2 large, round dark rye bread loaves
2 8 ounce packages cream cheese, softened
1/4 pound butter, softened
1 tablespoon dry mustard
1/4 to 1/2 bottle ale
1 medium white onion, chopped

Steps:

  • Slice the top off rye bread, reserve tops. Scoop out the inside of bread and make a bowl. In an electric mixer combine cream cheese and butter. Add mustard and onion. Fold in beer. Mix at low speed. Make sure not to add too much beer because it will become too soft. With a spatula transfer dip to the bread bowl. Cover with the bread lid. Cover with plastic wrap and refrigerate overnight.;

1/2 cup loosely packed fresh basil leaves
1/4 cup loosely packed fresh parsley leaves
4 scallions, green parts only, coarsely chopped
1/4 cup finely grated Parmesan
2 oil-packed anchovy fillets, drained
1/2 cup mayonnaise
Freshly ground black pepper

Steps:

  • In a food processor, pulse the basil, parsley and scallions until finely chopped. Add the cheese and anchovies and process to a paste consistency. Add the mayonnaise and puree until smooth. Season with pepper.

This bowl isn't just a green goddess bowl because of the name of the dressing -- it also makes you feel like a goddess after eating it! Use whatever herbs and veggies you have available in every shade of green. Cilantro or dill can be substituted for basil. Swap out the lemons with limes or use sour cream instead of yogurt... the possibilities are endless!

1 cup basil leaves, tightly packed
3/4 cup full-fat Greek yogurt
3 tablespoons chopped chives
2 tablespoons chopped parsley
1 tablespoon lemon juice
1 teaspoon lemon zest
3 scallions, whites only, chopped (reserve greens for topping)
1 small jalapeno, halved, seeds optional
1 small clove garlic
Kosher salt
2 tablespoons olive oil
3 cups broccoli florets (about 5 ounces)
1 tablespoon olive oil

1 cup sugar snap peas, cut in half on the bias (about 3 ounces)
3 ounces asparagus, cut into thirds (about 1 cup)
4 ounces thin rice noodles
1 small cucumber, thinly sliced (about 2 ounces)
2 tablespoons thinly sliced scallion greens (from reserved greens)
1/2 ripe avocado, sliced

Steps:

  • Preheat the oven to 425 degrees F.
  • For the dressing: Add the basil, yogurt, chives, parsley, lemon juice, lemon zest, scallion whites, jalapeno, garlic and 3/4 teaspoon salt to a mini food processor. Pulse until roughly combined (about 10 times), scraping down the sides halfway through. With the motor running, drizzle in the oil until the dressing is smooth and creamy, scraping down the sides occasionally. Transfer the dressing to a small bowl, cover with plastic wrap and keep refrigerated until ready to serve.
  • For the toppings: Toss the broccoli florets, oil and 1/4 teaspoon salt on a baking sheet. Bake until some parts are charred but still bright green, about 10 minutes. Set aside to cool, about 10 minutes.
  • Bring a medium pot of salted water to a boil. (This pot will be used to cook the snap peas, asparagus and noodles.) Prepare a large bowl of ice water.
  • Add the snap peas to the pot of boiling water and cook until crisp but still bright green, about 30 seconds. Remove with a slotted spoon and plunge them into the bowl of ice water. Drain when fully cooled, about 1 minute.

Green Goddess is a California classic. It makes a great dip for crudités and a wonderful dressing for robust lettuces like romaine hearts, but it's too thick and intense for delicate spring mixes. Although I've made the anchovies optional, I recommend them because they add depth to the flavor. If salt is an issue for you, leave them out.

1 cup parsley leaves
1 cup packed watercress or spinach leaves, stemmed
2 tablespoons tarragon leaves, rinsed
3 tablespoons minced chives
1 garlic clove, roughly chopped
2 anchovy fillets, preferably salt-packed
3 tablespoons fresh lemon juice
1 tablespoon plus 1 teaspoon Champagne vinegar or sherry vinegar
1/2 cup canola oil or grapeseed oil
1/2 cup mayonnaise, preferably homemade (see note)
Kosher salt
freshly ground pepper

Steps:

  • In a blender, combine the parsley, watercress or spinach, tarragon, chives, garlic, anchovies, lemon juice, vinegar and canola or grapeseed oil. Blend until smooth, about two minutes. Add the mayonnaise, and blend again until smooth. Season to taste with salt and pepper.
