This is a delightful, cool, and crisp salad with healthy fruits, vegetables, and nuts that is a great accompaniment to any entree. It's a real favorite with anyone who tries it. This is a fun recipe as you can get creative with it. I have even made it with out the sunflower seeds, and it was still delicious.

1 cup mayonnaise
3 tablespoons cider vinegar
3 tablespoons white sugar
2 crowns broccoli, cut into bite-size pieces
1 cup seedless red grapes, halved
¾ cup chopped walnuts
¼ red onion, finely chopped
¼ cup sunflower seed kernels
½ cup sweetened dried cranberries (such as Craisins®)
¼ cup bacon bits

Steps:

  • Whisk mayonnaise, cider vinegar, and sugar together in a small bowl until sugar dissolves and the dressing is smooth.
  • Toss broccoli, grapes, walnuts, red onion, sunflower seeds, cranberries, and bacon bits together in a large bowl. Drizzle dressing over the salad and gently fold so ingredients are evenly coated.
  • Cover bowl with plastic wrap and refrigerate 3 to 4 hours. Stir before serving.

4 cups broccoli florets
1/2 cup red onion, finely chopped
1 cup red grapes, seedless
1/2 cup mayonnaise
1/4 cup honey
1/2 cup bacon, crisped and crumbled
1/4 cup sunflower seeds

Steps:

  • Slightly steam the broccoli.
  • Put steamed broccoli, onion, and grapes into medium sized serving bowl.
  • In a small bowl, mix together the mayonnaise and honey.
  • Gently stir the dressing mixture into the broccoli mixture.
  • Chill until serving time.
  • Gently stir in bacon and sunflower seeds just before serving.

12 slices crumbled cooked bacon
1/4 cup diced red onion
2/3 cup raisins
1/3-1 cup mayonnaise
1 tablespoon sugar
1 tablespoon vinegar (I use red wine vinegar)

Steps:

  • Combine all salad ingredients and then toss with dressing ingredients that have already been mixed together.
  • Let sit in fridge at least 2 hours. I always like it better the next day.

2 bunches broccoli, top and stems
3/4 cup raisins
1/2 cup chopped red onion
1 cup mayonnaise
1 tablespoon vinegar
1/3 cup sugar
1/2 lb bacon, fried and crumbled
3/4 cup dry roasted peanuts or 3/4 cup salted peanuts

Steps:

  • Wash and cut broccoli into small pieces. If heavy stems are used, peel stem and cut inner part into small pieces.
  • Combine mayonnaise, vinegar, and sugar, and mix well, then add to broccoli.
  • Mix in bacon.
  • Add peanuts last.
