SWEET ISLAND TERIYAKI SAUCE



Sweet Island Teriyaki Sauce image

This is a great recipe for any meat marinade. Also a wonderful stir fry sauce. Marinate your choice of meat or vegetables for 4 to 24 hours; grill to your liking. Can be refrigerated for 2 weeks. The better quality soy sauce you use, the better your final product will be. Sauce can always be thinned with water if desired.

½ cup light soy sauce
¼ cup sake
¼ cup minced fresh pineapple
¼ cup honey
¼ cup white sugar
2 cloves garlic, minced
1 tablespoon grated fresh ginger
¼ teaspoon fish sauce

Steps:

  • Combine soy sauce, sake, pineapple, honey, white sugar, garlic, ginger, and fish sauce in a saucepan over medium heat; cook and stir until just boiling, about 7 minutes. Remove from heat, cool, and store in refrigerator.

1/2 cup soy sauce
1/4 cup salad oil
2 tablespoons molasses
2 teaspoons ground ginger or 2 tablespoons grated gingerroot
2 teaspoons dry mustard
6 garlic cloves, minced
1 1/2 lbs round steaks, 1/4-inch thick

Steps:

  • Combine first 6 ingredients. Cut meat across grain into strips 1 inch wide. Add meat to soy marinade, stirring to coat; let stand 15 minutes at room temperature. Lace strips accordian-style on skewers.
  • Broil 5 inches from heat 5-7 minutes or until cooked rare to medium-rare, turning frequently and basting with soy marinade. Alternatively, you can grill these. Serve hot as an appetizer.

1/2 cup soy sauce
1/4 cup brown sugar
2 tablespoons olive oil
1 teaspoon dried ginger
1/4 teaspoon fresh coarse ground black pepper
2 cloves garlic, minced
1 1/2 lbs top sirloin steaks, cut in thin strips

Steps:

  • Combine the first six ingredients in a large resealable plastic bag.
  • Add steak and turn to coat well.
  • Marinate in the refrigerator for at least two hours.
  • Drain meat from marinade, and discard remaining marinade.
  • Thread meat onto skewers.
  • (Soak bamboo skewers in water first).
  • Grill until steak is cooked but still moist.
  • Don't overcook or steak will be too dry.

Cook over medium high heat for about 3-4 minutes until it starts to thicken. Add the chicken back to the skillet and coat in the marinade. Serve over rice and top with optional toppings.
