then reduce heat to medium-low. Simmer until it reduces enough to coat the back of a spoon, about 10 to 15 minutes.
  • In a small bowl, mix together the cornstarch with 1 tablespoon water. Slowly whisk into the sauce, increase the heat to medium and stir until you reach the desired consistency. (Sauce should look like a thicker gravy.) Taste and adjust seasoning as needed.
  • Add the meatballs to the sauce and stir until coated. Cook over medium-low heat for 2 minutes, until the meatballs are evenly glazed and deepen slightly in color. Serve hot on their own or over rice.

Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill over medium heat. Cover grill; cook 6 minutes. Using tongs, carefully turn packets over, taking care not to puncture foil. Cook 10 to 12 minutes longer or until chicken is no longer pink in center and vegetables are crisp-tender.

2 teaspoons ground allspice
1/2 to 1 teaspoon cayenne pepper
3 tablespoons sugar
Coarse salt and ground pepper
2 cans (20 ounces each) pineapple chunks in juice, drained
2 tablespoons fresh lime juice
4 scallions, thinly sliced
8 boneless, skinless chicken breast halves (6 to 8 ounces each)
3 tablespoons vegetable oil, such as safflower
Cooked rice, for serving

Steps:

  • In a small bowl, combine thyme, allspice, cayenne, 1 tablespoon sugar, 1 teaspoon salt, and 1/2 teaspoon pepper; set spice mixture aside. In a medium bowl, stir together pineapple, lime juice, scallions, and remaining 2 tablespoons sugar. Season stuffing with salt and pepper, and set aside.
  • Lay chicken flat on a work surface. With a paring knife, cut a 2-inch-long slit in the thick side of each breast; insert knife, and pivot inside chicken without enlarging opening, carefully forming a deep pocket (make sure not to pierce the opposite side). Dividing evenly, tightly pack each breast with stuffing; rub exterior with oil, and sprinkle with spice mixture.
  • Heat broiler, with rack set 4 inches from heat. Line a large rimmed baking sheet with aluminum foil; arrange chicken on sheet. Broil until chicken is opaque throughout and an instant-read thermometer inserted into stuffing reads 165 degrees, 15 to 20 minutes. Serve stuffed chicken with rice.

PINEAPPLE JERK CHICKEN

This was suggested by a dietician and diabetes educator in my local newspaper. It is adapted from Hungrygirl.com. Since I am a hungry girl and I am pre-diabetic, I thought this would be worth saving! It's equally delicious made on a grill or in the oven.

3 tsp orange juice
1 1/2 tsp jerk seasoning (or favorite chicken seasoning mix)
1/8 tsp cayenne pepper (adjust to taste)
5 oz chicken breast cutlet, pounded to 1/2 inch thickness
1/2 c chopped sweet onion
1/2 c crushed pineapple packed in juice, lightly drained
salt (to taste)

Steps:

  • 1. In a zip bag, combine orange juice, jerk seasoning, 1/8 tsp. cayenne. Mix. Season chicken with salt and add to bag. Seal and squish to coat. Refrigerate for at least 1 hour.
  • 2. Preheat oven to 375ºF (or heat grill). Lay a large sheet of heavy duty foil or two pieces of regular foil on a baking sheet and spray with non-stick spray.
  • 3. Lay onion on the center of the foil. Top with chicken and orange juice mixture followed by lightly drained pineapple.
  • 4. Cover with another large piece of foil. Fold together and seal all four edges of the foil pieces, forming a well-sealed packet.
  • 5. Bake for 25 minutes, or until chicken is cooked through and onion is tender. Cut packet to release steam before opening entirely.
  • 6. THIS MAKES ONE SERVING!! So, make one packet per person!!
