2/3 cup rotisserie-cooked chicken, shredded (not cold)
2/3 cup mozzarella cheese, shredded
3 tablespoons olives, sliced
3 tablespoons sun-dried tomatoes, chopped
3 tablespoons pepperoncini peppers, sliced
3 tablespoons roasted red peppers, chopped
1/4 cup parmesan cheese, shredded
4 slices sourdough bread

Steps:

  • Stir together chicken, mozzarella, olives, sun dried tomatoes, pepperoncini, and roasted red peppers.
  • Spray a large nonstick skillet with cooking spray (such as Pam) and place over medium-high heat. Divide Parmesan into 4 small piles (about 1 tablespoon each) spreading slightly. Top with 4 slices of bread.
  • Pile chicken mixture onto half the bread and cook for a minute or two until cheese is crusty. Close sandwiches and reduce heat ot medium. Cook for a minute or to two on each side or until bread is golden and filling is warm.

4 frozen breaded chicken patties
4 slices mozzarella cheese
4 French rolls or 4 hamburger buns
1 cup marinara sauce
1/2 cup parmesan cheese

Steps:

  • Microwave frozen patties on high for 3 minutes.
  • Add cheese to each patty and microwave an additional 45 seconds or until cheese is melted.
  • Lightly toast french rolls or hamburger buns in toaster.
  • Place chicken patty & cheese onto roll and spoon on marinara sauce and parmesan cheese to taste.

This makes a terrific weeknight dinner. Cooked chicken and marinara sauce makes this quick and easy and tastes delicious. My family loves this recipe and it is requested several times a month.

22 ounces grilled chicken breast strips (Frozen)
16 ounces marinara sauce
1 (6 ounce) package pepperoni, slices
1 (2 1/2 ounce) can sliced black olives
1 teaspoon italian seasoning or 1 teaspoon oregano
1/4 cup pre-shredded parmesan cheese (estimate)
1/4 cup pre-shredded mozzarella cheese (estimate)
jalapeno, slices if desired
12 hoagie rolls

Steps:

  • Open Packaged Chicken and Microwave for 5 minutes.
  • Heat Marinara Sauce until heated.
  • Lay Rolls out flat and add approximately 8 slices of Peperoni slices to one side of Sandwich Roll.
  • Add Chicken pieces to other side of Roll.
  • Add Marinara Sauce over Chicken, add olives as desired.
  • Sprinkle with Parmesan Cheese and Mozzerella Cheese.
  • Sprinkle Italian Seasoning on top.
  • Broil until cheese melts and is bubbly.
  • Fold over rolls and serve hot.
  • Garnish with Jalepeno's on the side.

  • Cut the chicken breast into 2 pieces (from side to side) Pound each half to flatten out to be about 1/4 inch thick. Take about 1 tablespoon and brush the top of each chicken breast with the olive oil and sprinkle about 1 teaspoon over top of the 4 chicken breast patties. Turn the breast over and repeat the process.
  • Heat 2 tablespoons of olive oil to a cast iron skillet and fry the chicken breast on each side for 2 1/2 to 3 minutes on each side or until the chicken is no longer pink inside. Add additional olive oil while frying as needed.
  • While the chicken is in the refrigerator prepare the basil mayonnaise. In a mini food processor add the mayonnaise, fresh basil, garlic, olive oil, and lemon juice process until the ingredients are well blended.

  • Add 2 tablespoons olive oil to skillet and place over MEDIUM-HIGH heat. Add chicken. Season with half the garlic pepper and oregano, and salt to taste. Cook for 3 minutes or until nicely seared and golden brown on one side. Flip and season with remaining seasoning. Continue to cook until chicken is cooked through and no longer pink in center. Remove pan from heat and transfer chicken to cutting board to rest.
  • Return pan to heat and add remaining 1 tablespoon of olive oil. Add sliced bell peppers and onion and cook, stirring occasionally, for several minutes. Add garlic and continue to cook until bell pepper and onion have softened and are fork tender. Remove from heat.
  • Assemble sandwiches by spreading a couple of tablespoons of the Giardiniera Sandwich Spread over both sides of a hoagie roll. Layer with sliced chicken, sauteed peppers and onions, and a slice of provolone cheese.
