ITALIAN SHRIMP AND PASTA

Italian Shrimp and Pasta image

We like pasta with Italian tomato sauces, and this recipe is one we make often. It's heavy on the shrimp and light on the pasta, and that's the way we like it...we can remember when shrimp was unheard of in our budget, so I guess we're making up for it now!

ISLAND-STYLE SHRIMP AND PASTA

Categories     Fruit     Pasta     Shellfish     Sauté     Quick & Easy

Yield 4-6 servings

Number Of Ingredients 26

PASTA
1 pound medium-size bow-tie or seashell pasta
2 teaspoons toasted sesame oil
SHRIMP
2 tablespoons frozen limeade concentrate
1 tablespoon ground allspice
2 teaspoons dried thyme leaves
1 tablespoon peanut oil
1/4 teaspoon Tabasco or hot pepper sauce of your preference
1 tablespoon Asian-style sweet chili sauce
1-1/2 pounds medium-large shrimp - peeled and deveined, tails intact if desired
SAUCE
1-1/4 cups chicken broth
3 tablespoons fresh lemon or lime juice
1 tablespoon toasted sesame oil
2 teaspoons Dijon mustard
3 large cloves garlic - finely minced or grated
3/4-inch piece peeled fresh ginger - finely minced or grated
sea salt and fresh cracked pepper to taste
1/2 cup sliced green onions
1 cup diced papaya - 1/2-inch pieces
1 cup diced mango - 1/2-inch pieces
GARNISH
fresh thyme leaves
1 tablespoon each of fine lemon and lime zest
toasted sesame seeds

Steps:

  • Bring a large pot of water to a boil, add salt and pasta and cook to al dente. Drain well and gently toss with sesame oil. Cover and keep warm. While water comes to a boil and pasta cooks, prepare shrimp. In a medium bowl, whisk frozen limeade concentrate, allspice, thyme, peanut oil, Tabasco and chili sauce until evenly blended. Add shrimp and gently toss to thoroughly coat. Marinate at room temperature no longer than 15 minutes. Heat a large non-stick skillet or wok over medium-high heat until hot. Add shrimp mixture and cook, stirring gently, until shrimp is uniformly pink and opaque, and marinade is reduced, approximately 5 minutes. Remove from heat, partially cover and keep warm. In a medium saucepan, combine chicken broth, lemon or lime juice, sesame oil, mustard, garlic, ginger, salt and pepper. Bring to a boil over medium high heat. Reduce heat to low and gently simmer 5 minutes, stirring occasionally. Remove from heat and mix in green onions, papaya and mango. Return to low heat and rewarm just until steaming hot. Do not allow to boil or even simmer! Remove from heat. Add shrimp and accumulated pan juices to pasta in pot. Add papaya/mango mixture and toss gently to combine. Plate, garnish and serve immediatlely. COOK'S NOTES - I prefer the appearance of bow-tie pasta to seashells, although have made with both - have subbed frozen orange juice concentrate for the limeade, but prefer the lime - on occasion, I have substituted cracked coriander seeds for the dried thyme and fresh cilantro for the fresh thyme, however, I do prefer the thyme - I confess to a love affair with sesame oil, but it could be partially substituted with vegetable, peanut or olive oil if you do not share this prediliction

ONE-POT SPANISH-STYLE SHRIMP AND CHORIZO PASTA

One-Pot Spanish-Style Shrimp and Chorizo Pasta image

Fideos are very thin noodles that are traditionally cooked right in the sauce, allowing them to soak up maximum flavor. Both angel hair pasta and capellini are great substitutes if you don't have access to Spanish fideos. To create a nutty, smoky layer, the noodles are first toasted with olive oil and chorizo. A good-quality bottled clam juice is important here, since it creates the briny broth that accentuates the shrimp and enhances the overall seafood flavor; the Bar Harbour brand has a very clean and naturally briny clam flavor.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 15

1/4 cup extra-virgin olive oil, plus more for drizzling
1/2 cup finely chopped onion
8 ounces fideos, angel hair pasta or capellini, broken into 3-inch pieces
Kosher salt and black pepper
3 garlic cloves, minced
2 tablespoons tomato paste
4 ounces Spanish chorizo, casing removed and sliced 1/2-inch thick
1 medium fennel bulb, trimmed, quartered and sliced into thin wedges
2 (8-ounce) bottles clam juice
1 pound large shrimp, cleaned
1/2 cup frozen peas
1/4 cup freshly grated Parmesan
1 tablespoon lemon juice
1/4 cup chopped parsley
Lemon wedges, for serving

Steps:

  • Heat oil in a large Dutch oven over medium heat. Add onion and pasta, season with salt and pepper and cook over moderate heat, stirring, until pasta starts to turn golden, about 5 minutes (pasta will break up a bit during stirring).
  • Lower heat and add garlic, tomato paste and chorizo, and cook until tomato paste is lightly caramelized, 2 to 3 minutes. Add fennel, clam juice and 1 cup of water and season with salt and pepper. Bring to a boil, cover and simmer over moderate heat until pasta has softened and most of the liquid is absorbed, about 5 minutes.
  • Stir in shrimp, peas and Parmesan, cover and cook until shrimp is opaque, about 3 to 4 minutes. Stir in lemon juice and parsley.
  • Drizzle with oil and serve with lemon wedges.
