4 cups lettuce, shredded
8 ounces solid white tuna, water-packed, chunks drained flaked
1 medium red onion, very thinly sliced
1 tablespoon capers, rinsed drained
3 tablespoons balsamic vinegar
1 tablespoon olive oil
1 teaspoon olive oil
1 garlic clove, minced
1 teaspoon dried oregano
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
1 loaf Italian bread (8 ounces)
2 medium tomatoes, sliced

Steps:

  • To prepare salad, in medium bowl, combine lettuce, tuna, onion and capers; set aside.
  • To prepare dressing, in small jar with tight-fitting lid or small bowl, combine vinegar, oil, garlic, oregano, pepper and salt; cover and shake well or, with wire whisk, blend until combined.
  • Pour dressing over salad; toss to combine.
  • Split bread lengthwise almost all the way through; spread open.
  • Line bottom half of bread with tomatoes; top evenly with salad mixture.
  • Replace top half of bread to enclose.
  • Wrap tightly in plastic wrap; refrigerate 2 hours, until chilled and flavors are blended.
  • Cut loaf crosswise, through plastic wrap, into 4 equal portions.
  • SERVING (ONE-FOURTH OF LOAF) PROVIDES: 1 Fat, 3 1/4 Vegetables, 1 Protein, 2 Breads.

An Asian flavor that is very unique and delicious. This is one of those recipes that looks fancy but is actually quite easy to prepare. I used pre-bagged mixed greens, found near the bagged salads in the grocery store. You can make this in your broiler or on the grill!

1 1/2 cups mesclun or 1 1/2 cups other mixed greens, torn
2 (3/4 lb) tuna steaks
1 clove garlic, minced
1 teaspoon any strong mustard
1 teaspoon ground ginger
1/2 teaspoon sesame oil
1/2 teaspoon black pepper
1/4 cup dry white wine (or water)
1/4 cup soy sauce
1 1/2 tablespoons lime juice

Steps:

  • Preaheat your grill or broiler.
  • Mix together all the ingredients except the tuna and greens.
  • Use a sharp, thin-bladed knife to make a small incision on any side of the tuna steak, creating a pocket, being careful not to cut through to the other side.
  • You can also make a small cut and then either wiggle the knife around gently or just start slowly easing the inside apart to create a large pocket.
  • Place the tuna in the soy mixture, covering each side.
  • Remove tuna from liquid, letting excess sauce drip off.
  • Toss the greens with the sauce, drenching it in the liquid.
  • Stuff the tuna pocket with the greens and seal the opening with toothpicks.
  • Grill or broil the tuna, turning once, about 5 minutes per inch of thickness, or however well-done you like your tuna.

1/3 cup crisco canola oil
1/2 cup chopped pimento stuffed olive
1/2 cup chopped ripe black olives
1/4 cup fresh flat-leaf Italian parsley
1 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
2 teaspoons lemon juice
1 teaspoon minced garlic
1/4 lb sliced salami
1/4 lb sliced mozzarella cheese
1 (12 ounce) jar roasted red peppers, drained
1/4 lb sliced pepperoni

Steps:

  • CUT bread in half horizontally. Scoop out bottom and top, leaving a ½-inch thick shell.
  • COMBINE oil, green olives, ripe olives, parsley, oregano, pepper, crushed red pepper flakes, lemon juice and garlic in a medium bowl. Stir to mix well.
  • SPOON half the olive mixture into the bread shell. Top with salami, cheese, roasted red peppers, pepperoni and the remaining olive mixture. Cover with bread top. Wrap tightly in plastic wrap and chill at least 3 hours or overnight. Cut loaf into wedges. Serve.

4 hamburger buns with sesame seeds
1/4 lb mixed salad green
1 lemon, juice of
2 (6 ounce) cans tuna in vegetable oil
1 teaspoon capers, rinsed well
2 green olives, pitted and diced
1 stalk celery, sliced
3 tablespoons olive oil
salt and pepper

Steps:

  • Drain the tuna and crumble it in a salad bowl. Slice the celery and add it to the tuna, together with the capers and the olives. Season the mixture with 3 Tbsp of olive oil, season to taste with salt and pepper, and mix well.

Though an American cook (or even a French one) usually adds mayonnaise to the bowl when dressing canned tuna for a sandwich, Italian cooks invariably anoint theirs with olive oil instead. Capers, olives and anchovy often join the festivities; here they are combined with garlic and parsley to make a zesty salsa verde. Choose the best quality Italian or Spanish canned tuna-the extra cost is well worth it. The other essential ingredient is freshly baked bread, like a good crisp baguette or crusty ciabatta roll.

1 cup Italian parsley leaves, washed and dried
1/2 cup extra-virgin olive oil, plus more as needed
2 garlic cloves, minced
1/4 cup roughly chopped green olives, such as Castelvetrano
3 or 4 anchovy fillets, chopped
1 tablespoon chopped capers
Zest of 1 lemon
Pinch of crushed red pepper
Salt and pepper
1 baguette or 4 ciabatta rolls
Handful of lettuce leaves, arugula or watercress
8 ounces best quality oil packed tuna, drained, in large chunks
4 hard-boiled eggs
Salt and pepper
1 serrano chile, thinly sliced, optional

Steps:

  • Make the salsa verde: Whiz parsley leaves and 1/2 cup oil in a food processor or blender to a pesto-like consistency, then transfer to a small bowl. (Alternatively, chop parsley by hand and combine with oil.) Add garlic, chopped olives, anchovies, capers, lemon zest and red pepper to parsley mixture and stir well. Season with salt if necessary and freshly ground black pepper to taste. Thin with more oil as desired.
  • Cut baguette crosswise into 4 equal pieces, then split each lengthwise with a serrated knife. (If using rolls, split each lengthwise.) For each sandwich, lay bread flat, crust side down. Spread cut sides with 2 tablespoons salsa verde. Put a few lettuce leaves on 1 piece of bread and arrange 2 ounces of tuna over lettuce. Top tuna with 1 egg, quartered. Season egg lightly with salt and pepper. Add sliced serrano chile, if using. Drizzle with a little more salsa verde, then press sandwich closed.
