Lots of fruit with a great subtle taste. Be careful on hot days! Fresh lime juice is key to getting the unique flavor of this punch. Don't skimp!

2 ½ cups pineapple juice
2 ½ cups orange juice
1 cup 151 proof rum (such as Bacardi®)
½ cup dark rum (such as Meyer's®)
¼ cup coconut-flavored rum (such as Malibu®)
¼ cup fresh lime juice
3 tablespoons grenadine syrup
1 orange, sliced
1 lime, sliced
1 lemon, sliced

Steps:

  • Stir pineapple juice, orange juice, 151 proof rum, dark rum, coconut-flavored rum, lime juice, and grenadine syrup together in a punch bowl. Float orange slices, lime slices, and lemon slices in the punch.

If you want a real Jamaica treat, there is nothing that beats rummed bananas. My friend Virginia Burke introduced them to me in the hills above Ocho Rios. She baked them on a traditional jerk pit. 4 ripe bananas, peeled
4 tablespoons brown sugar
4 teaspoons butter, in small pieces
1 cup orange juice
1 tablespoon dark rum
4 tablespoons coconut cream or ice cream, to serve

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • In a greased baking dish, place the bananas. Sprinkle with sugar and dot with butter. Mix orange juice and rum and pour around the bananas. Bake for 20 minutes.
  • Serve with a dollop of coconut cream or ice cream.

JAMAICAN BOOTY SHAKER

1/4 cup turbinado or demerara sugar
1/2 orange, sliced into half moons
1/4 pineapple, cored and sliced into wedges
4 ounces fresh orange juice
4 ounces pineapple juice
3 ounces Jamaican rum
1 cinnamon stick

Steps:

  • Preheat the oven to broil.
  • Pour the sugar in a shallow bowl and dip the orange slices and pineapple wedges, coating one side of each with the sugar. Transfer the fruit to a sheet tray, sugared-side up, and place under the broiler to caramelize, about 5 minutes.
  • Fill a cocktail shaker with ice and pour in the orange juice, pineapple juice and rum. Cover and shake. Strain into an ice-filled hurricane glass. Garnish with a caramelized orange slice, pineapple wedge, cinnamon stick and umbrella. Reserve the remaining fruit for snacking or more drinks.

1 cup pitted dates
1 cup dried figs
1 1/4 cups port wine
1 1/4 cups white rum, such as Appleton
1/2 cup sliced almonds
1/2 cup brandied cherries with their liquid (or substitute maraschino cherries)
1/2 cup currants
1/2 cup candied orange peel
1/2 cup dried prunes
1/2 cup dark raisins
1/2 cup golden raisins
1 orange, juiced
1 1/2 cups (3 sticks) unsalted butter, plus more for greasing cake pans
2 cups flour, sifted
2 cups brown sugar
1 teaspoon baking powder
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
Pinch of salt
1 teaspoon molasses
1 teaspoon browning
5 eggs

Steps:

  • Add the dates, figs, 1 cup of the port, 1 cup of the rum, the almonds, brandied cherries with their liquid, currants, candied orange peel, prunes and dark and golden raisins to a food processor. Process this mixture until the dried fruit is broken down into smaller chunks. Stir in the orange juice. Allow it to soak in the rum for at least 2 hours 30 minutes, but preferably for 2 to 3 days.
  • Preheat the oven to 350 degrees F. Grease 2 cake pans and line them with brown or wax paper.
  • In a stand mixer, combine the butter, flour, brown sugar, baking powder, allspice, cinnamon, cloves, nutmeg, salt, molasses, browning and eggs. Slowly add the rum-soaked fruit to the mixer a little at a time and mix to combine all of the ingredients.
  • Divide the cake batter between the prepared cake pans. Bake the cakes in a water bath by filling a large roasting pan halfway up with water and then setting the cake pans inside. Bake for 1 hour 30 minutes.
  • Sprinkle the remaining port and rum on top of the cakes and let them cool. These cakes will last for days stored in parchment paper and plastic wrap and for weeks when frozen.
