1 fresh egg
1 tablespoon fresh white breadcrumbs
1 tablespoon butter
salt & pepper

Steps:

  • Bring a small saucepan of water to a boil and slip in the egg gently (prick the fat end if you have an egg pricker).
  • Boil for 4 minutes (sea level, 5 minutes a little higher altitude).
  • Warm a teacup.
  • Remove top of shell& pop the egg into the warm dry cup.
  • Chop with a teaspoon, add crumbs and butter.
  • Salt& butter to taste, eat with a teaspoon from the cup.

2 eggs
salt & pepper
2 teaspoons butter
1 slice white bread (Home made is best)

Steps:

  • Bring a saucepan of water to a boil and slip in the 2 eggs (pre prick them if you have an egg pricker), simmer 4-5 minutes (4 minutes produces a runny egg, 5 minutes firm white runny yolk, 6 minutes or over firm white and firm yolk)
  • This of course will vary according to your altitude (The higher you are, the longer eggs will take to cook)
  • Meanwhile, toast the bread, cut off the crusts and butter the toast
  • cut the bread into 4 fingers.
  • When the eggs are done, slip into an egg cup and slice off the top.
  • Serve with the Dippies (the toasted bread fingers) on the side with Salt, pepper and pats of butter
  • put butter in with the egg and dip your toasts.

I can't begin to count how many times I had this as a child and served it to my kids! It's easy and very tasty and we still enjoy it. This was our 'fancy' name (ha ha) for it but you may have your own version. In response to a recipe review, I always use large eggs, so the boiling time may be less for smaller eggs. 3 minutes should still be the minimum amount of time though. Enjoy!

2 eggs
2 slices whole grain bread (or whatever kind you like)
butter, to taste
salt and pepper

Steps:

  • With a spoon, gently place the eggs in boiling water. Boil for 4 minutes and place eggs in egg cups. Immediately crack top of egg off with a knife, salt and pepper to taste. If you let the eggs sit, they will continue to cook.
  • While eggs are boiling, toast the bread and spread with butter. Cut toast into strips - I try for 5. Dip the toast strips into the runny yolk - YUM!
  • After the yolk is gone, you can scoop out the white with a spoon and eat that as well.

15 saltine crackers
1 tablespoon butter, softened
salt and pepper to taste

Steps:

  • Bring a pot of water to a boil. Add eggs, and cook for 3 minutes. The yolks need to be runny. While the eggs cook, crush the crackers into two coffee mugs with the butter. When the eggs are done, remove from the water, and peel. Place one soft-boiled egg into each cup. Mix into the crackers, and season with salt and pepper.

6 hard-boiled eggs
1 lb potato, cooked and mashed
2 eggs, beaten
1 teaspoon garlic, finely minced
1 teaspoon salt
1 tablespoon Dijon mustard
1 tablespoon fresh rosemary, chopped
10 saltine crackers, finely crumbled
vegetable oil (for deep frying)

Steps:

  • Combine the mashed potatoes, beaten eggs, garlic, salt, mustard, rosemary and cracker crumbs mixing throroughly.
  • Divide the potato mixture into 6 portions.
  • Press eggs into each portion making sure the egg is covered completely.
  • Deep fry in oil at 350 degrees until golden brown.

This recipe comes from "The Ballykissangel Cookbook". Ballykissangel being the fictional Irish village of the popular BBC TV drama series of the same name, that was aired a few years ago. This is a simple vegetarian supper dish that can be varied endlessly and easily adapted to suit your personal tastes. Ingredients are per person so this can be made for just one person or sized up to feed the family (If you're making for more than one and are not cooking this in individual portions you'll probably find that you don't need as much milk per person; you'll also find you need to adjust cooking times upwards). We found this to be a meal in itself so I simply serve it with some crusty bread.

1 celery rib
1 medium potato, peeled
1 small carrot, peeled
2 button mushrooms
1 garlic clove, peeled and sliced
1 spring onion, chopped (scallion)
1/2 ounce butter
1 tomatoes, sliced
1 teaspoon cornflour (cornstarch)
5 fluid ounces milk
salt and pepper
2 eggs
grated cheese, to finish

Steps:

  • Preheat the oven to 160 C, 325 F, gas mark 3.
  • Chop the celery, potato and carrot finely, place in a pot and add just enough water to cover the vegetables.
  • Bring to the boil , simmer for 5 minutes then drain; place vegetables into an ovenproof soup bowl.
  • Slice the mushrooms and fry them in the butter until softened with the spring onion and garlic; layer over vegetables in the bowl then place the tomato slices on top of that.
  • Pour the milk into a saucepan; mix the cornflour with a small amount of the vegetable cooking water and add to the milk; bring to the boil stirring constantly, then season the milk and pour over the vegetables.
  • Place the soup bowl in the oven and bake for 15 minutes or until the mixture starts to bubble; remove from the oven and with the back of a spoon press down onto the mixture to make one dent for each egg; crack the eggs into the dents.
  • Sprinkle with a little grated cheese and return bowl to the oven for about 5 minutes until the cheese has melted and the eggs are set but not hard.
