SAUSAGE WITH PEPPERS AND ONIONS



Sausage With Peppers and Onions image

For an easy, hearty dinner (or breakfast or lunch) buy fresh Italian pork fennel sausages, preferably from an Italian deli or butcher. Pair them with quickly stewed peppers and onions, splashed with vinegar, and fried eggs.

Number Of Ingredients 11

8 Italian pork fennel sausages, sweet or hot (about 2 pounds)
Extra-virgin olive oil
3 or 4 medium bell peppers, a mix of red and yellow, sliced into 1/4-inch strips
2 medium red onions, sliced into 1/4-inch half-moons
Salt and pepper
2 garlic cloves, minced
1 tablespoon red wine vinegar
Pinch of crushed red pepper
Pinch of dried oregano
Basil leaves, for garnish
4 large eggs (optional)

Steps:

  • Prick each sausage in several places with a skewer or the tip of paring knife to prevent bursting. Put sausages in one layer in a skillet. Add water to cover and bring to a simmer. Cook for 5 minutes, then cover, turn off heat and let steep.
  • Place a wide skillet over high heat and add 2 tablespoons olive oil. When oil is hot, add sliced peppers and onions. Season generously with salt and pepper, and cook, stirring frequently, until softened and beginning to brown, about 10 minutes. Adjust heat as necessary if mixture seems to be cooking too quickly. Add garlic just at the end, stir to incorporate and cook 1 minute more. Stir in the vinegar.
  • Transfer pepper mixture to a platter. Over medium heat, coat pan with 1 tablespoon olive oil, add sausages and cook 2 to 3 minutes per side, to brown. Top pepper mixture with cooked sausages. Sprinkle with crushed red pepper and oregano and garnish with basil leaves.
  • If desired, in the same wide skillet, fry eggs sunny side up in a little olive oil to accompany. Season with salt and pepper.

3 tablespoons olive oil
3 pounds Italian sausage links
3 red bell peppers, sliced
2 green bell peppers, sliced
2 large red onions, sliced
3 cloves garlic, chopped
2 (12 fluid ounce) bottles beer
1 (6 ounce) can tomato paste
3 tablespoons chopped fresh oregano
3 tablespoons chopped fresh cilantro
2 tablespoons hot sauce
salt and pepper to taste

Steps:

  • Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Remove sausage from pan, and set aside. Pour in 1 bottle of beer to deglaze the pan, scraping up any blackened bits from the bottom. Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover, and simmer until onions and peppers are tender. Slice the sausages into bite size pieces, and add to the peppers. Cover, and simmer until sausage is cooked through.

My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup white wine

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  • Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

Made this quick & easy Sausage for dinner the other evening.Bought @ WALT'S in DYER IN, SAUSAGE MADE IN THE STORE It is so quick & easy, you will be amazed @ how well the flavors of the onions & peppers blend together while they are cooking. Only takes about 20 to 25 minutes,& you have got a great tasting sausage sandwich. Serve it on Hard Rolls along with the peppers & onions. I didn't really think of this as a recipe, but thought it was worth sharing any way, you can use other sausages as well, like Italian, Brots, or Cheddar, what ever you like or have on hand at the time.

1 large bell pepper, red/ green or both cut into strips
1 large onion, sliced
1 tablespoon(s) each olive oil and butter
1 package(s) hard rolls (enough for each sausage)
1/2 teaspoon(s) majoram or thyme (optional)

Steps:

  • I prefer using a cast iron skillet, but any skillet will do. Irish sausage is a blend of LEAN pork using garlic, white pepper, Majoram Onion Powder, and parsley as the main spice ingredients, there may also be other spices and is so tasty and good. There is only one store where I can find them and that is WALT'S IN DYER INDIANA. They make them in the store, & I just placed an order for 20 links.If you are in the area, pick up a package or two, you will not be disappointed.
  • Add the butter and olive oil to a cast iron skillet, then heat on medium high heat. Add the sausage links. Allow the sausages to start to brown on each side, turning frequently to prevent burning.
  • Once they have started to cook, add the sliced peppers and onions, and let them cook a bit, stir, then cover with a tight fitting lid, reduce the heat to low, then continue to cook till onions and peppers are translucent, and onions begins to carmelize somewhat & sausages are cooked through. About 15 minutes or so.
  • Remove from heat and serve on long hard roll, can add Irish Swiss Cheese or any cheese of your choice, as well as mustard or catsup. But I prefer to eat mine with just the peppers and onions, and sometimes melted cheese.
  • You are gonna love it, and will be making it quite often.You may notice that there are only green peppers and onions in one photo, and both RED AND GREEN in the other photo, that is because my husband ate all the green peppers & onions before I could take a picture, so I had to make a second batch, and used both red & green peppers this time. They really are good, you may need to make 2 batches as well.
