Tender and juicy chicken that kids like better than McNuggets®! But they don't know it's better for them.

2 eggs
2 tablespoons ranch dressing
2 cups seasoned bread crumbs
1 tablespoon garlic powder
1 teaspoon paprika
salt and pepper to taste
6 skinless, boneless chicken thighs

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a baking sheet with cooking spray.
  • Beat the eggs and ranch dressing together in a bowl; set aside. Stir together the bread crumbs, garlic powder, paprika, salt, and pepper in a large bowl until evenly combined. Dip the chicken thighs into the egg mixture, then press into the breadcrumbs to coat all sides; place the chicken onto the prepared baking sheet.
  • Cook the chicken thighs until no longer pink in the center and the juices run clear, 50 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

INSTANT POT HAWAIIAN BBQ CHICKEN

4-6 Boneless Chicken Breasts (mine were still frozen!)
1 Bottle Archer Farms Hawaiian Style Barbecue Sauce (from Target)
1 20 oz. can Pineapple Chunks (do not drain - you need the juice so it will pressurize!)

Steps:

  • Place frozen chicken breasts in the Instant Pot and cover with sauce. Empty can of pineapple chunks and juice on top. Close the lid and turn the knob to SEALING.
  • Set the timer to 25 minutes if your chicken is frozen or 18 if you chicken is thawed.
  • When it is done, turn the knob to VENTING. When the pressure is released, take the lid off.
  • Shred chicken and return to the Instant Pot so the chicken will be well coated with sauce. Serve over rice or cauliflower rice.
  • Sometimes I also throw in a chopped up green pepper and chopped onion . . . it tastes good with or without it.
