MOM'S NUT HORNS



Mom's Nut Horns image

This is an old family recipe. We make them every Christmas and there are never enough. The dough is easy to work with and they are easy to make!

½ pound butter
2 cups all-purpose flour
¾ cup sour cream
1 egg yolk
¾ cup finely ground walnuts
¾ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Cut butter into flour in a bowl using 2 knives or a pastry blender until the mixture resembles coarse crumbs. Add sour cream and egg yolk; mix well. Shape the dough into a ball. Wrap in plastic wrap and refrigerate, 8 hours to overnight.
  • Combine walnuts, sugar, and cinnamon in a small bowl.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 2 baking sheets.
  • Cut dough into 4 equal pieces. Roll each piece into a 1/8-inch thick circle on a lightly floured surface. Spread 1/4 of the walnut mixture on each circle; cut each circle into 12 wedge-shaped pieces with a pizza wheel.
  • Shape each piece of dough into a crescent by rolling dough from the wide end of the wedge into the center. Transfer cookies carefully to the baking sheets.
  • Bake in the preheated oven until golden, 20 to 25 minutes. Watch cookies carefully as they bake; their bottoms tend to brown faster than their tops.

1/4 ounce active dry yeast (regular, not rapid rise)
3 tablespoons warm water (110 to 115 degrees F)
4 cups flour
1/2 teaspoon salt
1 1/4 cups butter, softened
3 egg yolks
1/2 cup sour cream
1 teaspoon vanilla extract
powdered sugar
3 egg whites
1 cup granulated sugar
1/2 cup finely chopped pecans
1 teaspoon vanilla extract
powdered sugar

Steps:

  • For dough: Dissolve yeast in warm water. Sift flour; add salt. Add butter, eggs yolks, sour cream.
  • , vanilla and dissolved yeast mixture to flour mixture; work with hands until a moist dough forms. Cover and refrigerate 1 to 2 hours, or overnight.
  • Divide dough into eight pieces. Dust rolling pin and work surfaces with powdered sugar. Working with one piece of dough at a time, roll out dough to about 1/8 inch thickness (slightly thinner than pie dough, more like noodle dough).
  • Cut dough into a circle approximately 8 inches in diameter. (You may want to use a stainless steel bowl and just press out a circle). Refrigerate dough circle. Continue rolling and cutting remaining dough, refrigerating circles as you go. Re-roll leftover dough pieces and cut into circles.
  • Cut each circle of dough into 16 triangular pieces or wedges.
  • For filling: Beat egg whites until foamy. Gradually add sugar; beat until stiff. Fold in pecans and vanilla.
  • Spread 1/2 teaspoon filling on each triangle of dough; roll up, beginning with largest end. Place roll, small end down, on greased cookie sheet.
  • Bake in a 350 degrees F oven 10 to 12 minutes, or until slightly browned on bottom. Immediately transfer to racks to cool.
  • Sift powdered sugar over cooled cookies. Store in airtight container. Yield: About 10 dozen cookies.

BUTTERHORN CHRISTMAS COOKIES

This recipe has been in our family for many years. They are a tad bit tedious but very much worth it.

2 cups flour
1 cup salted butter
1/2 cup sour cream
1/4 teaspoon salt
1/4 teaspoon baking powder
2 large eggs
2/3 cup walnuts, chopped fine
1 cup sugar
3/4 teaspoon cinnamon

Steps:

  • In large bowl; measure flour, butter, sour cream, salt, baking powder, ½ cup sugar, and 1 egg yolk (place egg white in small bowl set aside)
  • With spoon stir until blended and mixture holds together (also works in the mixer, just be sure to cream the butter first).
  • Shape into ball and wrap in plastic wrap chill 2-3 hours until firm.
  • In small bowl stir walnuts cinnamon and ½ cup sugar set aside.
  • Preheat oven to 350°
  • Roll out 1/3 of dough to 1/8-thick; use 10-inch round plate as guide.
  • Spread egg white with pastry brush on circle.
  • Cut into 12 equal wedges, using a pizza cutter to do this makes this step a lot easier.
  • Spread walnut mixture and roll starting at curved edge.
  • Place cookies point side down about 1 1/2- inches apart.
  • In cup beat 1 egg and ½ teaspoon sugar.
  • Brush cookies.
  • Bake 15-20 minutes.

HOMEMADE CREAM HORNS



Homemade Cream Horns image

This is a delicious dessert everyone will love. With less sugar than store-bought, it's also a smarter choice. The cream filling is like a sweet heavenly cloud. You won't be able to eat just one. Be sure to bring the recipe with you to parties because everyone will want it!

1 sheet frozen puff pastry, thawed
4 ounces cream cheese, softened
3 tablespoons white sugar
2 tablespoons lemon juice
1 tablespoon vanilla extract
1 (8 ounce) container frozen whipped topping, thawed
1 tablespoon confectioners' sugar, or more as needed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Unfold puff pastry sheet and use a pizza cutter to slice pastry into 6 even strips. Wrap each strip around a conical cream horn mold starting at the pointed end. Place rolled molds on a baking sheet with the end of the dough strip facing down.
  • Bake in the preheated oven until golden brown, about 12 minutes.
  • Remove horns from oven and allow to cool to room temperature, about 20 minutes, before carefully removing molds.
  • Beat cream cheese and sugar together in a bowl using an electric mixer on medium speed for about 1 minute. Add lemon juice and vanilla extract and beat until blended. Fold in whipped topping until filling is smooth and fluffy.
  • Fill a pastry bag with cream filling and pipe filling evenly into each horn. Dust horns with confectioners' sugar. Refrigerate 30 minutes before serving.

This cookie is a traditional favorite on the family cookie platter. Have time to make this cookie, as the dough needs to be chilled 4 hrs-overnight.

2 cups flour
1/2 lb margarine
1 egg yolk
3/4 cup sour cream
3/4 cup sugar
1 teaspoon cinnamon
3/4 cup walnuts, chopped
1 egg white

Steps:

  • Cut margarine into flour.
  • Add egg yolk and sour cream.
  • Shape into 4 balls and let them chill in the refrigerator (usually overnight).
  • Roll balls into a circle so the dough is thin.
  • Combine the sugar, cinnamon, and walnuts in a separate bowl.
  • Sprinkle the dough with the nut mixture.
  • Cut the dough into 16 triangle pieces.
  • Roll each section.
  • Once placed on cookie sheet, brush with the egg white and if desired, sprinkle a little bit of the nut mixture on top.
  • Bake 25 min at 350.
