JAN HAGEL COOKIES
A Dutch cookie... a favorite at Christmas

Steps:
- Cream the butter and sugar. Add the egg yolk and beat thoroughly. (This should be very creamy.) Add the flour and cinnamon and mix well.
- Spread thinly on 1 1/2 cookie sheets. Press down mixture with fingers, then score with a fork. Brush on a film of egg white mixed with a little water. Sprinkle the nuts over the top.
- Bake 1/2 hour at 300 degrees F (150 degrees C). Remove from oven and cut into squares or oblongs. When cold, remove from cookie sheet.

JAN HAGEL COOKIES: DUTCH BUTTERY SAND COOKIE WITH CINNAMON AND ALMOND
Learn how to make these Dutch Buttery Sand Cookies with Cinnamon & Almond named "Jan Hagel." These cookies date back to the 17th century, and are still being sold today! This recipe is probably the quickest recipe on my channel. You can put the dough together very quickly, and it will then just need a bit of time in the fridge before you can bake it! The cookie is unbelievably butter, has a nice cinnamon flavor, and is topped with pearl sugar and almonds. If you make it, it'll surely become a family favorite!

Steps:
- Make the dough
- Cut the cold butter into pieces.
- Add all the cookie dough ingredients to the food processor, and pulse until it resembles wet sand.
- Dump the contents out on a board, and with your hands shape it into a ball. You may have to put some pressure on it.
- Wrap the ball in cling film, and place it in the fridge for 45 Minutes
- Shape the dough and bake the cookies
- Preheat the oven to 160ºC (320F), in non convection mode.
- Roll the dough ball out until it's 3mm (⅛") on top of a sheet of parchment paper. The dough is a bit sticky, so frequently dust your rolling pin with flour, or put a light dusting of flour on the dough.
- Dust the top of the dough evenly with cinnamon. Make sure it's not too much.
- Cover the top with pearl sugar and almonds. You want to make sure it's evenly distributed, and there are no big gaps of cookie dough without toppings. Press the toppings down a little bit, to make sure they "stick" to the dough.
- Transfer the parchment paper with the cookie dough to a cookie sheet. If the dough feels really soft, you can refrigerate it for 30 minutes.
- Once the oven is preheated, bake the cookie on the middle rack for 20-25 minutes.
- Cutting and cooling the cookies
- When the cookie sheet comes out of the oven, cut the dough into rectangles or squares.
- Transfer to a rack to cool.

A friend gave me this recipe upon request after an international potluck. Don't know how authentic these are. But I do know that they sure are good.

Steps:
- Sift together flour, and salt in small bowl. Set aside.
- In a mixer bowl; beat butter on medium speed for 30 seconds, then add brown sugar and vanilla essence; beat until fluffy.
- Add egg yolk and beat just until combined.
- Stir flour mixture into brown sugar/butter mixture with a spoon, mix well.
- Pat this batter evenly in an ungreased 15"x10"x1" baking pan and brush top of dough with beaten egg white.
- Combine white sugar and cinnamon; sprinkle evenly over egg white. Sprinkle almonds over all.
- Bake in a 350 degrees F. oven for 15-18 minutes.
- Cut into 1 1/2 " diamonds while still warm. Cool in pan. Carefully remove with spatula.

JAN HAGELS
Janhagel is Dutch in origin. It's like a rich buttery cinnamon shortbread type base coated with nuts. Traditionally almonds are used, but you can use any nuts you like. The whole house will smell fabulous while these are baking!

- Preheat oven to 350, and spray the bottom of a 9 X 13 inch pan with non-stick spray (the recipe calls for a 10 X 15 jelly roll pan, but I didn't have enough dough for that).
- Beat butter, sugar and egg yolk with mixer until light and fluffy; blend in flour, cinnamon and vanilla.
- Pat mixture into the bottom of the pan.
- Beat egg white with water until frothy, and pour onto dough, spreading it all over the top. Sprinkle with chopped nuts.
- Bake 25 - 30 minutes or until lightly browned.
- Immediately cut into 1 X 2 strips, and remove them from the pan.

- Mix oil and sugar together. Add eggs, and vanilla.Optional: add OJ and mix.
- In a separate bowl, combine dry ingredients, and add to wet. Mix to form a dough. (If dough is too sticky, add more flour.)
- Add chips.Optional: add nuts or raisins or dried berries.
- Form 2-3 loaves, and place on ungreased cookie sheet. Bake for 30 minutesat 350 degrees.
- Slice while hot.
- For a crispier cookie bar, return sliced pieces to oven for 10 minutes.
- For fancier cookies, drizzle melted chocolate over bars when cool.
