CIAMBELLA DELLA NONNA - ITALIAN BREAKFAST CAKE
For many years my mother prepared this ring-shaped cake for our breakfast! My children love this super easy ciambella too. They spread some margarine and sugar over the slices and Yum... This is a souvenir in honor of my parents!

Steps:
- Preheat the oven at 220°C (425.°F).
- Grease your mold (I use a ring-shaped one) and dust with four.
- Work all the ingredients (reserve the sugar for topping) with the kneading machine until smooth.
- Spread the batter in the mold.
- Top with sugar.
- Bake for 30 minutes at 220°C (425°F).

- Drain the ricotta in a sieve for about 15-20 minutes. If the ricotta is thick then there really is no need to drain.
- In a medium mixing bowl beat together melted butter, sugar, eggs and egg yolk for one minute. Add the ricotta cheese, flour mixture and vanilla and beat for one minute, until smooth. Fold in chocolate chips.

- Stir together the flour and baking powder in a small bowl. Set aside. Toss the berries with a spoonful of the flour mix and set aside as well.
- Place the sugar in a large mixing bowl or the bowl of a standing mixer. Grate the zest into the sugar and rub it in with your fingers. Add the egg yolks.
- With a paddle attachment to a standing mixer (or regular beaters of a hand-held) beat the sugar with the egg yolks until thick, pale and fluffy, about 5 minutes; scrape the bowl. Keep beating and pour in the oil in a thin steady stream. Still beating, pour in the lemon juice in a thin stream. Beat for another minute, scrape the sides of the bowl and add the flour with baking powder. Mix at low speed until smooth and completely incorporated; scrape the sides again.
