Pizzagaina or Pizza Rustica is a tall, rich Italian rustic ham, salami and cheese pie with pizza crust traditional for Easter time.

500 g flour ((17.5 oz))
1 cup water
3 tbsp extra virgin olive oil + more to grease the pan
1 tsp yeast
1 tsp salt
500 g ricotta ((17.5 oz))
5 oz Provolone cheese
5 oz Salami
5 oz Ham
5 oz Parmesan
2 oz Pecorino
4-5 eggs
Salt (, pepper to taste)

Steps:

  • Dissolve yeast in lukewarm water. Egg flour, extra virgin olive. Knead well by hand or using a mixer. Lastly add salt.
  • Let rise at room temperature for 2-3 hours.
  • Cut all the meats and the cheese into cubes. In a bowl beat the eggs with a bit of salt and pepper. Remember cold cuts already contain salt. Add salami and cheese to the egg mix.
  • Grease and flour a round baking pan with high edges.
  • Divide the dough in 2 pieces (one slightly larger than the other).
  • Roll a larger piece approx 1/4 inch thick. Arrange in the pan.
  • Now pour the filling and cover with another layer of dough. Make sure to close the edges perfectly, in order to prevent the egg mixture from spilling. With a sharp knife, cut the excess dough from around the brim of the pan. Fold the edges inside.
  • Bake in a preheated oven at 350 °F for at least 50-70 minutes. Let cool completely.

DOUGH
ok, I cannot tell a lie...I used Pillsbury ready pie crust to save time. But by all means feel free to make your own.
1 packet of active dry yeast
1 Tbsp sugar
1 tsp salt
2 c warm water
5-6 c all-purpose flour
2 Tbsp olive oil
FILLING
1/2 lb sweet Italian sausage (or hot if you prefer) removed from the casing
3 eggs, beaten
2 eggs, hard-boiled and chopped
1 lb ricotta cheese
1/3 lb fresh mozzarella, cut into bite size pieces
1/4 c grated Parmesan or Romano cheese
1/4 lb prosciutto (or American ham if you prefer), sliced and cut into 1 inch pieces
1/4 lb genoa salami, sliced and cut into 1 inch pieces
1/4 lb pepperoni, sliced and cut into 1 inch pieces
parsley flakes and pepper, to taste (you can add a little salt, to taste but remember the meats are salty so don't add too much salt)
1 egg yolk for egg wash

Steps:

  • 1. For the dough... In a large bowl, dissolve in two cups of water, yeast, sugar, and salt and gently blend.
  • 2. After the yeast has dissolved, add 5 cups of flour and 2 Tbsp olive oil. Blend with a spoon until the dough starts to form.
  • 3. Transfer dough to a floured surface and knead for about 5 to 10 minutes. (Add additional flour if the dough is too sticky.)
  • 4. Place dough in a large bowl and coat with a little olive oil. Cover and let rise for 2 hours.
  • 5. While the dough is rising, start to prep your ingredients by cutting meats and grating cheese. Brown the sausage breaking it up into small pieces with a wooden spoon.
  • 6. In a large bowl, add the three beaten eggs, ricotta, mozzarella, Parmesan, chopped eggs, meats, and seasonings. Mix well and set aside.
  • 7. After the dough has risen, punch it down and divide it into two pieces.
  • 8. Roll out one piece of the dough.
  • 9. Place the rolled out dough in a 10-inch springform pan sprayed with Pam. The dough should hang about an inch over the sides.
  • 10. Pour the filling into the pastry crust - mine filled to about an inch from the top.
  • 11. Roll the second piece of the dough and place the round crust on top of the filling. Cutaway any excess dough.
  • 12. Crimp around the edges - I used a fork. Cut two strips of leftover dough to make a cross. Place the dough cross on top of the Pizza Chena. Cut slits in dough to vent.
  • 13. Beat the egg yolk and brush on top of the Pizza Chena.
  • 14. Bake at 350 degrees for 60 - 75 minutes.
  • 15. Bake until golden brown and let cool. NOTE: Pizza Chena is best when made a day or two ahead of time. Let it cool and then store in the fridge. Bring to room temp before serving!

A deep-dish cousin to quiche that's packed with Italian deli meats and cheeses like prosciutto, pepperoni, soppressata, mozzarella and provolone, this rich pie, also called Easter pie, is traditionally made on Good Friday and served on the holiday to celebrate the end of Lent. This version came to The Times from Carlo's Bakery, in Hoboken, N.J., of "Cake Boss" fame, and it is the only savory item the bakery makes. It's typically eaten at room temperature, but the staff at Carlo's enjoys it warm right out of the oven.

6 cups all-purpose flour, plus more as needed
1/4 teaspoon salt
1 pound chilled salted butter, cut into large pieces
5 large eggs, beaten
12 ounces prosciutto, in 1/4-inch dice
8 ounces boiled ham, in 1/4-inch dice
8 ounces pepperoni, in 1/4-inch dice
8 ounces soppressata, in 1/4-inch dice
8 ounces mozzarella, in 1/4-inch dice
8 ounces provolone, in 1/4-inch dice
2 pounds ricotta
4 ounces grated pecorino Romano
10 large eggs, beaten
1 teaspoon pepper
1 large egg, beaten, for brushing crust

Steps:

  • For the dough: In a large bowl, whisk together 6 cups flour and the salt. Using a pastry cutter, large fork, or two knives, cut the butter into the flour until the mixture resembles coarse crumbs. Add eggs and knead for 1 minute. Add about 1 1/4 cups ice water, a little at a time, to form a cohesive dough. Knead the dough on a lightly floured surface until it forms a large smooth ball, about 5 minutes. Cover with plastic wrap and set aside for 30 minutes.
  • For the filling: Mix the meats, cheeses, the 10 eggs and pepper in a large bowl.
  • Heat oven to 350 degrees. Divide the dough into two pieces: two-thirds for the bottom crust and one-third for the top. On a lightly floured surface, roll out the larger portion of the dough into a rectangle to line the bottom and sides of a 10-by-15-inch glass baking dish, with some overhang. Add the filling and smooth it lightly. Moisten the edges of the dough with a little water.
  • Roll out the remaining dough to cover the top of the dish with some overhang. Trim off excess dough and crimp the edges to seal. Poke several sets of holes across the top with a fork. Bake for 45 minutes. Remove from the oven and brush top and edges with the beaten egg, then return to the oven until golden brown, another 45 minutes. Let pie cool completely before serving.

Pizzagaina is Italian Easter pie. A very traditional savory dish that is a much-anticipated treat for Easter. It can be quite an undertaking to prepare, but I've got a simplified recipe here that the Italian Nonnis may curse me for but tastes great!

4 unbaked 9-inch pie crusts, divided
2 (16 ounce) containers whole-milk ricotta cheese
1 cup shredded mozzarella cheese
2 eggs
¼ pound pepperoni
½ pound sweet capicola (coppa)
½ pound hot capicola (coppa)
1 egg white, slightly beaten

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Press 1 pie crust each into the bottom of two 9-inch pie pans.
  • Mix ricotta cheese, mozzarella cheese, and eggs together in a large bowl. Roughly chop the pepperoni, sweet capicola and hot capicola; fold in chopped meats. Spoon half the mixture into each of the 2 prepared pie pans.
  • Top each pie with a pie crust, crimping the edges together creating a seal. Brush the top of each pie with egg white.
  • Bake in the preheated oven until crust is golden brown, 45 to 60 minutes. Let cool for about 10 minutes before serving.

My college roommate's family made this every Easter and sent a whole pie to us. I loved it and asked for a recipe but was told I could not have it. So I tweaked a few recipes I found myself, and my final result is a dish that was better than the original recipe. Enjoy!

½ pound bulk Italian sausage
olive oil
1 (1 pound) loaf frozen bread dough, thawed
½ pound sliced mozzarella cheese
½ pound sliced cooked ham
½ pound sliced provolone cheese
½ pound sliced salami
½ pound sliced pepperoni
1 (16 ounce) container ricotta cheese
½ cup grated Parmesan cheese
8 eggs, beaten
1 egg
1 teaspoon water

Steps:

  • Cook and stir Italian sausage in a skillet over medium heat, breaking the sausage into crumbles as it cooks, until well browned, 5 to 8 minutes. Drain excess grease; set sausage aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Oil the bottom and sides of a 10-inch springform pan with olive oil.
  • Cut 1/3 of the dough off the loaf and set aside under a cloth. Form the remaining 2/3 dough into a ball and roll into a 14-inch circle on a floured work surface.
  • Line the springform pan with rolled dough, allowing dough to hang over the edge by 2 inches all around.
  • Layer half the cooked Italian sausage, half the mozzarella cheese, half the ham, half the provolone cheese, half the salami, and half the pepperoni into the pie crust.
  • Spoon and spread half the ricotta cheese over the layers of meat and cheeses.
  • Sprinkle half the Parmesan cheese over the ricotta.
  • Pour half the 8 beaten eggs over the layers; continue layering the remaining meats, sliced cheeses, ricotta cheese, and then Parmesan cheese.
  • Pour remaining beaten eggs over the last layer of Parmesan cheese.
  • Roll out remaining piece of bread dough to a circle about 12 inches in diameter; lay the piece over the pie to form the top crust. Roll and pinch the bottom crust overhang over the top crust to seal in the filling.
  • Beat 1 egg with water in a small bowl; brush the top of the pie with egg wash.
  • Bake pie in the preheated oven until the crust is golden brown and the filling is set, 50 to 60 minutes. A toothpick inserted into the middle of the crust should come out without raw egg.
  • Allow pie to cool in the pan for at least 25 minutes before releasing the spring and removing pie from the pan. Transfer to a serving platter and cut into wedges for serving.

Pizza Chena:

When looking for recipes for pizza chena, you'll find that many use the term interchangeably with pizza rustica, meaning "rustic pie." Both are traditional Easter savory meat and cheese pies that can be made with either a pastry or bread dough crust. Pizza chena, mispronounced by some Italian-Americans as "pizza gaina," seems like an appropriate name since when you eat it you "gain-a" lot of weight. Pizza chena is a Neapolitan dialect term meaning "full pie," a massive, two-crusted savory pie filled with Italian meats, cheeses and eggs.Though traditionally associated with Easter, pizza chena can be enjoyed any time of the year. 1 tablespoon sugar

1/2 lb capocollo ham, thinly sliced (a cured Italian cold cut with spices)
1/3 lb genoa salami, thinly sliced
1/3 lb pepperoni, thinly sliced
1 lb fresh basket cheese
1/2 lb mozzarella cheese, thinly sliced
1 dozen egg (8 will be beaten, 4 will be hard boiled)
1/3 cup minced fresh flat leaf parsley
15 -20 cranks fresh ground black pepper
1 egg beaten with 1 teaspoon water for egg wash

Steps:

  • In a large bowl, dissolve in 2 cups of warm water, yeast, sugar and salt. Using a spoon, gently blend. Add 5 cups of all-purpose flour and 2 tablespoons of olive oil to start. Blend with a spoon just until the dough starts to form, then using your hands, transfer dough to a floured surface.
  • Knead well, adding flour if it's too sticky, until the dough becomes springy and smooth. It should take a good 5 to10 minutes of vigorous kneading. It will be soft and silky when done.
  • Place the dough ball in a large, clean bowl coated with olive oil and rub some olive oil on top of the dough. Cover with a clean, dry dishtowel and let rise in a warm, draft-free area until doubled in size (at least 2 hours).
  • Meanwhile, fill a large heavy-bottom saucepan halfway with water. Bring to a light, rolling boil, and place 4 room-temperature eggs in the water. Maintaining a light, rolling boil, cook them for 18 to 20 minutes. Using a slotted spoon, remove the eggs, place in a colander, and run under cool water. Tap the eggs against the counter top to crack the shells. Remove the shells, and rinse the boiled eggs under cool water. Slice thinly and set aside.
  • Meanwhile, heat 1 teaspoon olive oil in a large skillet over medium heat. Remove the sausage from its casing and add to the pan. Cook for 5 to 6 minutes, or until browned and crispy. Transfer to a small bowl and set aside.
  • Place oven rack in center of oven and preheat to 350 degrees. Brush the inside surface of a 10-inch-by-3-inch spring form pan with olive oil.
  • Once the dough is risen, punch it down to release air bubbles. Transfer dough to a lightly floured surface, divide in half, and roll one half into a 12-inch round. Transfer the dough to the spring form pan. Using your hands, fit the dough snugly in the pan, gently stretching it to hang 1 inch over the edge.
  • In a medium bowl, whisk together the 8 eggs, parsley and black pepper.
  • Fill the inside of the dough with alternating layers of sliced meats, cheeses and sliced hard-boiled eggs. After 5 to6 layers, pour half of the egg mixture over the filling, allowing it to seep down. Continue layering the meats and cheeses, then pour the remainder of the egg mixture evenly over the top. You should have enough for 10 to12 layers.
  • On a lightly floured surface, roll out the second half of the dough to a 12-inch round. Place the dough over the filling, and using a sharp knife, trim excess dough until it just meets the rim of the pan. Using your fingertips, pinch the edges of the dough together, and gently roll the bottom layer over the top layer, creating a seal. Then pinch the dough between your thumb and index finger creating a slightly fluted edge all around. Brush the top of pie with the egg wash.
  • Bake pie for 60 to 75 minutes, or until the crust is golden brown. Remove from the oven and let cool 20 to 25 minutes. Release the spring and transfer the pie to a serving plate. Cut into wedges and enjoy at room temperature.
  • Leftover pizza chena can be stored in an air-tight container in the refrigerator for 5 to 7 days. Individual slices also can be wrapped tightly in aluminum foil and placed in a heavy-duty freezer bag or plastic container and frozen for up to 2 months.
  • *** Fresh basket cheese is a semi-soft cheese that is used primarily for binding ingredients together. It can be found at Italian markets and cheese shops. If you can't find it, then substitute one (15-ounce) container of ricotta cheese (drained) and whisk it with 2 large eggs.
