I love this method of cooking in packets, it makes the chicken more aromatic and succulent. Only alittle olive oil is needed and the veggies cook in there own juices.

1 Tbsp olive oil
6 skinless chicken breasts fillets
2 c mozzarella cheese
3 1/2 c zucchini, sliced
6 large tomatoes, sliced
1 small bunch fresh basil or oregano
pepper
rice or pasta, to serve

Steps:

  • 1. Cut 6 pieces of foil, each measuring about 10-inches square. Brush the foil squares lightly with oil and set aside until needed.
  • 2. With a sharp knife, slice each chicken breast at intervals across the top. (only slice slightly) Slice the mozzarella cheese and place between the cuts in the chicken.
  • 3. Divide the zucchini and tomatoes between the pieces of foil and sprinkle with pepper to taste. Tear or roughly chop the basil or oregano and scatter over the vegetables in each packet.
  • 4. Place the chicken on top of each pile of vegetables then wrap in the foil to enclose the chicken and vegetables, tucking in the ends. Place on a baking sheet and bake in a preheated oven, 400F for about 30 minutes. To serve, unwrap each foil packet and serve with rice or pasta

Very easy and tasty way to preparee chicken. Add some of your favorite italian spices prior to sealing the packets.

1 tablespoon olive oil
6 chicken breasts, skinned and deboned
2 cups mozzarella cheese, sliced
3 1/2 cups zucchini, sliced
6 tomatoes, sliced
fresh basil
pepper, to taste

Steps:

  • Preheat oven to 400 degrees.
  • Cut 6 pieces of foil each measuring about 10" square.
  • Brush the foil squares lightly with oil and set aside.
  • Slash each chicken breast at regular intervals and place the mozzarella slices into the cuts.
  • Place zucchini & tomatoes slices evenly on each piece of foil and sprinkle with basil or oregano.
  • Place chicken breasts on top of each pile of veggies then wrap in the foil to enclose the chicken and veggies, tucking in the ends.
  • Place packets on baking sheet, bake for 30 minutes.
  • Remove from oven and unwrap each packet and serve with rice or pasta.

4 boneless skinless chicken breasts (about 1 1/4 lb)
1 medium yellow bell pepper, cut into 4 wedges
4 plum (Roma) tomatoes, cut in half
1 small red onion, cut into 8 wedges
1/2 cup reduced-fat Italian dressing

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Place 1 chicken breast, 1 bell pepper wedge, 2 tomato halves and 2 onion wedges on center of each sheet. Pour 2 tablespoons dressing over chicken and vegetable mixture on each packet.
  • For each packet, bring up 2 sides of foil over chicken and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill over medium heat. Cover grill; cook 18 to 22 minutes, rotating packets 1/2 turn after 10 minutes, until juice of chicken is clear when center of thickest part is cut (170°F). Place packets on plates. Cut large X across tops of packets; carefully fold back foil.

  • Whisk together all of the Marinade ingredients in a shallow dish or freezer bag (whatever you are going to marinate chicken in). Remove 1/4 cup Marinade for vegetables.
  • Lay out four 18x12-inch pieces of heavy aluminum foil on your counter (or double line if you don't have heavy duty foil). Spray foil with nonstick cooking spray. Add one piece of chicken to each piece of foil. Evenly divide veggies between foil packets, placing around chicken. Evenly dot veggies and chicken with cubed butter (2 cubes each)(optional). Seal foil packets closed and transfer to a baking sheet.
  • Preheat oven to 400 degrees F. Bake at 400 degrees F for 20-25 minutes OR until veggies are tender and chicken is cooked through (internal temp of 165 degrees F).
  • Heat grill to medium-high heat. Add foil packets, CLOSE LID, and grill at 400 degrees F for 15-20 minutes OR until veggies are tender and chicken is cooked through (internal temp of 165 degrees F).
