Risi e Bisi (rice and peas) is a classic, comfort food style Italian recipe ready in about 30 minutes!

Number Of Ingredients 11

8 - 10 cups low-sodium vegetable broth OR water (or a combo)
2 bay leaves
2 tablespoons olive oil or 1/4 cup water
1 clove garlic, minced
2 medium leeks, thinly sliced or 1 medium onion or 2 shallots, diced
2 cups (1 lb.) Arborio rice (Carnaroli or Vialone Nano works too)
4 cups (or 2 10oz. packages) peas, fresh or frozen
1/4 cup flat leaf parsley, chopped and loosely packed
mineral salt + pepper, to taste
1/4 - 1/3 cup nutritional yeast, or to taste (optional)
almond parmesan, for topping (not shown)

Steps:

  • After sauteing the leeks and rice as above.
  • Add at least 7 - 8 cups broth, peas, bay leaves, bring to a boil, cover and cook for 20 - 30 minutes until rice is tender.
  • Remove from heat add in parsley. Let set a few minutes and serve as desired.

This is one of the first solid food entrees for many Italian children. It is one of my favorites and I continue to eat it today, at 35 years and counting!

Number Of Ingredients 7

1 quart chicken stock (recommended: Kitchen Basics brand) available in paper box containers on soup aisle
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 cloves garlic, chopped
1 rounded cup Arborio rice
Salt and pepper
1 cup frozen peas
1/2 cup grated Parmigiano-Reggiano or Romano cheese, a couple of handfuls

Steps:

  • Place chicken stock in a small pot and warm over low heat.
  • Heat a medium sized skillet over medium heat. Add extra-virgin olive oil 2 turns of the pan, and garlic. Saute garlic 1 minute, then add Arborio. Toast the Arborio rice 2 minutes, then ladle in 1/3 of the stock. Bring to a bubble. Stir rice occasionally, allowing the rice to get starchy and the stock to cook into the rice. Add more stock when rice starts to become dry. Continue stirring and ladling broth until rice is al dente, 22 minutes. Stir in peas and cheese and season with salt and pepper, to your taste. Serve immediately.

I threw this together last night to see what I could do with the bits and bobs I had floating around in my fridge. I am not claiming it is at all authentic Italian but the ingredients I had around pointed in that direction. I used jasmine rice because that is what I had around but any long grain should work. My microwave is a 700 watt variety to adjust as needed for your own microwave.

1 cup jasmine rice
3/4 cup onion, diced
1 cup mushroom, sliced
2 garlic cloves, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried parsley
1 1/2 cups chicken stock
1/2 cup dry white wine
1 tablespoon extra virgin olive oil
1/3 cup parmesan cheese

Steps:

  • Put all ingredients except the parmesan cheese into a microwave proof dish.
  • Cover and microwave for 20 minutes or until the rice is tender and liquid absorbed. Be very careful when uncovering because the steam will be very hot. I learned this the hard way when making this dish and ended up with a very bad steam burn.
  • Stir in parmesan.

3 1/2 cups water or stock
1 1/2 teaspoons butter or oil
Salt and freshly ground black pepper

Steps:

  • Place all ingredients in a large glass measuring or any microwave safe bowl. Note: the rice expands during cooking, so be sure to choose a container that is large enough. Microwave on high, uncovered, for 10 minutes. Microwave on medium-low, uncovered, for 15 minutes. Do not stir the rice at any time during the cooking process. Season with salt and fluff with a fork just before serving.

I got this recipe with the cookbook that came with my first Microwave and I've been using it ever since! The rice comes out perfect every time. No muss, no fuss and can be served in the casserole dish you cooked it in. You can also use this method for brown rice but increase your cooking time a little.

1 cup white rice (not minute rice)
2 cups hot water
1 teaspoon butter or 1 teaspoon margarine
1/8 teaspoon salt

Steps:

  • Using a 2 quart casserole dish with lid, put rice, hot water, butter and salt in dish. Stir. (I put my casserole dish on a plate in the micro as sometimes the water boils over a little. Saves cleanup after).
  • Cover, and microwave on high power 5 minutes. Stir with fork (careful watch the steam!)
  • Cover and put back in microwave and cook on medium this time for 15 minutes.
  • Remove lid (careful again!) and fluff with fork.
  • Let stand 2-3 minutes.
  • Serve.

2 cups long grain rice
3 1/2 cups canned broth or 3 1/2 cups homemade stock
1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil
salt

Steps:

  • Place all ingredients except salt in a large microwave safe bowl.
  • Rice doubles in size during cooking so choose a container large enough to accommodate final product.
  • Microwave uncovered on high for 10 minutes.
  • Then microwave uncovered on medium-low for 15 minutes.
  • Do not stir rice at anytime during cooking process.
  • Season with salt and fluff with a fork before serving.
