Salmon Rice image

Salmon Rice or Shaké no Takikomi Gohan (鮭の炊き込みご飯) is a classic autumn meal in Japan that's made by steaming salted salmon over rice. I've broken down the technique in this delicious Japanese Salmon Rice recipe including how to salt the salmon and how to steam it over rice.

220 grams salmon ((deboned and sliced into 1-inch thick fillets))
1 teaspoon salt
300 grams Japanese short-grain rice ((~ 1 1/2 cups))
1 2/3 cup water
1 tablespoon sake
2 grams konbu ((2-inch square))
Ikura ((optional for garnish))
Mitsuba ((optional for garnish))

Steps:

  • Sprinkle the salmon with 1 teaspoon of salt on all sides and place it on a few layers of paper towels set on a rack. Refrigerate the salmon overnight.
  • To make the rice, wash it in a strainer until the water runs mostly clear. Add the rice to a heavy-bottomed pot along with the water, sake, and konbu. Cover this with a lid and let the rice soak for at least 20 minutes.
  • When the rice is done soaking, turn the heat on to high and bring the mixture to a boil. As soon as it's boiling, turn down the heat to low and set a timer for 12 minutes. Do not open the lid during this time.
  • When the timer goes off, have the salmon ready to go into the pot with one hand, and use the other hand to open the lid (careful, the lid may be hot). Quickly slide the salmon in over the rice and close the lid immediately.
  • Set a timer for 15 minutes and let the rice and salmon steam.
  • When the timer goes off, remove the salmon from the pot. When it's cool enough to handle, remove, and discard the skin and any remaining bones. Add the salmon back into the rice and stir it all together.
  • Serve Japanese Salmon Rice in rice bowls. You can garnish with ikura and mitsuba if you like.

This dish contains the goodness of sushi without the painstaking rolling and shaping. The salmon is marinated in lemon juice and soy which 'cooks' and flavors the fish. Sushi rice is available in most stores, but if you can't find it use basmati rice instead.

10 ounces sushi rice
12 ounces skinless salmon fillet
2 avocados, sliced
1 lemon, juice
4 teaspoons soy sauce
4 teaspoons sesame seeds, toasted (optional)
2 scallions, thinly sliced
1 red chili pepper, deseeded and thinly sliced
1 ounce cilantro, leaves only

Steps:

  • Rinse the rice in a sieve until the water runs clear. Drain and put in a large pan with 1 3/4 cups cold water.
  • Bring to the boil, turn the heat to low, cover then cook for 10-12 mins until the rice is almost cooked.
  • Remove from the heat then leave, covered, for 10 minutes.
  • Thinly slice the salmon the arrange on a platter with the sliced avocado.
  • Drizzle over the lemon juice and soy, making sure everything is evenly covered.
  • Leave in the fridge to marinate for 10 minutes.
  • Carefully tip the juices from the salmon platter over the rice then stir with a pinch of salt.
  • Divide the rice between four bowls.
  • Scatter the seasame seeds, scallions, chili and cilantro over the salmon and avocado and serve with the rice.

Fancy making sushi at home? This simple recipe makes 32 healthy little bites, ideal for lunch or served as canapés

300g sushi rice
2 tbsp rice or white wine vinegar
1 tsp caster sugar
1 large avocado
juice ½ lemon
4 sheets nori seaweed
4 large slices smoked salmon
1 bunch chives
sweet soy sauce (kecap manis), to serve

Steps:

  • Put the rice in a small pan with 600ml water. Bring to the boil and cook for 10 mins until the water is absorbed and the rice is tender. Stir through the vinegar and sugar, cover and cool.
  • Skin, stone and slice the avocado. Put in a bowl and squeeze over the lemon juice, turning the avocado to ensure the pieces are covered.
  • Divide the rice between the nori sheets and spread it out evenly, leaving a 1cm border at the top and bottom. Lay the salmon over the rice, followed by the chives and finally position the avocado across the centre.
  • Fold the bottom edge of the seaweed over the filling, then roll it up firmly. Dampen the top border with a little water to help it seal the roll. Repeat to make 4 rolls. At this stage, the rolls can be wrapped individually in cling film and chilled until ready to serve.
  • Using a serrated knife, cut each roll into 8 rounds. Serve with sweet soy sauce for dipping.

This Japanese-inspired dinner is like a deliciously deconstructed salmon-and-avocado roll. This recipe comes from our book "Clean Slate: A Cookbook and Guide."

1 1/4 cups short-grain brown rice
Coarse salt
1 teaspoon canola oil
4 pieces sushi-grade salmon (each about 4 ounces and 1 inch thick)
2 sheets nori
3 tablespoons fresh lemon juice
3 tablespoons reduced-sodium soy sauce
1 1/2 teaspoons hot chile sauce
1 avocado, halved, pitted, peeled, and sliced
1 English cucumber, halved lengthwise and thinly sliced on the bias
1/4 cup cilantro sprigs
1 small Thai chile, thinly sliced, for serving (optional)

Steps:

  • Bring 2 1/2 cups water, rice, and a pinch of salt to a boil in a saucepan. Reduce heat, cover, and simmer until grains are tender and water has been absorbed, 40 to 50 minutes. Remove from heat; let stand 10 minutes, then fluff with a fork.
  • Heat oil in a nonstick pan over high heat. Pat fish dry. Cook fish until golden brown on outside but still rare in center, 1 1/2 to 2 minutes a side. Let cool slightly.
  • Meanwhile, using tongs, toast nori sheets, one at a time, over the flame of a gas burner until they begin to shrivel and become fragrant.
  • Mix together lemon juice, soy sauce, and chile sauce in a bowl. Divide rice among 4 plates and drizzle with half of sauce. Arrange avocado and cucumber on top of rice. Break salmon into chunks and divide among plates. Drizzle with remaining sauce, and top with cilantro and chile. Break nori into pieces and serve on the side.

  • Make the teriyaki sauce: In a small saucepan bring soy sauce, mirin, sugar, garlic (if using) and ginger (if using) to a gentle boil. Lower the heat and simmer, uncovered, until slightly thickened, about 10 minutes. Remove from heat and set aside to cool.
  • Toast the nori & sesame seeds: Toast nori and sesame seeds in a hot skillet for a minute or two, stirring and tossing constantly just until sesame seeds start to get a little brown. Transfer to a bowl and set aside.
  • Make the sushi rice: Rinse the rice to remove excess starchy powder by putting the rice into a large bowl and covering it by an inch with water. Swish rice around with your hands. Pour off the cloudy water. Repeat 2 or 3 times more. Drain rice in a fine mesh colander and cook per package directions. (about 2 1/2 cups water per 2 cups rice and a 15 minute simmer, covered) Remove rice from heat and let it sit, covered, for 10 minutes.
  • Make seasoned rice vinegar: (skip this step if using store-bought seasoned vinegar) in a small saucepan bring rice vinegar, sugar and salt to a gentle simmer. Cook, stirring, until sugar and salt are dissolved. Transfer rice to a large nonmetallic bowl. Measure out 2/3 cup of seasoned rice vinegar and slowly pour it over the rice, while tossing and mixing it. Cover bowl with a clean cloth and set aside.
